"How do I use this daunting metal rod?" I hear you ask. Well, it's not too hard, really. The best way for a beginner is to balance the steel on a surface with the tip secured by a damp tea towel. You want to get that angle right, whether it's around 15 degrees for a Japanese knife or 20 degrees on a German or French blade. Then swipe slowly down, away from you, making sure the whole blade is honed – around five swipes on each side should do. 

However, due to limited natural deposits and extensive quarrying over the centuries, true, high quality, Japanese water stones are now few and far between and are very expensive. Thus, various companies are now producing synthetic Japanese Water Stones which generally have a more consistent composition and grit size than natural stones as well as often begin somewhat harder and thus, lasting a bit longer; not to mention being cheaper to purchase.


Not sure why I bought this item and then I received it. It has a bit of a 'cool' factor and is well made. I took the sharp edges of the stone as they were a bit uncomfortable on my chest but have since been wearing it a lot. Used it to put an edge on some workmates knives and to tickle up my own daily use knife. I like it, it is a bit different and useful.

This is a good quality stone for a beginner looking to learn about hand sharpening knives and blades. It holds up well, especially for the price point. New sharpeners are prone to gouging and scratching stones, pushing too hard, etc, and this stone handles the abuse nicely. A: That depends almost entirely on how often you use them. If you are a professional chef who uses his or her knives every day then you should hone them every time you use your knives. But honing has its limits and over time your edge is going to become dull no matter what. Therefore your knives will need to be sharpened at least several times a year. Some chefs, in fact, will use a whetstone on an almost daily basis in order to ensure their knives are always razor sharp. Most of us, however, are not professional chefs and may not even touch our kitchen knives for days at a time. An important but often confusing area of sharpening is knowing when you're done with one stone and ready for the next finer grit. On coarse stones it is very easy. When you sharpen one side you will notice a burr forming on the opposite side of the edge. This burr is hard to see but is easy to feel. Very carefully feel for the burr by gently running your hand from the spine to the edge. (Do not run your finger along the knife edge from heel to tip, that's only asking for trouble!) A burr is formed when your stone removes material directly at the edge. The burr will move from one side of your knife to another as you alternate sharpening sides. Make sure you have felt the burr jump between both sides before you move on to the next finer stone. That will ensure that you have sharpened both sides effectively. The finer grits are done the same way but the burr is much smaller. On the finest grits you may not be able to notice the burr at all. Testing the knife sharpness will tell you when you're done. The following are my personal favourites and they are all synthetic stones, I do have experience with natural what stones but lets keep it simple, lets stick to synthetic water stones. Believe me, some of the world sharpest knives are sharpened solely on synthetic stones. Here are my personal favourites, I use these water stones every day and the order is not necessarily in priority, they are all good.

Over the course of two days I re-sharpened nearly a dozen old blades, including removing the secondary bevel on an old stainless Ontario saber-grind Navy diver's knife, convexing the edge on flat ground 1095 Schrade 55 that also came with a secondary bevel, and fixing a broken tip on an old Kershaw folder. These stones made quick work of the Schrade and Kershaw. Both had completely new edge geometry within 30 minutes apiece. The Kershaw looked like-new, as if the tip had never broken. And the Schrade cut much better than it's secondary bevel would previously allow, regardless of how sharp I got it with a ceramic rod and strops. The Ontario took a little more work, as it had been abused a little the last time I'd held it, over 25 years ago and was as dull as a case knife - one of the reasons I decided to go ahead and do a full saber grind - well, a slightly convexed saber, I suppose would be more accurate. But within under an hour of using the two stones and a couple leather strops (one with black compound, another with green), the Ontario was shaving sharp again too.
if you have regular kitchen knives it will not work- first its to deep and the blade does not stick out, not dinner knives but cooking knives. of all the knives i put in it only 1 was wide enough to stick out. the device does not hold the blades. all the blades tested fell out of it, even a hunting knife, maybe its for 1 type of knife and they are selling it as the must have tool for all.. that said sell something useless for a few bucks that most cant use, they got a few bucks that most will blow off and not worry about a refund.. DONT WASTE YOUR MONEY.

