The blades of Sugimoto Hamono Japanese knives are tempered using the traditional mizu-yaki process which gives the metal a harder finish compared with Western knives. As a result, if you sharpen the cutting blade so that it becomes too thin, it will not be able to maintain its mechanical strength and may chip. In addition, you need to use a flat-surface whetstone to back-grind a Japanese knife. Be careful not to over-grind the blade. Blades made using the hon-kasumi method consist of two different layers of metal that are forge-welded together. Since the blade is composed of two layers, it may slightly bend over time, but this can be corrected at our Company. Single-beveled-blade knives cut with the back side of their blade. Please take particular care that this back side does not become rusty.

Just to prove that we're not merely sharpening geeks, here's an interesting side note. The word whet pops up in some unexpected places. A small species of owl is called the saw-whet owl because the sound it makes reminded people of the sound made when sharpening a saw with a file. And the phrase "to whet your appetite" comes from the idea of your hunger growing sharper at the thought of food.
Japanese water stones – both natural and synthetic – are known for their superior sharpening performance, not only for Japanese tools, but also on their Western equivalents. The loosely bonded abrasive grit is washed out very quickly, as it blunts during the sharpening process; this exposes new, sharp, particles that can get to work on the blade. Water stones are lubricated only with water! Never use oil!

Before you start sharpening, soak the stone in water for around five to 10 minutes, until it absorbs the water and a liquid film appears on the surface. After soaking, splash some water on top, and re-splash during the process if it ever gets too dry. You'll get a dark, splotch of steel and stone building up on the stone while you're sharpening the blade. This is totally normal so just splash the stone with some water to clean it off and allow it to perform more efficiently. 
Shapton Glass 320, 500, 1,000, 2,000 and 16,000. I have the 4,000, and 8,000, they are absolutely fine, great in fact but I just don’t use them as much as the others. These stones excel on knives made of hard steel, the hardest steel is no match for these. This does not mean you can’t sharpen hard knives on the Naniwa brand of course, you can. I have been using this particular brand of stone for many years and I absolutely love them.

Honing steels are another story altogether. Honing steels are those instruments that look light a saber (light or otherwise) which you use to gussy up the edge of the blade periodically before using it. These do wear out every few years or less, depending on how often you use them. If you are unsure whether your honing steel is worn out run your finger around it. If it feels smooth all the way around then it’s time for a replacement. Not to worry though, they’re really affordable. One thing you may want to keep in mind about honing steels is that they typically won’t do much to hone the edge of some super hard knives, such as Japanese Global brand knives.
Let's begin by sharpening the knife from the front side. Western knives are not evenly double-beveled. The ratio for sharpening them is 80% on the front side and 20% on the back side of the blade. (The angle of the blade to the sharpening stone surface is about 10 degrees.) All knives are sharpened from the cutting edge to the spine of the blade. You hold the handle with your right hand, push down on the side of the blade with the fingers of your left hand, and sharpen by moving the blade toward the center of the stone.
Three other positives to the Brød & Taylor: First, you can use it to sharpen serrated blades by tilting the blade in the horizontal plane so that only one carbide (generally the one on the right, given how the edges of most serrated blades are ground) contacts the metal. Second, it’s ambidextrous, because lefties simply have to turn it around to engage their dominant hand. And third, unique among our test models, it can sharpen blades all the way to the heel, because the left- and right-hand carbides meet at a single point. (The ⅜ inch of the blade that our Chef’sChoice picks leave unsharpened at the heel is largely ignorable, but praise where praise is due.)
Our test of the Brød & Taylor turned a dull blade into one that effortlessly and cleanly sliced both tomatoes and paper. Due to the reputation of V-notch carbide sharpeners, however, I was concerned about the durability of the edge, so I did an additional test: I used the Brød & Taylor to sharpen my old pocketknife, which uses 440C steel, one of the earliest knife-worthy stainless alloys and one that more refined alloys have since surpassed. I then made 50 slices through a cardboard box, rehoned and repolished the knife (but did not resharpen it), and made 50 more slices. After all that, I was still able to slice a tomato and peel an apple without problem. That’s impressive: Cardboard is so tough on blade edges that knifesmiths use it as a kind of stress test.
In terms of feedback, in the eyes, and in the hands of many sharpeners, the feedback on this particular brand of stones is not to their liking and often it is enough to stop them from using them. These are thinner than other stones as well so you may get the impression that you are not getting your moneys worth. They are very hard stones, there is no soft, creamy sensation as you sharpen, there is not much feedback at all in fact.

Stone: With a sharpening stone, you'll drag the blade of the knife across the rough surface of the stone. Sharpening stones consist of a number of types of material, such as diamond stones, oil stones (also called Arkansas stones), water stones (or aluminum oxide stones), and ceramic stones. Yes, the diamond stone actually contains tiny fragments of diamonds, but it's a little heavy to wear as an earring. The trick with a sharpening stone becomes applying the right amount of pressure and sharpening at the proper angle because using a sharpening stone requires a completely manual process with no guide slots. However, stones can sharpen many tools, including scissors and chisels.

Unfortunately, the fibrox handle is not non-slip or soft-grip, but it is ergonomically shaped and has been textured to reduce the likelihood of slippage. The handle also features an attached metal hoop so that you can easily hang this rod on a hook on the wall for easy access and to keep it out of the drawer, where it would probably get bumped around and scratched up.

One of the most well-regarded natural whetstones is the yellow-gray "Belgian Coticule", which has been legendary for the edge it can give to blades since Roman times, and has been quarried for centuries from the Ardennes. The slightly coarser and more plentiful "Belgian Blue" whetstone is found naturally with the yellow coticule in adjacent strata; hence two-sided whetstones are available, with a naturally occurring seam between the yellow and blue layers. These are highly prized for their natural elegance and beauty, and for providing both a fast-cutting surface for establishing a bevel and a finer surface for refining it. Knife sharpeners need to be able to create an exact angle on the knife's edge. American and European knife blades use a 20-degree angle out of the factory, as Chef's Choice explains, while Asian knife blades use a 15-degree angle. If you do not remove enough metal to create a new edge, you will leave some of the dull edge in place.
