The Juuma sharpening and honing stones offer a simplified working principle while at the same time ensuring the highest possible quality in the offered grits. Juuma Cobalt Blue stones are made of an aluminium oxide and a bonding agent. Adding cobalt serves to slow stone abrasion and increase the speed of sharpening. The speed bonus is especially marked when stoning blue steel (blue paper steel that is often used for Japanese planes and chisels). The cobalt gives the stones their blue colour. After you have completed a few passes over the stone on both sides, you can move to the final stage. This time it is P1 pressure, just enough pressure for you to control the knife. Ensure your stone is wet and now repeat the motions but with very very light pressure. You really need to focus here and ensure you are reaching the edge of the edge and again, just a few sweeps on both sides of the knife.
Put the pointed, narrow end of the sharpener up against the open end of the gut hook. The narrow, pointed end of the sharpener should face in toward the thickness of the blade, away from the edge of the gut hook. Match the angle of the sharpener to the original edge angle. This will maintain the correct sharpening angle and prevent you from getting cut by the blade tip. Hold the same angle when sharpening each side of the gut hook.

So you are going to start at the heel and you are going to time it so that it goes all the way across. You go from one side to the other. You also want to make sure that your stone, I am not going to use as much pressure as I normally would because I cannot mount it on this showcase, you want to alternate from side to side to keep your bevel centered. Some people will take and do three times on one side and then three times on the other, the problem is that your backhand is never as good as your forehand and you end up cheating and you are going to end up with a blade that is offset. That is going to take it and thin down, you are going to get a thin bevel right on the edge. Once you get that V established, you can go from the coarser side to the finer side.

Made in the USA means a lot! It sharpens quickly, whether you need to remove a lot or just a "tune up" on the blade edges. Because it's manufactured flat, it is excellent for planer blades and chisels. The ability to sharpen dry or with only water creates less of a mess than other types of sharpening stones. The no-hassle guarantee is a definite plus, though I would be surprised if you ever needed it.
Don't know. Not sure that I really care, as these stones definitely did the job that was asked of them, and did it with ease, even for a beginner whetstone user. I'll probably stick with them, at least until I get a lot more experience. Though, I do see a 10,000 or higher grit stone in my immediate future - more to play around with, than a feeling of genuine need.

Over the course of two days I re-sharpened nearly a dozen old blades, including removing the secondary bevel on an old stainless Ontario saber-grind Navy diver's knife, convexing the edge on flat ground 1095 Schrade 55 that also came with a secondary bevel, and fixing a broken tip on an old Kershaw folder. These stones made quick work of the Schrade and Kershaw. Both had completely new edge geometry within 30 minutes apiece. The Kershaw looked like-new, as if the tip had never broken. And the Schrade cut much better than it's secondary bevel would previously allow, regardless of how sharp I got it with a ceramic rod and strops. The Ontario took a little more work, as it had been abused a little the last time I'd held it, over 25 years ago and was as dull as a case knife - one of the reasons I decided to go ahead and do a full saber grind - well, a slightly convexed saber, I suppose would be more accurate. But within under an hour of using the two stones and a couple leather strops (one with black compound, another with green), the Ontario was shaving sharp again too.
Your stroke can be straight or circular, from "hilt to tip" OR "tip to hilt," whichever is more comfortable. If you're using a small portable sharpener, stroke the blade in nearly a straight direction. Remember to always cut into the stone and never pull or drag your edge backwards. The blade edge should face in the same direction as your stroke. So, you're essentially moving the metal away from the edge. We recommend the circular stroke as it helps you maintain your angle instead of having to find it every time you lift the knife from the stone.

Therefore, the first step to choosing a whetstone is to determine your intended purpose and then choose your whetstone accordingly. For instance, when sharpening tools that do not require a fine edge, you should choose a relatively soft, coarse, stone such as a Norton Crystolon water stone. However, for sharpening tools that do require a fine edge, a somewhat harder Norton India oil stone would be a good choice. But, for sharpening hunting knives where an exceptionally fine edge is required, a Novaculite or Coticule oil stone would be the best but, most expensive, choice. So, the process of choosing the correct whetstone for any given purpose is to first determine how fast you would like for the stone to cut and how fine an edge you need, and then choose either a soft, coarse, stone or, a hard, fine, stone of the appropriate type and grit.
A diamond plate is a steel plate, sometimes mounted on a plastic or resin base, coated with diamond grit, an abrasive that will grind metal. When they are mounted they are sometimes known as diamond stones.[12] The plate may have a series of holes cut in it that capture the swarf cast off as grinding takes place, and cuts costs by reducing the amount of abrasive surface area on each plate. Diamond plates can serve many purposes including sharpening steel tools, and for maintaining the flatness of man-made waterstones, which can become grooved or hollowed in use. Truing (flattening a stone whose shape has been changed as it wears away) is widely considered essential to the sharpening process but some hand sharpening techniques utilise the high points of a non-true stone. As the only part of a diamond plate to wear away is a very thin coating of grit and adhesive, and in a good diamond plate this wear is minimal due to diamond's hardness, a diamond plate retains its flatness. Rubbing the diamond plate on a whetstone to true (flatten) the whetstone is a modern alternative to more traditional truing methods.[13]

Being smaller, they are more portable than bench stones but present difficulty in maintaining a consistent angle and pressure when drawing the stone along larger blades. However, they still can form a good edge. Frequently, fine grained pocket stones are used for honing, especially "in the field". Despite being a homophone with wet in most dialects of modern English, whetstones do not need to be lubricated with oil or water, although it is very common to do so. Lubrication aids the cutting action and carries swarf away.

Sharpening is really two processes: Grinding and honing. Grinding is simply the removal of metal. Honing is a precision abrasion process in which a relatively small amount of material is removed from the surface by the means of abrasive stones. Once you have the right shape, usually using a more aggressive grit, you then switch to a finer grit to hone the edge.
I do have to question the grit ratings of these stones. I didn't notice anything before using them, but after a day, the 2000 grit actually felt courser than the 1000 grit side of the other stone. Whether that could be a byproduct of other factors or an indication of the more obvious, being that the grit ratings aren't accurate, I don't know. But that seemed to be the main criticism of cheaper whetstones, that their grit ratings often aren't accurate. Or maybe it's less a problem with accuracy and more a difference that most synthetic stones might have in common when being compared to much pricier natural stones?

This 600/1,000 grit is my second Unimi knife sharpener, the first is 2,000/6,000 grit and I love them both. Both stones together produce very sharp and well polished knives that reduce the cutting effort and save time in the kitchen. I particularly appreciate that the manufacture printed the grit number on the side of each stone - that helps use the different grits in the proper sequence from the coarser to the finer. The stone comes with a non-slip silicone/rubber base which is very handy.