A sharpening stone is a stone that has got a coarse side and usually a finer side, and that is going to take and re-shape your edge and get it back down thin enough in order to sharpen it. You are basically taking something that is blunt and thinning it back down. You have to remove all of this extra metal and get it back down to where it is thin enough to cut. Very simply, all a knife is is a very thin piece of steel to split whatever you are cutting. If the knife is obviously thicker, it is like trying to cut something with a chisel; it is not going to happen.
You’ve probably seen a number – say 1000 – on the side or top of the Whetstone you just bought and are at a loss as to what it all means, or even worse the person who sold it to you, didn’t know or forgot to mention it. Which ever of these scenarios sounds about right, you are left with a stone and no idea how you should be using it, well let me enlighten you dear reader.
Last, it should be noted that dual-sided Coticule/Belgian Blue whetstones are also sometimes available which have a layer of Belgian Blue stone on one side and a layer of Coticule on the other. Thus, these whetstones provide a softer, more coarse, grit on one side and a harder, finer, grit on the other. The whetstone is the most popular for sharpening pocket knives (or knives). But, before  you go into the sharpening, you must prepare the whetstone beforehand.  Don't worry, it's quite easy. The majority used can be done by dipping the stone in water for about 15 minutes. Regardless of what type of whetstone you use, never use it while it's dry. It's important for a clean sharpening. Using mineral oil is another way to prepare a whetstone. It'll absorb into it once you begin putting the right amount on the surface. How you will determine how much to put is to ensure a "thick film" is lathered across the entire surface. This is critical when you learn how to sharpen a pocket knife.
Now that you're holding the handle and the blade is in position, gently apply some pressure to the belly of the blade with your left hand fingers – "roughly the amount of pressure to semi depress a sponge," says Warner. Starting at the tip, glide the blade up and down the stone – around five strokes up and down is a good number. Then move to the middle – five more strokes. Finally five strokes up and down on the heel.
Selecting the right sharpening angle is the next step in sharpening. For more detailed instructions on selecting the right angle, try reading this article. Regardless of the method of sharpening, a appropriate angle should be selected. This angle doesn't need to be exact but following some general guidelines is a good idea. Most knife manufacturers recommend a roughly 20 degree angle. Depending on the use of your knife, you can move up or down from that angle. A fillet or slicing knife is never used on anything hard so an angle a few degrees less will produce a sharper edge. On the other hand, a survival knife with various uses can benefit from a more durable edge a few degrees larger.

Speaking of building muscle memory, here is a good exercise for you, a confidence builder: Paint the edge of your knife and bevel with a Sharpie and sharpen the knife at an angle that results in the removal of that Sharpie. In many cases it will be close to the 20 deg angle anyway. When you have achieved success, repeat the process and do that ten times. Now flip the blade over and do it on the other side, you don’t need to use much pressure here, just a little. You want to get to the point where you can place the knife at the SRA “Sharpie Removal Angle” the first time, every time.

Sharpening stones come in coarse and fine grits and can be described as hard or soft based on whether the grit comes free of the stone with use. Many sources of naturally occurring stones exist around the world; some types known to the ancient world are no longer used, due to exhaustion of former resources or the ready availability of superior alternatives. Arkansas, USA is one source for honing stones, which are traditionally used with water or honing oil. India is another traditional source for stones. Ceramic hones are also common, especially for fine grit size. Japanese water stones (both artificial and natural) come in very fine grits. Before use, they are soaked in water, then flushed with water occasionally to expose new stone material to the knife blade. The mixture of water and abraded stone and knife material is known as slurry, which can assist with the polishing of the knife edge and help sharpen the blade. Generally, these are more costly than oilstones. Coated hones, which have an abrasive, sometimes diamonds, on a base of plastic or metal, are also available.
When the block is intended for installation on a bench it is called a bench stone. Small, portable stones (commonly made of bonded abrasive) are called pocket stones. Being smaller, they are more portable than bench stones but present difficulty in maintaining a consistent angle and pressure when drawing the stone along larger blades. However, they still can form a good edge. Frequently, fine grained pocket stones are used for honing, especially "in the field". Despite being a homophone with wet in most dialects of modern English, whetstones do not need to be lubricated with oil or water, although it is very common to do so. Lubrication aids the cutting action and carries swarf away.
Learning sharpening technique requires focus even without worrying about the stone itself. Stones that require frequent flattening, soaking and cleaning, or that take a long time to create an edge can be a source of frustration to some beginning sharpeners. A diamond plate is a steel plate, sometimes mounted on a plastic or resin base, coated with diamond grit, an abrasive that will grind metal. When they are mounted they are sometimes known as diamond stones.[12] The plate may have a series of holes cut in it that capture the swarf cast off as grinding takes place, and cuts costs by reducing the amount of abrasive surface area on each plate. Diamond plates can serve many purposes including sharpening steel tools, and for maintaining the flatness of man-made waterstones, which can become grooved or hollowed in use. Truing (flattening a stone whose shape has been changed as it wears away) is widely considered essential to the sharpening process but some hand sharpening techniques utilise the high points of a non-true stone. As the only part of a diamond plate to wear away is a very thin coating of grit and adhesive, and in a good diamond plate this wear is minimal due to diamond's hardness, a diamond plate retains its flatness. Rubbing the diamond plate on a whetstone to true (flatten) the whetstone is a modern alternative to more traditional truing methods.[13]

