The toughest angle to master is the angle at which you'll sharpen the edge of the knife. For a Japanese knife, that should be around 12-15 degrees. Before you reach for the protractor, a good test is to get roughly half an index finger's gap between the spine of the knife and the stone (see above). Remember to remove your finger before you start sharpening. For a Western-style knife, you want an angle of about 20°, so raise it ever-so-slightly higher.
I recommend keeping two stones in your kit. One with a medium grit (around 800 or so) to perform major sharpening jobs, and one with a fine grit (at least 2,000) to tune the edge to a razor-sharp finish. For real pros, a stone with an ultra-fine grit (8,000 and above) will leave a mirror-like finish on your blade, but most cooks won't notice the difference in terms of cutting ability.

"Sharpening is like a hangover cure," says Laurie Timpson, founder of Savernake Knives in Wiltshire. "If there was a cure and you knew about it, I'd stay at your house, crash on your sofa and have whatever it was when I woke up. Everyone would have it and there'd be no discussion. Everybody says they've created a perfect sharpening technique, and they haven't." 
Method 1: Use an Electric Sharpener. Quality electric sharpeners are an option, but I strongly discourage their use. First off, they remove a tremendous amount of material from your edge. Sharpen your knife a dozen times, and you've lost a good half-centimeter of width, throwing it off balance, and rendering any blade with a bolster (i.e. most high-end forged blades) useless. Secondly, even the best models provide only an adequate edge. If you don't mind replacing your knives every few years and are happy with the edge they give you, they'll do the trick. Lubricant. Most knife sharpening experts recommend you use some sort of lubricant when sharpening your knife. The lubricant can come in a variety of forms, from water to oil. Most of the literature out there recommends mineral oil to be used for knife sharpening. The lubricant reduces heat from the friction that is created from sharpening your knife. Too much heat can actually warp your blade. Lubrication also helps clear out the debris, or swarf, that is created as you grind your knife blade on the stone. You can pick this up at most hardware stores for about $5. I used Norton Sharpening Stone Oil in the video.
Excellent wet stone for the home for someone with wet stone experience. Well designed plastic storage box doubles as stand for the wet stone. In use, the stone sits securely in a pliable gasket that fits in the plastic stand. Stone size is good for kitchen knives, dual grit works as advertised - lower number for cutting and higher number for finishing. Quickly put a keen edge on my knives. As this is a wet stone it is important to submerge the stone in water for about 10-15 minutes prior to use.and keep it wet during sharpening. It's a little messy to use and clean up is necessary to remove sharpening residue from knives, stone and surrounding area. Inexperienced sharpeners should use the angle guide provided in this kit and keep in mind it is far easier to keep a knife sharp than it is to put a sharp edge onto a very dull knife. To sharpen a knife using a whetstone, submerge the stone in water for approximately ten minutes. When the stone absorbs the proper amount of water you will no longer see air bubbles floating to the top of the water. Place the whetstone on a flat, stable, slip-resistant surface coarse side facing up. Move the blade back and forth across the stone several times, tip to heel, at the correct angle for your knife. While sharpening, it is important to continuously pour water on the whetstone. Small particles release from the whetstone and form an abrasive substance when in contact with water. Repeat on the other side of the blade. Once this is complete, flip the stone over to the fine side and repeat the process. The fine side will take off any leftover steel. Finally, rinse the knives off in hot water.
