The only secret with ceramic stones is that you should take maintenance seriously else they will wear before they are due. The other beauty of these stones is that they need no lubrication you can use them dry. They will give you a very sharp and fine blade after which you need to scrub them to remove the metal particles. Ceramic stones are very hard which means that they can remain flat for decades. The downside to ceramic stones is that they only provide you with fine grit and if it falls, it breaks easily into pieces.
Diamond whetstones, like the DMT Diamond Whetstone, are made out of industrial type diamonds which create a long-lasting hard, coarse and flat surface. A diamond whetstone is an excellent choice for when you are outdoors as you can use it dry or with a lubricant. High Grit Stones: These are also known as finishing stones with the number range going up to 8000, and give you a super refined edge. They work great with Western knives as they cutting edge resembles a “U” as opposed to a “V”. If you are using your knife to cut meat, then you can happily stop at 4000 or 6000 grit. If you are only using it for vegetables or fruit go all the way to the 8000.
Now that you're holding the handle and the blade is in position, gently apply some pressure to the belly of the blade with your left hand fingers – "roughly the amount of pressure to semi depress a sponge," says Warner. Starting at the tip, glide the blade up and down the stone – around five strokes up and down is a good number. Then move to the middle – five more strokes. Finally five strokes up and down on the heel.
Now you may wonder, if a finer stone produces a better cutting edge why do I need a coarse stone at all? The answer is that finer stones work much more slowly than coarse ones. The amount of metal a fine stone removes with each pass is much less than what a coarse stone removes. If you have an edge with a good shape to it from a coarse stone, this is not a problem because the fine stone doesn’t have to remove much metal to improve the edge. If the edge is dull, it will take many times longer to reshape it with a fine stone than it would with a coarse one.

One of the combinations of stones that I was introduced to several years ago is a unique one, it is a 500, 2,000 and 16,000 grit combination. I was apprehensive when I first tried this, that was thousands of knives ago, it works, it is fantastic combination. It is unique because the traditional way of thinking is that we should be doubling the grit sizes as we sharpen, for example, a 500 grit stone should be followed by a 1,000 grit, then 2,000 grit. This line of thought is meant to be flexible, it is a general rule only, I have broken it countless times.
Historically, there are three broad grades of Japanese sharpening stones: the ara-to, or "rough stone", the naka-to or "middle/medium stone" and the shiage-to or "finishing stone". There is a fourth type of stone, the nagura, which is not used directly. Rather, it is used to form a cutting slurry on the shiage-to, which is often too hard to create the necessary slurry. Converting these names to absolute grit size is difficult as the classes are broad and natural stones have no inherent "grit number". As an indication, ara-to is probably (using a non-Japanese system of grading grit size) 500–1000 grit. The naka-to is probably 3000–5000 grit and the shiage-to is likely 7000–10000 grit. Current synthetic grit values range from extremely coarse, such as 120 grit, through extremely fine, such as 30,000 grit (less than half a micrometer abrasive particle size).
A well made and Versatile Chef's Knife I received this in 2 days with prime, and it arrived in perfect shape.This is a marvelous Chefs knife! I find it well balanced, and very sharp.It does require some knowledge on how to sharpen the one-sided bevel on the blade, but once you learn it's easy to maintain a razor sharp edge! I also really appreciate the wood box it comes in.The slight curve of the blade also makes it ideal to ""rock"" when finely chopping herbs. Very Pleased.

This type of stone is slower at sharpening or honing a blade and it can be messy and you need to always have some oil on hand but it creates a nice sharp edge and a beautiful polish.

Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.
To use a whetstone you run the knife's blade back and forth across the stone's surface and due to the constant friction with the stone, which acts like a piece of sandpaper, the knife's edge becomes razor sharp and has a brilliant mirror shine. Oil Stones differ from water stones in that they require the use of honing oil to float the swarf (metal particles). Also, these stones are commonly made from one of three different materials consisting of Novaculite, Aluminum Oxide (Corundum), or Silicon Carbide (Carborundum) and they all use oil to lubricate the stone and suspend the swarf in order to prevent the stone from becoming clogged. Also, while Novaculite and Coticule are the most traditional types of oil stones, there are also synthetic oil stones made by the Norton abrasives company called “India Oil Stones”.
