I've been using these stones for the past day, and they work great. Once you get the technique down that works for you, you can sharpen any knife to the point it can cut through news paper. Tip: make sure you count the amount of times you pass through the stone on one side and do that same amount on the other side. What I usually do is if I know the knife is very dull or chipped, I do 100 passes on each side using the 400 grit. I test the blade on thick paper and if it cuts through I test it on news paper. If it doesn't cut through the news paper I do another 50 passes on each side. Repeat this until the blade can cut through newspaper. After, on the 1000,3000, and then the 8000 grit stone I do 50 passes on each side. This should make the blade very smoothe cutting and polish it. I plan on getting a strop or piece of leather to further polish the blade. The only thing I don't like about this is that this package is that it does not come with a dressing stone so you can re flatten/level the stone after using them.
Now you are going to use P2 pressure, moderate and in this case the stone is going to do the work, you are just guiding the knife along, stabilizing it as the amazing water stones does it’s job. Use the exact same technique, same angle but just moderate pressure, hardly pressing down at all, you are not trying to form a burr here, that is already done, now you refining the edge and bevel, removing some of the scratches left by your first stage of the process. Here is where the knife will get sharp and it will happen quickly. Now you are removing the burr, you are cleaning up the edge, some of that fatigued metal is going to want to hang on to the mother ship, your moderate pressure is going to start taking it away, as reluctant as it is to leave, it won’t have a choice. This should only take a couple minutes just mimicking the first step but with lighter pressure and this time visualizing the burr being scraped away, it will start to vanish.
This 600/1,000 grit is my second Unimi knife sharpener, the first is 2,000/6,000 grit and I love them both. Both stones together produce very sharp and well polished knives that reduce the cutting effort and save time in the kitchen. I particularly appreciate that the manufacture printed the grit number on the side of each stone - that helps use the different grits in the proper sequence from the coarser to the finer. The stone comes with a non-slip silicone/rubber base which is very handy.
The smaller the angle between the blade and stone, the sharper the knife will be, but the less side force is needed to bend the edge over or chip it off. The angle between the blade and the stone is the edge angle – the angle from the vertical to one of the knife edges, and equals the angle at which the blade is held. The total angle from one side to the other is called the included angle – on a symmetric double-ground edge (a wedge shape), the angle from one edge to the other is thus twice the edge angle. Typical edge angles are about 20° (making the included angle 40° on a double-ground edge). The edge angle for very sharp knives can be as little as 10 degrees (for a 20° included angle). Knives that require a tough edge (such as those that chop) may sharpen at 25° or more.
The goal when sharpening is to create a burr, which is a tiny whisper of metal left on one side of the blade. You'll know you have a burr when you can feel one smooth and one scratchy side to the edge. Warner's is formed in no time at all; I struggled. Nevertheless, eventually I got there. Once you've got the burr, it's time to move on to step three.
Vielsalm Coticule on the other hand generally occurs in much more narrow layers sandwiched between the slate layer and the Belgian Blue layer and thus, it is both less plentiful and more expensive than Belgian Blue stone. Also, Coticule is divided into different grades and sometimes displays blemishes on the surface due to its proximity to the slate layer. Furthermore, it is somewhat harder than Belgium Blue stone and, due to its brittleness, it is bonded to a substrate layer of hard slate prior to sale to prevent the stone from breaking during use.
You might not need to spend hundreds of pounds to get the best knife sharpener, but you do need to know what you're doing. Warner gave me a crash course in the technique. As a newbie to this method, it took a while to get used to (especially since Warner handed me a knife that had never previously been sharpened) but after half an hour's practice and a little encouragement, I got the hang of it. Here's what I learned...
Diamond hones are made from very small, industrial grade, diamonds adhered to the face of a metal or plastic plate. Also, because Diamonds are so much harder than any of the other sharpening materials, they tend to cut very fast and last much longer than the other whetstone materials. But, they are also often more expensive to purchase. In addition, Diamond Stones generally consist of three different styles consisting of a solid metal plate coated with an adhesive and diamond dust with holes in the plate to allow the swarf to escape, a solid plate without holes for sharpening tools with corners that might catch in the holes, and a plastic plate with islands of exposed plastic interspersed with the adhesive and diamond dust to act as a lubricant.
My Fujiwara is an exceptional cutter and a pure joy to use, as a result, the mediocre knives get a pretty good break and the dream knife gets to do the lions share of food preparation. So it gets duller faster. However, it goes without saying that superior steel will have improved edge retention but at the end of the day, knives get dull, they just do and I am very happy about that, I get to sharpen them over and over!

At this point, I can flip the stone over and use the fine course side. Most Whetstones come with a nice wooden base that do a good job to hold the stone in place while sharpening. Before starting, you might need to add a bit more water to the surface. Now with the fine course stone, finish the sharpening process like before at the same blade angle and nice consistent passes along the stone. About 10 to 12 passes is good before switching to the other side of the blade. At this point, the blade should be extremely sharp. I’ll just give a quick paper test here. I can now slice paper quite easily with my knife.
Medium Grit Stones: The number range here is from 1000 to 3000, with the latter being the basic, go-to sharpening stone. If your knives have lost their edge and need a good sharpen, then this is the grit you should start with. Don’t use it too often or the knife wears down rapidly. If you like to sharpen regularly, then the 2000 and 3000 grit are the ideal choice as they are less coarse, but please remember they are designed for sharpening and not maintaining the edge.
I purchased this set together with the 400/1000 grit stone assuming that some of my knives were quite dull and would need work on a coarse grit stone. Premium Whetstone Sharpening Stone 2 Side Grit 400/1000 | Knife Sharpener Waterstone with NonSlip Rubber Base & Flattening Stone. This is my first wetstone. First off I tried to sharpen my Chicago Cutlery boning knife. This knife is nearly thirty years old, has been abused in may ways and was quite dull. It was very difficult for me to get a burr on this blade, which I attribute to poor technique. Next I moved on to my Henckels Professional S paring and chef's knives. The paring knife was moderately sharp and was modestly improved after working over all three grits of stone. It would cut paper but again it was difficult to develop a burr with this blade. Undaunted I switched to the chef's knife. This knife is twenty years old and has never been professionally re-sharpened. I have sharpened it twice with a Lanksey sharpening system which marred the finish but did put a good edge on the blade. Lansky Standard Coarse Sharpening System with Fine Hones. The chef's knife was moderately dull and had several pits visible on the cutting surface. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Not sushi knife sharp but more than enough for the chopping and slicing I expect of it. I'm looking forward to going back and working both the boning knife and the paring knife over again. Don't expect a good result from this product the first time you use it. Watch videos on using a wetstone, expect to spend at least twenty minutes per knife at first, and practice forming a burr. If you can form a burr, you will be able to successfully sharpen your knife.
