Before you start sharpening, soak the stone in water for around five to 10 minutes, until it absorbs the water and a liquid film appears on the surface. After soaking, splash some water on top, and re-splash during the process if it ever gets too dry. You'll get a dark, splotch of steel and stone building up on the stone while you're sharpening the blade. This is totally normal so just splash the stone with some water to clean it off and allow it to perform more efficiently. 
Medieval people typically used a whetstone to sharpen their knives for use either in cooking or in their craft. Whetstones were not necessarily used by an individual looking for superior quality, but were instead used mostly as a convenient tool for a quick sharpening. This is exemplified by the hole present near the top of the whetstone through which craftsmen could string some sort of cord to tie the whetstone to their clothing, which makes carrying this tool relatively simple. The guilds of London likely used whetstones regularly, as many crafts such as curriers or cooks relied on the rigorous use of blades, which could thus become dull and unusable. However, using a whetstone to finish a freshly made blade was considered inappropriate, as it would not provide the same edge as a proper grindstone would. The grindstone was a much larger instrument, capable of sharpening a blade much more quickly and effectively than a whetstone because of the speed at which one could use it. It was used more in the initial crafting of a blade, but the whetstone was used for regular upkeep. As mentioned, some crafts were displeased with the use of whetstones to finish their products. The Bladesmiths, for instance, of fifteenth-century London were particularly careful about ensuring that their blades were not ruined by others using a whetstone rather than a grindstone. They raised an official complaint about this issue at one point, which suggests that the people in charge of ensuring the sharpness of their blades were slacking off.

I find it well balanced, and very sharp.It does require some knowledge on how to sharpen the one-sided bevel on the blade, but once you learn it's easy to maintain a razor sharp edge! I also really appreciate the wood box it comes in.The slight curve of the blade also makes it ideal to ""rock"" when finely chopping herbs. Very Pleased.
The 6000 grit is great for having a nicely polished edge, it's the last step stone that I use for my knives in the kitchen. I like the King stones in general, they're a really good value and last much longer than the discount/cheap water stones. I use these stones to keep all of my kitchen knives nice and sharp and haven't had an issue with these stones. I also like that these soak quickly, I let them soak for about 10-20 minutes and they're ready to use. I have to flatten these a little more often than more expensive stones but I knew that was probably going to be the case when I bought them.
We’ve shown you how to keep knives sharp before, and even discussed why water stones are best, but this crash course is quick, fast, and gets to the point. In most cases the most the average person at home can do is either hone their blade with a honing steel, which straightens and lines up the blade’s edge, but it doesn’t sharpen it. Alternatively you could run it through a handheld or electronic sharpener, but depending on the model you use it can do more harm than good.

Mine came plain white then started to darken after a few weeks. About 4 weeks in it settled to a more natural stone/slate grey. The leather has darkened a bit too and remains soft and comfortable. The leather remains easy to adjust and my selected sizings stays in place firmly. Overall It feels, looks and works great. The knot and darker stone/leather compliment each other well.
Basically, there are 3 types of whetstones, Arato (rough grits), Nakato (medium grits) and Shiageto (fine grits). We normally use Nakato for the sharpening, but you can start with Arato to correct rough or damaged edge, and then Nakato and finish with Shiageto to get a fine and keen edge. All the sharpening methods and processes are same. However, it is not recommended to sharpen the opposite flat side of the blade with Arato
You’ve probably seen a number – say 1000 – on the side or top of the Whetstone you just bought and are at a loss as to what it all means, or even worse the person who sold it to you, didn’t know or forgot to mention it. Which ever of these scenarios sounds about right, you are left with a stone and no idea how you should be using it, well let me enlighten you dear reader.
The goal when sharpening is to create a burr, which is a tiny whisper of metal left on one side of the blade. You'll know you have a burr when you can feel one smooth and one scratchy side to the edge. Warner's is formed in no time at all; I struggled. Nevertheless, eventually I got there. Once you've got the burr, it's time to move on to step three.
Lubricant. Most knife sharpening experts recommend you use some sort of lubricant when sharpening your knife. The lubricant can come in a variety of forms, from water to oil. Most of the literature out there recommends mineral oil to be used for knife sharpening. The lubricant reduces heat from the friction that is created from sharpening your knife. Too much heat can actually warp your blade. Lubrication also helps clear out the debris, or swarf, that is created as you grind your knife blade on the stone. You can pick this up at most hardware stores for about $5. I used Norton Sharpening Stone Oil in the video.

Historically, there are three broad grades of Japanese sharpening stones: the ara-to, or "rough stone", the naka-to or "middle/medium stone" and the shiage-to or "finishing stone". There is a fourth type of stone, the nagura, which is not used directly. Rather, it is used to form a cutting slurry on the shiage-to, which is often too hard to create the necessary slurry. Converting these names to absolute grit size is difficult as the classes are broad and natural stones have no inherent "grit number". As an indication, ara-to is probably (using a non-Japanese system of grading grit size) 500–1000 grit. The naka-to is probably 3000–5000 grit and the shiage-to is likely 7000–10000 grit. Current synthetic grit values range from extremely coarse, such as 120 grit, through extremely fine, such as 30,000 grit (less than half a micrometer abrasive particle size).[citation needed]
But it's a different type of sharp, according to Joe Authbert, product development manager at ProCook. "What it does is add tiny little micro-serrations onto the edge of the blade." But fear not - your smart knife won't end up looking like a bread knife, as you'll be hard-pressed to spot the serrations. "If you looked at it under a microscope, on the cutting edge, there are these little lines that generate the sharpness, rather than a waterstone which is a smooth sharp edge," says Authbert. 
Four hundred million years ago in a small geographical region of Central Arkansas, now part of the Ouachita Mountains, nature began the creation of a sedimentary rock formation composed of microcrystalline quartz called Novaculite. The word Novaculite comes from the Latin word novacula, meaning razor stone. Novaculite is a recrystallized variety of chert. It is the stone material from which whetstone and oilstone sharpeners are made.
