A sharpening stone is made of particles of abrasive material that are sintered or bonded together. The blade is moved across the stone and the steel is worn away, which creates the edge. However, at the same time, the stone is also worn away to reveal new, coarse particles. As a general rule, the softer the stone, the more rapidly it will wear and will be more aggressive in use. Harder stones don’t wear as quickly.
1. Start off with the rough grit. If you have a particularly dull blade, start off with the rough grit side of your sharpening stone. How do you tell which side is the rough grit? Sometimes you can tell by sight. If you can’t do that, do a thumbnail test. Scratch the surface with your thumbnail and whichever side feels rougher, that’s the side you want to start off with. Also, rough grits tend to be more porous than finer grits. So if you put water on one side and the stone really drinks it up, chances are it’s the rough grit.

Unfortunately, this sharpener is not meant for use with serrated blades, unlike some of the others on this list. Also unfortunate is the fact that I was unable to find any record of the angle degree to which it will sharpen a blade. However, consumers have been very happy with its performance and estimate the angle to be somewhere around 16 to 18 degrees.

It takes time to sharpen a knife correctly. I spent about 30 minutes on an already fairly sharp knife. I then spent two more sessions of about 10 to 15 minutes each. I took it a bit further with a 6000 grit stone and this puts a nice polish on it. Instead of cutting through an onion, it glides or slips through it. It was truly shocking to me to use a really sharp knife. It may take a bit of time to get it right the first time, since this was my first time with a water stone, but it was well worth the effort. Chefs and meat cutters frequently pause and “steel” their cutting edges. Steeling doesn’t sharpen an edge; it straightens it. That’s necessary because the thin edge actually bends or warps while you’re cutting. If you could see the edge under a microscope, it would look wavy, and it would feel dull while cutting. Steeling the knife straightens out all those waves to restore a straight, even cutting edge. So when your knife begins to seem dull, don’t sharpen it—steel it first. Every time you grab a knife for the first time to begin cutting, steel it before you even get started. But it’s important to do it right or you’ll just make the edge worse. And don’t act like one of the Iron Chefs on TV and do it all up in the air—you’ll eventually wind up in the ER. Rest the end of the steel on a cutting board and do your steeling the safer and more accurate way. It’s very important that you steel at an angle between 20 and 30 degrees. Just to prove that we're not merely sharpening geeks, here's an interesting side note. The word whet pops up in some unexpected places. A small species of owl is called the saw-whet owl because the sound it makes reminded people of the sound made when sharpening a saw with a file. And the phrase "to whet your appetite" comes from the idea of your hunger growing sharper at the thought of food.
Functionality – If you have experience with the stick or sharpening stone you likely don’t want or need anything else. If, however, you are in search of an electric-powered sharpener you’ll want to consider how many “stages” you need in your sharpener. In a typical 3-stage sharpener the first stage is the coarsest and does most of the heavy lifting required to turn the edge from dull to sharp. The second stage will have finer grain sharpening wheels. These are used to hone the edge, that is, to smooth out the burrs left by the coarse first stage. A third stage will refine the edge even further and remove any debris left over from the sharpening process.

I recommend users to learn how to properly sharpen the knife. It took me about 30 minutes to sharpen a single knife to what it is today. The knife gets really sharp. Also, with use, the surface gets uneven. I recommend you draw a grid in pencil and then file using the grinder stone until the grids disappear. This ensures the surface remains flat during all use.

The Presto EverSharp 08800 electric knife sharpener gets great reviews. In our test, though, its flimsy motor instantly bogged down when our knife contacted its sharpening wheels—and even light pressure threatened to stop the the sharpening wheels entirely. The high, wide guide frames meant it couldn’t sharpen the last ¾ inch of a blade, an unacceptable shortcoming. We’ll take our experience over the reviews.

In our tests, the Chef’sChoice ProntoPro 4643 took seriously dull blades—we ran them against a chunk of concrete curbstone until they were all but useless—to tomato-filleting sharpness in less than a minute. And like all our picks here, it’s far easier to master, and far cheaper, than traditional sharpening stones or modern jig systems. Effective, affordable, simple to use, and easy to store, the ProntoPro 4643 is the clear winner for most people.
Okay, that’s not the only reason. This particular rod has received substantially more positive consumer reviews than all of the others. I suppose that the majority of people agree with me, then. It is difficult to turn down a rod which outperforms the others, though. This Wusthof rod has been specially designed to not only straighten your blade but also to give it a quick sand to keep it sharp for even longer than the typical honing rod.
Item arrived on time and in good working order. I got this as a gift for a friend that has a high end set of kitchen knives and needs a simple way to sharpen them. Slight learning curve but worth it in the end. The item is actually Japanese, with almost no English on it and everything written in Kanji. Watch some youtube videos on how to use this dual sided stone. I got the item on sale and it was a bargain, excellent value for the money. I highly recommend this product.

this is the first stone I bought. The price is right. Though it wears really quick. I would say buy a king brand stone. They are a little more but will last so much longer. The other problem is the stone wears at a strange angle which makes you constantly fix it. Also with the rust remover glued to the side if you don't remove it before fixing the stone will be slanted. Buy a king.
Joe suggests either of two choices for a sharpener: a V-sharpener or, if you’re a more serious cutler, a stick sharpener. Each has two sharpening surfaces, one for roughing out an edge and the other for the final edge. Both styles are easy to use for those learning how to sharpen a knife. But the stick sharpener will probably last your entire life. And with that style you’ll look pretty impressive when your guests watch you sharpen your knife before carving up the roast.
A honing rod is the best and easiest way to maintain a knife’s edge between sharpenings, and among the nine models we tested (five steel, four ceramic), the Idahone stood out for its exceptionally smooth surface, which was gentler on the blades than the other rods. An extremely well written and informative article on sharpening. Overtime we all get to love certain stones for our sharpening needs. I am a huge coticule fan, and although i have used all the others, i always come back to this natural stone above all others. Still trying to figure if i chose it or it chose me! NEver the less there are so many options out there it is not hard with a little time and effort to find the right combination for your needs.

TO USE: Soak stone in water for no more than 5-10 minutes. Place stone on a damp cloth with the courser 400 grit side (dark green) facing up. Hold the knife so that it’s flat and perpendicular to the block, with the blade facing left. Holding the knife at a 20-degree angle, slowly sweep the edge of the blade from left to right down the length of the stone and continue until sharp. If stone starts to feel too dry, add more water. Be patient and take your time. Flip knife over and repeat on the other side (now moving from right to left). Be sure to sharpen both sides evenly. To polish the blade further, flip stone over to the fine 1000 grit side (light green) and repeat the process. When blade is honed to desired sharpness, wash and dry your knife. To clean your stone, simply rinse with water, wipe away any remaining metal residue with a rag, rinse again, then dry.
