You've acquired a good chef's knife, you're using it almost daily to make tasty dinners for the family, and it's stored in a nice knife rack or a magnet for safekeeping. So why stop there? Keeping that knife's edge fine will make cooking not only safer but, let's face it, much more fun. Whether you've spent £150 on a high-end knife or under a tenner on a dinky paring knife, keeping it sharp is crucial. 
I recommend keeping two stones in your kit. One with a medium grit (around 800 or so) to perform major sharpening jobs, and one with a fine grit (at least 2,000) to tune the edge to a razor-sharp finish. For real pros, a stone with an ultra-fine grit (8,000 and above) will leave a mirror-like finish on your blade, but most cooks won't notice the difference in terms of cutting ability.

This is a good size stone and has the two different grits needed for knife sharpening. No instructions were included, but there are many websites with written and video instructions, so this is not an issue for most people. A fair amount of dust is generated during the sharpening process, so protect the work surface and wash the knife after sharpening is completed.

Method 1: Use an Electric Sharpener. Quality electric sharpeners are an option, but I strongly discourage their use. First off, they remove a tremendous amount of material from your edge. The origin of this practice is unknown. Such was the case for William Blackeney, who was discovered to be lying about being a pilgrim, a crime because he was coercing people into giving him gifts and other benefits. After being presented to the city officials, he was sentenced to be publicly shamed via the pillory and was forced to wear a whetstone around his neck for having deceived people for several years. Another case of this type was seen in William Hughlot’s punishment for assaulting several people, one of whom was an alderman. Upon his arrest, he proclaimed that the blame should be on the mayor and he proceeded to insult the court. Instead of the traditional punishment of cutting off the hand of a man who assaulted an alderman, he was pardoned and was given the lesser punishment of imprisonment along with being locked in the pillory with a whetstone around his neck. This use of the whetstone is curious, but when considering the duration of an individual’s punishment via the pillory, probably about an hour or more a day, it would seem that this could be an irritating and shameful punishment.

Hold the knife so that it’s flat and perpendicular to the block, with the blade facing left. Holding the knife at a 20-degree angle, slowly sweep the edge of the blade from left to right down the length of the stone and continue until sharp. If stone starts to feel too dry, add more water. Be patient and take your time. Flip knife over and repeat on the other side (now moving from right to left). Be sure to sharpen both sides evenly. To polish the blade further, flip stone over to the fine 1000 grit side (light green) and repeat the process. When blade is honed to desired sharpness, wash and dry your knife. To clean your stone, simply rinse with water, wipe away any remaining metal residue with a rag, rinse again, then dry.
Beginning on the right side of the knife, move from tip to heel and heel to tip, then flip the knife and repeat. For the left side, it’s opposite—start at the top of the stone to reach the heel area completely. So, you will move from heel to tip and then tip to heel. Remember to apply and release pressure as you did earlier, exactly the same as in Step 2, but with light, refining pressure.

We’ve shown you how to keep knives sharp before, and even discussed why water stones are best, but this crash course is quick, fast, and gets to the point. In most cases the most the average person at home can do is either hone their blade with a honing steel, which straightens and lines up the blade’s edge, but it doesn’t sharpen it. Alternatively you could run it through a handheld or electronic sharpener, but depending on the model you use it can do more harm than good.

The stone arrived in perfect condition. I like the size as it does not take up much room on the counter. The one used professionally was very large and heavy. I have not put and edge on my knives for over 5 years. A whetstone is a luxury I could only afford recently. Given how dull they were it did not take long to put a nice sharp edge on them. This is my first wetstone. First off I tried to sharpen my Chicago Cutlery boning knife. This knife is nearly thirty years old, has been abused in may ways and was quite dull. It was very difficult for me to get a burr on this blade, which I attribute to poor technique. Next I moved on to my Henckels Professional S paring and chef's knives. The paring knife was moderately sharp and was modestly improved after working over all three grits of stone. It would cut paper but again it was difficult to develop a burr with this blade. Undaunted I switched to the chef's knife. This knife is twenty years old and has never been professionally re-sharpened. I have sharpened it twice with a Lanksey sharpening system which marred the finish but did put a good edge on the blade. Lansky Standard Coarse Sharpening System with Fine Hones. The chef's knife was moderately dull and had several pits visible on the cutting surface. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Not sushi knife sharp but more than enough for the chopping and slicing I expect of it. I'm looking forward to going back and working both the boning knife and the paring knife over again. Don't expect a good result from this product the first time you use it. Watch videos on using a wetstone, expect to spend at least twenty minutes per knife at first, and practice forming a burr. These are unquestionably great starter stones. After all the sharpening done over the course of a couple days, they're still perfectly flat, showing little to no signs of wearing down. Mind you I did watch tons of how-to videos online before undergoing the endeavor, so I knew how to try to make the stone wear evenly. But, my 15 year old nephew who was working on the Ontario, as I told him he could have it, if he wanted to fix it up, didn't watch all those videos and I didn't see any uneven wear on his stone after working it about a half hour either.

This is a hard review to write because while the stone is great and comes perfectly flat it's too darn small. My problem is I bought one of these over fifteen years ago and after a move it suffered two cracks across the face making it unusable. That stone is about 3" x 8 1/4" x 3/4" . This new version is about 2" x 7" x 1/2". It's practically impossible to polish a knife set from a big #7 plane let alone a #4 plane. I feel cramped even using it for chisels! The thickness doesn't really bother me even though my thicker stone cracked, with reasonable care I don't expect this one to crack. So although I love the actual stone I wish they still made my old stone. I guess I should have measured my original one and then compared the description but I assumed they would be the same. So because of that I took off one star but since there's nothing wrong with the actual stone I wanted to give it three stars based on the small size but couldn't.

This coarse grit whetstone is great for prepping old and dull knives that need to be sharpened with a fine grit stone. One of my good knives edge looked like someone had tried to chop barbed wire. After ten minutes on each side of the stone, the edge was smooth and free of imperfections. After it hit the knife with the fine grit stone, I was cutting onions and apples like hot butter! I would soak this stone for 12-24 hours before using. It sucks water like a sponge. The surface needs to be damp when you sharpen.
I've only used it to touch up the edge on an ESEE RB3 and a pocket folder so far, but it has done very nicely for those tasks. I found that using the rounded edge works best for me in order to be able to run the length of the blade without hitting the leather lanyard. I'll hopefully try it out soon on fish hooks, too. Don't know. Not sure that I really care, as these stones definitely did the job that was asked of them, and did it with ease, even for a beginner whetstone user. I'll probably stick with them, at least until I get a lot more experience. Though, I do see a 10,000 or higher grit stone in my immediate future - more to play around with, than a feeling of genuine need.

Your whetstone will most likely be double-sided with a coarse and a fine grit. The grit is determined by the number of sand-like particles in the stone. The coarse grit will have fewer particles, whereas the finer grit will have more grains. Both sides are utilized to effectively sharpen a blade. The coarse grit, usually a deeper color; red or gray, will pre-sharpen the blade and remove any burrs or discrepancies in the blade. In order to remove the remaining burr, pull the blade at an angle over the stone. Rinse the stone and clean off the grinding residue. Clean your knife with hot water.