A: For many years there was a heated debate around this topic with manufacturer’s stating flatly the notion their products actually damaged knives was absurd, and many professional chefs claiming not only was it not absurd, it was common for mechanical sharpeners to damage expensive cutlery. This wedge ends up short of a "point" to a much larger degree than the picture would indicate. The metal stops short, but then there is black non-slide "tape" applied to one side, and white "slide" tape applied to the other side, which makes the wedge even thicker than it appears in the photo, which means that in practice the end of wedge is even more truncated. So I have a hard time supporting my knives accurately on this wedge while sliding them down into contact with my stones. Prior to buying this wedge I just used a wooden wedge I cut off of a 3" by 3" post using a miter saw, said wedgewhich has a much less truncated end. That wooden wedge unfortunately absorbs water from my Japanese Waterstones. But I will try spraying polyurethane on that wooden wedge to help waterproof itand try again. If that doesn't work I will try to find a 3" by 3" plastic trim board somewhere and cut a wedge off the end of that. Note that you can buy 20 degree plastic wedges, but this is the first one I have found that does 15 degrees (nominal.) TO USE: Soak stone in water for no more than 5-10 minutes. Place stone on a damp cloth with the courser 400 grit side (dark green) facing up. Hold the knife so that it’s flat and perpendicular to the block, with the blade facing left. Holding the knife at a 20-degree angle, slowly sweep the edge of the blade from left to right down the length of the stone and continue until sharp. If stone starts to feel too dry, add more water. Be patient and take your time. Flip knife over and repeat on the other side (now moving from right to left). Be sure to sharpen both sides evenly. To polish the blade further, flip stone over to the fine 1000 grit side (light green) and repeat the process. When blade is honed to desired sharpness, wash and dry your knife. To clean your stone, simply rinse with water, wipe away any remaining metal residue with a rag, rinse again, then dry.
The angle on a Buck Knife is set based upon how we feel the knife will be used. Heavy use needs a strong and blunt "V" while skinning or filleting would need a deeper but more vulnerable "V". We tend to grind to 13-16 degrees per side (see illustrations). If you match the existing edge angle and hold the knife against the stone to cut evenly across the edge grind, you will produce an edge with a similar angle.

To take off the fine scratches and burrs left by coarser stones, and to polish the surface, you can use stones starting at around 2000 grit. There is theoretically no upper limit, but stones above about 10000 grit achieve practically no measurable improvement in the edge. It is also interesting to note that above 8000 grit, there is no Japanese measurement standard. For stones labelled as having a finer grit, you simply have to take the manufacturer's word for it.


A: You can sharpen your knives by hand using a stone or you can use a manual powered 1-stage, 2-stage or 3-stage sharpener or you can use a multi-stage electric powered sharpener. The choice is yours. Many people prefer not just the affordability but the precise control they have with an oil or water stone. However, it should also be noted that “water stones” are generally significantly softer than oil stones and thus, water stones generally cut faster than oil stones but, they also have to be flattened more often that oil stones do. Furthermore, it should be noted that some water stones must be soaked in water for several hours prior to use whereas, others are of the “splash and sharpen” variety and thus, they only need to be soaked for a few minutes before use and then wetted down occasionally during sharpening process. Diamond hones on the other hand are more durable than either water stones or oil stones and, because they generally have a more coarse grit, they cut faster than natural whetstones. Plus, due to their construction, they never need truing and, in fact, coarse diamond hones are often used to flatten both natural and synthetic whetstones.

Last, it should be noted that dual-sided Coticule/Belgian Blue whetstones are also sometimes available which have a layer of Belgian Blue stone on one side and a layer of Coticule on the other. Thus, these whetstones provide a softer, more coarse, grit on one side and a harder, finer, grit on the other. Plus, due to the inherent toughness of the Belgian Blue stone, these dual-sided stones do not require a substrate layer.

Just to prove that we're not merely sharpening geeks, here's an interesting side note. The word whet pops up in some unexpected places. A small species of owl is called the saw-whet owl because the sound it makes reminded people of the sound made when sharpening a saw with a file. And the phrase "to whet your appetite" comes from the idea of your hunger growing sharper at the thought of food.

Table mounted device – Typically the manual powered table mounted sharpener looks virtually identical to the electric powered sharpener with a slot for each stage. Where they differ is that each slot in the manual powered sharpener has only one groove and you pull the blade through this groove toward you to sharpen the blade. Once the blade is sufficiently sharp you place it in the honing groove to refine the edge and pull it toward you again several times. If there is a third, cleaning, stage you repeat the process for that stage as well.
