You might not need to spend hundreds of pounds to get the best knife sharpener, but you do need to know what you're doing. Warner gave me a crash course in the technique. As a newbie to this method, it took a while to get used to (especially since Warner handed me a knife that had never previously been sharpened) but after half an hour's practice and a little encouragement, I got the hang of it. Here's what I learned...
The speed and polishing ability of waterstones attract many sharpeners. Waterstones sharpen quickly and are available in fine polishing grits not found in other stone types. The ability to flatten the stones is a necessity when sharpening with waterstones, so a starting set should include a flattening stone of some kind. Manual sharpeners fall into two basic categories: those that use a V-shaped cutting notch, often made of ultrahard tungsten carbide, to carve a new edge onto a blade, and those that use fixed or rotating abrasive elements (either an abrasive ceramic or diamond-impregnated steel) to grind a new edge. In general you get what you pay for with both kinds. Cheap models under $20 get a lot of complaints about sharpening performance, ergonomics, and durability. Move into the $40 to $50 range, and you begin to see more solid results. The cheap V-notch sharpeners, in particular, get terrible marks from most knowledgeable reviewers; such models remove huge amounts of metal, rapidly wearing knives into toothpicks, and they leave uneven edges that cut poorly and dull quickly. (I used one of these for about a week in the ranch kitchen and can attest to their awfulness.) However, as you’ll see below, when done right a V-notch sharpener is an attractive option.
Our favorite way to sharpen a blade is to use a whetstone—a rectangular block that works almost like sandpaper, helping to straighten and refine the cutting edge on the blade as you slide the knife across it. Most whetstones are designed to be soaked in water before every use, so check the manufacturer's instructions to be sure. (Fun fact: Whetstones aren't actually named for the fact that most are used wet—"whet" is actually just an old word for "sharpen").
The basic concept of sharpening is simple – you're using an abrasive edge to remove metal – but the knife you buy may alter the method you should use. A general rule of thumb is that a waterstone can be used for both Japanese- and Western-style blades, but you should avoid pull-through sharpeners for Japanese knives (or any knife with very brittle blades).

Visually, a very sharp knife has an edge that is too small to see with the eye; it may even be hard or impossible to focus in a microscope. The shape near the edge can be highlighted by rotating the knife and watching changes in reflection. Nicks and rolled edges can also be seen, as the rolled edge provides a reflective surface, while a properly straightened edge will be invisible when viewed head-on.
For a more affordable version (around $50), our best buy is the Chef’s Choice 250 Diamond Knife Sharpener. There are many of its consumers whom converted from manual sharpener (steel or stone) to using this electric knife sharpener. And they’re glad they did! Some of them just thought that they may not be that good in using manual sharpeners because when they used the Chef’s Choice 250 electric knife sharpener, their kitchen knives are a lot sharper than they were. They also find this electric sharpener to be great for fixing very dull blades.

