Keep in mind though that it really shines on serrated and straight edged, double bevel Asian-style knives.

In terms of feedback, in the eyes, and in the hands of many sharpeners, the feedback on this particular brand of stones is not to their liking and often it is enough to stop them from using them. These are thinner than other stones as well so you may get the impression that you are not getting your moneys worth. They are very hard stones, there is no soft, creamy sensation as you sharpen, there is not much feedback at all in fact.
Despite their name, sharpening steels don’t sharpen knives in actual sense. Their main job is honing a knife blade. However, certain styles or cuts can perform some minor sharpening. You should note that steels that sharpen knives should not be used in place of normal sharpeners. The most common types of cuts include diamond, regular, ceramic or combination. The differences in these cuts are subtle. The choice of cuts depends on what you want to achieve with the honing steel, as well as your budget
Once the burr is removed, it's time to test the sharpness with paper. Hold a piece of newspaper at about 45°, with a bit of tension, and slash lightly with each point of the blade. If it cuts through easily, your knife's sharp. Warner speedily lacerated his newspaper, but I of course struggled. There is an element of technique involved, he reassured me. 
Our test targets consisted of 5 pounds of tomatoes and sheets of regular 8½-by-11-inch paper from a writing pad. (The “paper cut” test is a universal standard among sharpening enthusiasts.) After we tested each knife against both objects in its dull state, we sharpened it according to the manufacturer’s instructions on one of the seven sharpeners. We then repeated the tests and noted the relative improvements in cutting performance. We also paid attention to an issue that’s common to virtually all manual and electric sharpeners: their inability to sharpen all the way to the heel of the blade, the part closest to the handle. The knob above has presets for kitchen as well as hunting knives. This sharpener is well worth its price as the sharpening blades are easily removable. The pictures don't show it well but once you pull out the knob, the gray plastic cover easily comes off and the blades are held by the yellow pieces by screws. I have not yet found replacements but I don't think I will need them soon. The blades are still sharp after sharpening 20 knives. I sharpened my main santoku knife, chefs knifes and serrated steak knives and I was very impressed. Highly recommended.
There will be a drawer that extends into the mechanism under the abrasives. Any detritus from the sharpening process drops into this drawer. Exactly where the drawer is located will differ from sharpener to sharpener but it shouldn’t be hard to find. Remove the drawer flick any material into the wastebasket and then wipe out the drawer with a damp cloth or tissue. You may want to use work gloves and goggles to protect your hands and eyes from any loose metal shavings. Once the drawer is clean and dry replace it. The exact means by which the sharpening mechanism itself is cleaned will vary from manufacturer to manufacturer. Consult your owners guide for specific details. Make sure you don’t introduce any grease or other lubricants into the sharpener unless specifically directed to do so by the owner’s manual. Also, the outside of the sharpener should come perfectly clean with just a damp cloth. Avoid using commercial cleaners or abrasives of any kind.
This Messermeister rod is available in a 10-inch option and a 12-inch option, allowing you to select whichever suits you best. A general rule I like to follow in selecting a sharpening rod is to select one which is about the same size as my longest blade. As someone who’s longest blade is only 8 inches, I would select the 10-inch option. Most people will find themselves leaning toward that option, since bigger isn’t necessarily better. The rod needs only to be sufficiently long to allow you to sweep your knife down it without running out of rod before you reach the end of your knife. Anything too large will be difficult to control. Table mounted device – Typically the manual powered table mounted sharpener looks virtually identical to the electric powered sharpener with a slot for each stage. Where they differ is that each slot in the manual powered sharpener has only one groove and you pull the blade through this groove toward you to sharpen the blade. I have this one and the axe/machete version as well. These are great sharpeners that make very short work of getting blades sharp. They take off quite a lot of material and are quite different than most other stone sharpeners I have used in the past, so I try to be conservative with my pressure as you see the chips fall when you pull the knife through. But, they absolutely work, and work very well. If you have a high use knife, this is a great way to keep it sharp and in service all the time. I use my large bushcraft knife a lot more now that I have this since I can sharpen it much faster and easier. I would not use this sharpener on precision instruments just because I prefer more control and try to preserve material on those types on knives. But, bottom line, I get more work done and much faster now that I have this.

If I am to be completely honest, I must tell you that I actually came extremely close to selecting another manual sharpener for this position. I thought it looked wonderful. It had all the specifications I would hope for in a manual knife sharpener and then some. It boasted the ability to sharpen at two different angles (15 degrees and 20 degrees) and included a honing feature. It looked solidly built. It used diamonds to grind the blades down. It sounded perfect and I almost selected it, until I read the consumer reviews. The consumer reviews for that apparently perfect manual knife sharpener were abysmal.
Start off on the rough grit side of the stone. Check the grit on your stone, or the packaging that came with the stone, to identify which is which. In general, whetstones and diamond stones each have different grits on either side. The rough grit side is used to grind the steel down, while the fine grit side is used to sharpen or hone the knife. The grinding process comes first, so you start on the rough grit side.

The smaller the angle between the blade and stone, the sharper the knife will be, but the less side force is needed to bend the edge over or chip it off. The angle between the blade and the stone is the edge angle – the angle from the vertical to one of the knife edges, and equals the angle at which the blade is held. The total angle from one side to the other is called the included angle – on a symmetric double-ground edge (a wedge shape), the angle from one edge to the other is thus twice the edge angle. Typical edge angles are about 20° (making the included angle 40° on a double-ground edge).[1] The edge angle for very sharp knives can be as little as 10 degrees (for a 20° included angle). Knives that require a tough edge (such as those that chop) may sharpen at 25° or more.

4. Start sharpening the first side of the blade. With your blade set at the prefect angle, you’re ready to start sharpening. Imagine you’re carving off a slim piece of the stone’s surface. Personally, I bring the blade into the stone. Other people stroke the blade away from the stone. Both ways work, so just use whatever technique you prefer. If the knife blade is curved or if it’s longer than the stone, you’ll need to sweep the blade sideways as you work, so the entire edge is sharpened evenly. Apply moderate pressure as you sharpen. No need to bear down hard on the blade. After you make one stroke, start back at the beginning and repeat. Do this about 6-12 times.
A: That depends almost entirely on how often you use them. If you are a professional chef who uses his or her knives every day then you should hone them every time you use your knives. But honing has its limits and over time your edge is going to become dull no matter what. Therefore your knives will need to be sharpened at least several times a year. Some chefs, in fact, will use a whetstone on an almost daily basis in order to ensure their knives are always razor sharp. Most of us, however, are not professional chefs and may not even touch our kitchen knives for days at a time. In that case, it’s probably a good idea to hone the edge after every couple of uses and have your knives sharpened once a year.

Our favorite way to sharpen a blade is to use a whetstone—a rectangular block that works almost like sandpaper, helping to straighten and refine the cutting edge on the blade as you slide the knife across it. Most whetstones are designed to be soaked in water before every use, so check the manufacturer's instructions to be sure. (Fun fact: Whetstones aren't actually named for the fact that most are used wet—"whet" is actually just an old word for "sharpen").
