When I set out to look for the Best Electric Knife Sharpener, I told myself that I needed to find one which would make someone’s life easier. When a whetstone is used to cut metal, it acts like sandpaper by removing small particles of metal (aka “swarf”) with each pass of the blade over the stone. If you follow Joe’s instructions and still can’t get a good edge, chances are your knives have been abused to the point that they need a pro’s touch to restore the edge. You can do it yourself, but it takes expensive electric tools or a lot of tricky manual grinding on a stone. But for well under $10 per knife, a sharpening shop can bring your edges to better-than-new condition. Then you’ll be able to keep them that way using Joe’s techniques. Search online for “knife sharpening” followed by your city and you’ll surely find a local sharpener. And don’t give up on high-quality knives that have a chip or notch in the blade. A pro can grind out any imperfections and reshape the edge. Yes, you’ll have a slightly narrower blade, but you won’t even notice.
Honing steels are another story altogether. Honing steels are those instruments that look light a saber (light or otherwise) which you use to gussy up the edge of the blade periodically before using it. These do wear out every few years or less, depending on how often you use them. If you are unsure whether your honing steel is worn out run your finger around it. If it feels smooth all the way around then it’s time for a replacement. Not to worry though, they’re really affordable. One thing you may want to keep in mind about honing steels is that they typically won’t do much to hone the edge of some super hard knives, such as Japanese Global brand knives.

Now turn the knife so that the blade is no longer pointing towards your body. Continue to maintain the angle of 10 – 20 degrees and the gap of approx. 5 mm from the back of the blade to the sharpening stone. Slide the cutting edge up and down over the sharpening stone. Grind both sides of the blade alternately, around five to ten times on each side.
Now move the blade – with a little pressure – in regular strokes up and down across the sharpening stone. Always maintain the angle between the blade and the stone. You will notice a burr becomes visible after five or so strokes. Mentally divide the blade into three parts if the knife has a large blade. Always start with the tip and work back towards the bolster.
Some experts recommend sharpening as if trying to slice a thin layer or decal off the stone. Don't consider doing this without significant experience: it is typically bad advice; most people don't hold the correct angle this way. You instinctively raise the blade until you feel and see the edge working. This creates larger edge angles and thicker bevels as time goes on and the results gradually deteriorate. The more you sharpen, the duller it gets. Sound familiar?

You are basically taking something that is blunt and thinning it back down. You have to remove all of this extra metal and get it back down to where it is thin enough to cut. Very simply, all a knife is is a very thin piece of steel to split whatever you are cutting. If the knife is obviously thicker, it is like trying to cut something with a chisel; it is not going to happen.

Turning my mind away from the fancy advertising gimmicks which had lured me to the sharpener that I almost selected for this position, I began looking closer at consumer ratings and reviews. Clamp-style sharpening tools use a clamp with several holes with predefined angles. The stone is mounted on a rod and is pulled through these holes, so that the angle remains consistent. Another system is the crock stick setup, where two sticks are put into a plastic or wooden base to form a V shape. When the knife is pulled up the V, the angle is held so long as the blade is held perpendicular to the base. Several cutlery manufacturers now offer electric knife sharpeners with multiple stages with at least one grinding stage. These electric sharpeners are typically used in the kitchen but have the ability to sharpen blades such as pocket or tactical knives. The main benefit of using an electric sharpener is speed with many models that can complete the sharpening process in one to two minutes. The disadvantage is that the sharpening angle is fixed so some specialized knives, like a Japanese style Santoku, may need additional attention to sharpen to the ideal angle.
I give Sharp Pebble a top rating for two reasons. First, the company emailed a user guide for me to review and learn how to best use its product while it was being shipped to me. Wonderfully proactive. Second, the sharpening stone did a terrific job restoring the edge on my kitchen knives that had been woefully neglected. Ever rent a house and every knife in the kitchen has the edge of a butter knife? I was almost there. Now, the knives are cutting beautifully. I have only one suggestion for Sharp Pebble. While the stone includes a useful angle guide that can be attached to a blade and the guide gives clear steps on prepping the stone and how to hold the blade when sharpening, it does not illustrate the manner in which the blade needs to be moved across the stone. I had to go to Youtube to get some tips on the exact method. I have historically been very bad at putting an edge on a blade due to ignorance primarily. But with the help of the video and a good stone, I did an effective job. The base does a great job of holding the stone in place and is attractive in the kitchen.
If I am to be completely honest, I must tell you that I actually came extremely close to selecting another manual sharpener for this position. I thought it looked wonderful. It had all the specifications I would hope for in a manual knife sharpener and then some. It boasted the ability to sharpen at two different angles (15 degrees and 20 degrees) and included a honing feature. It looked solidly built. It used diamonds to grind the blades down. It sounded perfect and I almost selected it, until I read the consumer reviews. The consumer reviews for that apparently perfect manual knife sharpener were abysmal.
Diamond whetstones, like the DMT Diamond Whetstone, are made out of industrial type diamonds which create a long-lasting hard, coarse and flat surface. A diamond whetstone is an excellent choice for when you are outdoors as you can use it dry or with a lubricant. It can take some time getting used to and the larger sized stone may not be ideal for working with small knives or cutting tools.
Knife sharpeners need to be able to create an exact angle on the knife's edge. It’s up to you if you want to use a sharpening steel or a handheld knife sharpener for honing your knives. The handheld is really easy to use. For fast, effective sharpening, simply place the blade in the slot and gently pull it through a few times. If you want to use a sharpening steel, just make sure it has a higher hardness factor than the knife to be sharpened. One more important thing: don’t ever hone serrated knives. They must be sharpened by a professional or replaced. Period.
A: For many years there was a heated debate around this topic with manufacturer’s stating flatly the notion their products actually damaged knives was absurd, and many professional chefs claiming not only was it not absurd, it was common for mechanical sharpeners to damage expensive cutlery. So who was right? To a certain extent they both were. The manufacturers were correct in asserting that if you followed the instructions to the letter there was little if any chance your knives would be damaged. However, in reality few people actually followed the instructions to the letter and when they veered from the recommended course the potential was there for damage.
