When a whetstone is used to cut metal, it acts like sandpaper by removing small particles of metal (aka “swarf”) with each pass of the blade over the stone. Therefore, whetstones with more coarse grits cut faster than those with finer grits and, at the same time, soft whetstones cut faster than hard whetstones because each pass of the blade over both types of whetstones not only removes fine particles of metal from the blade, it also removes fine particles from the surface of the whetstone (aka “slurry”) which continuously exposes new cutting crystals. However, if the swarf is allowed to build up on the surface of the whetstone during sharpening, it will clog the stone and drastically diminish its effectiveness. Therefore, some whetstones require water to lubricate the stone and suspend the swarf whereas, other whetstones require oil to lubricate the stone and suspend the swarf.
1. Diamond Stones. I’ve used two, many years ago, to sharpen steel knives & found that the diamond coating wore away. They did work well at first, but then I was sharpening on the backing material. This puzzled me, because diamond is harder than steel, but have only recently read that the diamond particles are torn off the backing material because they stick to the softer steel. Diamond stones are recommended for sharpening ceramic knives only. This info about diamond stones & steel knives I got from an Edge-Pro article.

Very interesting. If you work flat, 45 degree is what I was taught. Love the wet stones, especially the oiled ones. The nice thing about the leather part, is the mirror finish on a razor sharp blade which is a must if doing fine wood working, carving etc. A rough blade simply does not have the fine detailed dexterity. I find that the oiled sandpaper can work great as well, but found that the refined clay bars (white refined fired clay rounds and flats etc) does a wonderful job of keeping those razor edges refined, smooth as possible and then one can high polish them for smooth cutting. Believe me, when working wood for a flute, one wants that refined edge.! Learning how to hone a blade on a flat surface teaches one to work outside without a table/wall handy too...:) But we all have to start somewhere!:) Anyway, great stuff and a great start for those who want more from their tools!:) Cheers!

There will be a drawer that extends into the mechanism under the abrasives. Any detritus from the sharpening process drops into this drawer. Exactly where the drawer is located will differ from sharpener to sharpener but it shouldn’t be hard to find. Remove the drawer flick any material into the wastebasket and then wipe out the drawer with a damp cloth or tissue. You may want to use work gloves and goggles to protect your hands and eyes from any loose metal shavings. Once the drawer is clean and dry replace it. The exact means by which the sharpening mechanism itself is cleaned will vary from manufacturer to manufacturer. Consult your owners guide for specific details. Make sure you don’t introduce any grease or other lubricants into the sharpener unless specifically directed to do so by the owner’s manual. Also, the outside of the sharpener should come perfectly clean with just a damp cloth. Avoid using commercial cleaners or abrasives of any kind.

Now you are going to use P2 pressure, moderate and in this case the stone is going to do the work, you are just guiding the knife along, stabilizing it as the amazing water stones does it’s job. Use the exact same technique, same angle but just moderate pressure, hardly pressing down at all, you are not trying to form a burr here, that is already done, now you refining the edge and bevel, removing some of the scratches left by your first stage of the process. Here is where the knife will get sharp and it will happen quickly. Now you are removing the burr, you are cleaning up the edge, some of that fatigued metal is going to want to hang on to the mother ship, your moderate pressure is going to start taking it away, as reluctant as it is to leave, it won’t have a choice. This should only take a couple minutes just mimicking the first step but with lighter pressure and this time visualizing the burr being scraped away, it will start to vanish.
Cutting angle – With a manual stick or sharpening stone you set the angle yourself so this does not factor into the equation when choosing that type of sharpener. When shopping for an electric sharpener however it does. You’ll want to decide if you want your knives to have the 15 degree “Asian” style angle so that you can make precise cuts or the Western standard 20 degrees or 22-degree sharpening angle. Most people will opt for the 20 or 22-degree angle simply because their cuisine doesn’t call for a lot of finesse from their knives and those knives are probably of a heavier Western variety anyway.
Clamp-style sharpening tools use a clamp with several holes with predefined angles. The stone is mounted on a rod and is pulled through these holes, so that the angle remains consistent. Another system is the crock stick setup, where two sticks are put into a plastic or wooden base to form a V shape. When the knife is pulled up the V, the angle is held so long as the blade is held perpendicular to the base. Several cutlery manufacturers now offer electric knife sharpeners with multiple stages with at least one grinding stage. These electric sharpeners are typically used in the kitchen but have the ability to sharpen blades such as pocket or tactical knives. The main benefit of using an electric sharpener is speed with many models that can complete the sharpening process in one to two minutes. The disadvantage is that the sharpening angle is fixed so some specialized knives, like a Japanese style Santoku, may need additional attention to sharpen to the ideal angle.

This is a good size stone and has the two different grits needed for knife sharpening. No instructions were included, but there are many websites with written and video instructions, so this is not an issue for most people. A fair amount of dust is generated during the sharpening process, so protect the work surface and wash the knife after sharpening is completed.