I purchased this set together with the 400/1000 grit stone assuming that some of my knives were quite dull and would need work on a coarse grit stone. Premium Whetstone Sharpening Stone 2 Side Grit 400/1000 | Knife Sharpener Waterstone with NonSlip Rubber Base & Flattening Stone. This is my first wetstone. First off I tried to sharpen my Chicago Cutlery boning knife. This knife is nearly thirty years old, has been abused in may ways and was quite dull. It was very difficult for me to get a burr on this blade, which I attribute to poor technique. Next I moved on to my Henckels Professional S paring and chef's knives. The paring knife was moderately sharp and was modestly improved after working over all three grits of stone. It would cut paper but again it was difficult to develop a burr with this blade. Undaunted I switched to the chef's knife. This knife is twenty years old and has never been professionally re-sharpened. I have sharpened it twice with a Lanksey sharpening system which marred the finish but did put a good edge on the blade. Lansky Standard Coarse Sharpening System with Fine Hones. The chef's knife was moderately dull and had several pits visible on the cutting surface. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Not sushi knife sharp but more than enough for the chopping and slicing I expect of it. I'm looking forward to going back and working both the boning knife and the paring knife over again. Don't expect a good result from this product the first time you use it. Watch videos on using a wetstone, expect to spend at least twenty minutes per knife at first, and practice forming a burr. If you can form a burr, you will be able to successfully sharpen your knife.
Historically, there are three broad grades of Japanese sharpening stones: the ara-to, or "rough stone", the naka-to or "middle/medium stone" and the shiage-to or "finishing stone". There is a fourth type of stone, the nagura, which is not used directly. Rather, it is used to form a cutting slurry on the shiage-to, which is often too hard to create the necessary slurry. Converting these names to absolute grit size is difficult as the classes are broad and natural stones have no inherent "grit number". As an indication, ara-to is probably (using a non-Japanese system of grading grit size) 500–1000 grit. The naka-to is probably 3000–5000 grit and the shiage-to is likely 7000–10000 grit. Current synthetic grit values range from extremely coarse, such as 120 grit, through extremely fine, such as 30,000 grit (less than half a micrometer abrasive particle size).
I enjoy these stones so much that the feedback is not a deterrent at all for me, I don’t even think about it. The results are always nothing but top notch, they deliver exactly what I want, some of the sharpest knives I have ever produced were sharpened on Shapton Glass stones. They may be thinner but they last a very long time, they are easy to maintain as well,
The most important aspect of a sharpening stone is the grit. If you have knives that have taken a beating and are either nicked up or really dull, you’ll need a courser stone to get it back into shape. And in order to put an exceptionally sharp edge on an already sharp knife, you’ll need a finer grit stone. If your knives are already in pretty good shape and just need a touch up, buying just a finer grit stone might be enough, but don’t think you can get away without a courser stone for knives that need more TLC. It is possible to buy a combination, or two-sided sharpening stone.
Though "whetstone" is often mistaken as a reference to the water sometimes used to lubricate such stones, the term is based on the word "whet", which means to sharpen a blade, not on the word "wet". The verb nowadays usually used to describe the process of using a sharpening stone is to sharpen, but the older term to whet is still sometimes used. The term to stone is so rare in this sense that it is no longer mentioned in for example the Oxford Living Dictionaries. One of the most common mistaken idioms in English involves the phrase "to whet your appetite", too often mistakenly written as "to wet". But to "whet" quite appropriately means "to sharpen" one's appetite, not to douse it with water.
If you’re sharpening high quality knives, you probably don’t want to use a cheapo sharpening stone. But if you’re just getting started with sharpening your pocket knife, there’s no need to get too fancy right off the bat. You can find a sharpening stone at most hardware stores for about $10. This one is very similar to the one I use. Nothing fancy. Most basic sharpening stones come with two sides: a rough grit and a fine grit. The finer the grit, the finer or sharper you can get your blade. You usually start off sharpening on the rough grit and then finish sharpening it on the finer grit.

Manual sharpeners are, in my opinion, the best way to sharpen your knives. They are my personal favorite, because they allow you to sharpen your blades with precision. Unlike electric sharpeners which can take off layers of steel so quickly you barely see it happen, you maintain control over the sharpening process with a manual sharpener. You can put one pass through, then check your edge. You can do another pass or two, then check it again.
Unfortunately, this sharpener is not meant for use with serrated blades, unlike some of the others on this list. Also unfortunate is the fact that I was unable to find any record of the angle degree to which it will sharpen a blade. However, consumers have been very happy with its performance and estimate the angle to be somewhere around 16 to 18 degrees.
1. Start off with the rough grit. If you have a particularly dull blade, start off with the rough grit side of your sharpening stone. How do you tell which side is the rough grit? Sometimes you can tell by sight. If you can’t do that, do a thumbnail test. Scratch the surface with your thumbnail and whichever side feels rougher, that’s the side you want to start off with. Also, rough grits tend to be more porous than finer grits. So if you put water on one side and the stone really drinks it up, chances are it’s the rough grit.
We get asked regularly to recommend stones for the beginning sharpener. Everyone wants to get stones that will be of the most practical use. No one wants to waste money on something they will have to replace later. The goal is to get stones that can be used as a foundation for your future needs. But the number of options available can be bewildering to the inexperienced sharpener, leaving many wondering where to start.
You've likely seen someone using a honing rod to "sharpen" a knife. But the steel rod doesn't actually sharpen your knife—it just straightens out the cutting edge on the blade to allow for smoother, safer cuts. Sharpening your knife, on the other hand, actually, well, sharpens it. So yes, you need to do both. Hone your knife weekly—every time you use your knife, if you'd like—and sharpen your knife every few months, or at least every year (depending on how often you use it, and how soon you notice dulling that honing doesn't really improve).
1. Diamond Stones. I’ve used two, many years ago, to sharpen steel knives & found that the diamond coating wore away. They did work well at first, but then I was sharpening on the backing material. This puzzled me, because diamond is harder than steel, but have only recently read that the diamond particles are torn off the backing material because they stick to the softer steel.
