Consumers have stated that a lot of metal is removed from the blade if you use all three stages. Usually, however, it is completely unnecessary to use all three stages. Most of the time you can easily get away with only using the fine grit and the honing discs to sharpen your knives. You can even use the honing discs on their own to keep your blades straight. The first stage (the rough grit) will only be necessary for sharpening extremely dull or damaged blades. Upon completing this stage, you will often find that you can skip right over to honing.

To take off the fine scratches and the burr left by coarser stones, and polish the surface, one can use stones starting around 2000 grain. Above that there is theoretically no upper limit, but at the same time stones above about #10000 provide no measurable practical improvement in the edge. It is also interesting to note that above #8000 grit, there is no Japanese measurement standard. With all the stones labelled as having a finer grit, one simply has to take the manufacturer’s word for it.
A sharpening stone is made of particles of abrasive material that are sintered or bonded together. The blade is moved across the stone and the steel is worn away, which creates the edge. However, at the same time, the stone is also worn away to reveal new, coarse particles. As a general rule, the softer the stone, the more rapidly it will wear and will be more aggressive in use. Harder stones don’t wear as quickly.

The paper test - Remove your knife from the sharpener. Grab a piece of notebook paper and hold it vertically in your hand so that one edge is facing straight up. Now take the knife and push it down against this edge. If the blade cuts through without hesitation it’s sharp. If the paper simply crumples beneath the blade instead of cutting the blade needs a bit more work.
As the video of our test shows, the Trizor XV took a very dull, very heavy (and slightly bent) 12-inch Wüsthof chef’s knife and made it tomato-slicing sharp. Starting at the tip, glide the blade up and down the stone – around five strokes up and down is a good number. Then move to the middle – five more strokes. Water stones can also be made out of natural or synthetic materials and they are fast becoming the most popular type of whetstone as they only require the use of water to lubricate the stone. The goal in sharpening a serration is to maintain the ramp of the serration right to the edge. You do not want to create an edge bevel. Therefore we once again recommend the trusty felt pen trick. The correct use of pressure enables us to form a burr, remove the burr and then do some coarse stone refinement and thus create a very sharp knife. Different knives are sharpened differently according to grind (edge geometry) and application. For example, surgical scalpels are extremely sharp but fragile, and are generally disposed of, rather than sharpened, after use. Straight razors used for shaving must cut with minimal pressure, and thus must be very sharp with a small angle and often a hollow grind. Typically these are stropped daily or more often. The shape near the edge can be highlighted by rotating the knife and watching changes in reflection. Nicks and rolled edges can also be seen, as the rolled edge provides a reflective surface, while a properly straightened edge will be invisible when viewed head-on.

I liked the idea of three sharpener adjusting to different angles on the blades. However the reality is that when you drag your knife thru the sharpener the little carbide blades pop out of the sharpener. Once this happens they will NO longer stay in place. This happened to 2 different units. The first one I sent back. The second one i threw away. I recommend you AVOID this sharpener, its junk.