My Fujiwara is an exceptional cutter and a pure joy to use, as a result, the mediocre knives get a pretty good break and the dream knife gets to do the lions share of food preparation. So it gets duller faster. However, it goes without saying that superior steel will have improved edge retention but at the end of the day, knives get dull, they just do and I am very happy about that, I get to sharpen them over and over!

Mine came plain white then started to darken after a few weeks. About 4 weeks in it settled to a more natural stone/slate grey. The leather has darkened a bit too and remains soft and comfortable. The leather remains easy to adjust and my selected sizings stays in place firmly. Overall It feels, looks and works great. The knot and darker stone/leather compliment each other well.
As you see in the pictures, it is always very important to keep same angle of about 10' to 15', which is about two coins height between the blade and the whetstone. One thing about this stone is that it is very "thirsty." I had a cup of water close by just to add a little water periodically when it felt like it was scraping a little too aggressively. Also, be sure to do as the instructions say and use different parts of the sharpening surface. I wasn't paying attention the first few minutes, and apparently I would end each sharpening pass in the exact same spot, creating a very very small notch on the edge of the stone. So I turned the stone around and made sure to vary the ending spot, and it seemed to buff out that little notch very quickly. My knife is now incredibly sharp--it seems to glide through material rather than "cut" it. I know some people would continue to go even higher with the grit, but for my purposes this whetstone is just perfect. I'll be tackling the kitchen knives next!
In most cases a sharpening stone will be a combination of sharpening grains and a binding agent. However, in case of a Ardennes Coticule it is a completely natural product. The grains have cutting edges which enables them to sharpen your knife. As soon as a sharpening stone is used little pieces of the grains break off, revealing a new cut ing edge. The higher the number, the finer the grain. Stones with coarse grains (up to grain 400) can be used to shape the blade of a blunt knife. You can subsequently take care of the fine finish with a stone with a smaller grain.
Table mounted device – Typically the manual powered table mounted sharpener looks virtually identical to the electric powered sharpener with a slot for each stage. Where they differ is that each slot in the manual powered sharpener has only one groove and you pull the blade through this groove toward you to sharpen the blade. Once the blade is sufficiently sharp you place it in the honing groove to refine the edge and pull it toward you again several times. If there is a third, cleaning, stage you repeat the process for that stage as well.
The speed and polishing ability of waterstones attract many sharpeners. Waterstones sharpen quickly and are available in fine polishing grits not found in other stone types. The ability to flatten the stones is a necessity when sharpening with waterstones, so a starting set should include a flattening stone of some kind. I am just starting out sharpening with whet stones. I have found these stones to be very nice and the instructional videos that come along with the set on knifeplanet are extremely helpful to anyone starting out. If you don’t have a problem with the water-lubrication system in your working environment, Waterstones is the most common and affordable models to obtain. They are available in various abrasive grit grade from coarse to extra fine mesh. They generally made by Aluminum Oxide, which provides faster cutting. The downside of the Waterstone, they wear down more quickly as the impact of the old abrasive materials that break the stone itself. It is why Waterstone requires frequent flattening to keep it evenly. It is recommended you have one of diamond stones to help you for regular flattening become easier.
Ceramic sharpening stones were the early replacement for natural stones. Unfortunately there are huge differences in the quality of ceramic stones so be wary. Some are extremely soft and dish out very quickly and at the other end of the spectrum some are so hard they tend to glaze over in a hurry. Ceramic stones need a good soaking for about 10 or more minutes to saturate the pores of the stone prior to use. As all knife steels are different we tend to find that ceramic stones tend to work better with some knives over others. There are no hard and fast rules but we like ceramic for Ao-ko and single edged knives. The Kaiden Ceramic stones are the fastest cutting Japanese stones in Australia and are recommended for advanced users.
If you wish, further polish or even strop the edge to the desired sharpness. This makes the edge better suited for "push cutting" (cutting directly into materials, pushing straight down without sliding the blade across the object) but generally impairs slicing ability: without the "microscopic serrations" left by grinding with a stone, the blade tends to not bite into things like tomato skins.

Serrated blades have a grind on one side of the blade. Only sharpen the grind side of the blade. Hold the sharpener at the angle that matches the original edge angle. Hold the knife with the edge away from you and the serrated side of the edge facing up. Set the tapered diamond sharpener in a serration so that you fill the indentation. Draw the sharpener towards the edge.
However, due to limited natural deposits and extensive quarrying over the centuries, true, high quality, Japanese water stones are now few and far between and are very expensive. Thus, various companies are now producing synthetic Japanese Water Stones which generally have a more consistent composition and grit size than natural stones as well as often begin somewhat harder and thus, lasting a bit longer; not to mention being cheaper to purchase.
