People often describe the Trizor XV as putting a 15-degree edge on a blade, but the reality is a bit more complex. It in fact produces what Chef’sChoice calls a Gothic Arch Edge, which consists of three distinct bevels, the final one at 15 degrees. Not surprisingly, the company claims that this “blade architecture” is more durable than a single bevel. More convincingly, the testers at Cook’s Illustrated and America’s Test Kitchen use the Trizor XV on all their knives and actually convert 20-degree knives to the Gothic Arch Edge. (Europe’s medieval cathedrals, too, attest to the strength and durability of the Gothic-arch form.)
Modern synthetic stones are generally of equal quality to natural stones, and are often considered superior in sharpening performance due to consistency of particle size and control over the properties of the stones. For example, the proportional content of abrasive particles as opposed to base or "binder" materials can be controlled to make the stone cut faster or slower, as desired.[7] Natural stones are often prized for their natural beauty as stones and their rarity, adding value as collectors' items. Furthermore, each natural stone is different, and there are rare natural stones that contain abrasive particles in grit sizes finer than are currently available in artificial stones.[citation needed]
The blades of Sugimoto Hamono Japanese knives are tempered using the traditional mizu-yaki process which gives the metal a harder finish compared with Western knives. As a result, if you sharpen the cutting blade so that it becomes too thin, it will not be able to maintain its mechanical strength and may chip. In addition, you need to use a flat-surface whetstone to back-grind a Japanese knife. Be careful not to over-grind the blade. Blades made using the hon-kasumi method consist of two different layers of metal that are forge-welded together. Since the blade is composed of two layers, it may slightly bend over time, but this can be corrected at our Company. Single-beveled-blade knives cut with the back side of their blade. Please take particular care that this back side does not become rusty.

A sharpening stone is made of particles of abrasive material that are sintered or bonded together. The blade is moved across the stone and the steel is worn away, which creates the edge. However, at the same time, the stone is also worn away to reveal new, coarse particles. As a general rule, the softer the stone, the more rapidly it will wear and will be more aggressive in use. Harder stones don’t wear as quickly.


Let's begin by sharpening the knife from the front side. Western knives are not evenly double-beveled. The ratio for sharpening them is 80% on the front side and 20% on the back side of the blade. (The angle of the blade to the sharpening stone surface is about 10 degrees.) All knives are sharpened from the cutting edge to the spine of the blade. I can personally verify that this will get your knives very sharp. I will spare you all the gory details, but the picture is of the instructions the ER sent me home with after stopping the bleeding and patching me up. I have to say, that’s not what I had in mind regarding “Thanksgiving tips”. So: not only will knives slide easily through spinach, but they will go through finger and fingernail like a hot knife through butter after being sharpened by this whetstone. Very clean, straight cut. Impressive, really. Just take it slow and don’t be a moron like me.
Water stones can also be made out of natural or synthetic materials and they are fast becoming the most popular type of whetstone as they only require the use of water to lubricate the stone. They are not as messy to work with as an oil stone and deliver fast sharpening results but for even better results, soak the stone in water for 5 or 10 minutes.

As you probably have guessed, knives are easier to sharpen on longer stones. The width of the stone is less important than the length when sharpening knives. The longer stone allows for longer sharpening strokes and contributes to faster sharpening. The longer strokes mean fewer strokes across your stone, making it easier to maintain a consistent sharpening angle. As a rule of thumb, a small knife can easily be sharpened on a large stone, but a large knife cannot easily be sharpened on a small stone.
For this type of hand held manual sharpener the 463 does an extraordinary job thanks mostly to the diamond abrasive wheels. You get an edge that’s both razor sharp and burr-free, as if you spent an hour working the edge on an oil stone. If people make a mistake with the 463 it’s that they assume more pressure is needed than actually is. Keep in mind though that it really shines on serrated and straight edged, double bevel Asian-style knives.
A common myth is that sharpening steels actually sharpen knives, and can replace stones or other sharpening devices. Steels actually hone a knife and help keep its edge if used regularly. A steel should be used before and after each knife use for proper maintenance. Easily enough, it's used the same way you use a sharpening stone. To find the proper angle, hold the knife horizontally with the edge touching the steel. Move the spine upward to create a 45-degree angle, and then half that again for your optimal sharpening angle.
4. Start sharpening the first side of the blade. With your blade set at the prefect angle, you’re ready to start sharpening. Imagine you’re carving off a slim piece of the stone’s surface. Personally, I bring the blade into the stone. Other people stroke the blade away from the stone. Both ways work, so just use whatever technique you prefer. If the knife blade is curved or if it’s longer than the stone, you’ll need to sweep the blade sideways as you work, so the entire edge is sharpened evenly. Apply moderate pressure as you sharpen. No need to bear down hard on the blade. After you make one stroke, start back at the beginning and repeat. Do this about 6-12 times.

The Brød & Taylor Pocket Knife Sharpener (which is no longer available) uses the same carbide stones as the full-size model noted above, and it sharpens and hones just as well. It would make a solid, pocketable tool for campers, hunters, and anglers. I liked the idea of three sharpener adjusting to different angles on the blades. However the reality is that when you drag your knife thru the sharpener the little carbide blades pop out of the sharpener. Once this happens they will NO longer stay in place. This happened to 2 different units. The first one I sent back. The second one i threw away. I recommend you AVOID this sharpener, its junk.


If you have the time to commit to a block sharpener, this two-sided King stone should manage to meet your needs. Of those consumers who actually knew how to use this type of sharpener and those who took the time to learn how to use it, the overall consensus was that it is worth its fairly average price. Consumers were most impressed with how well this stone worked when it was wet, but noted that it is also rather useful when dry.


Ye olde tomato test - After you have sharpened using one of the above sharpeners grab a firm tomato and try to slice it. If the blade is properly sharpened it will slice through the skin with virtually no effort and without pushing the skin inward first. If the skin is able to fight back against the blade then your knives are not properly sharpened yet.
I am just starting out sharpening with whet stones. I have found these stones to be very nice and the instructional videos that come along with the set on knifeplanet are extremely helpful to anyone starting out. The cost of the set was very reasonable and seems to be a great value. Whetstone has two different sides of grain for sharpening and polishing knife edges. These softer Japanese stones have several advantages over harder stones. Because they are softer, they do not become glazed or loaded with detritus. Plus, they are lubricated effectively with water rather than oil, but can be used with either. Submerge the stone in water for about 5 - 10 minutes. Continue to apply water while sharpening with the Whetstone Cutlery Two sided Whetstone Sharpening Stone. The stone releases small particles during the sharpening process; this powder in combination with water allows the sharpening. After a while you will notice a small burr at the edge. Now repeat the same process on the other side of the blade. Finally, turn the stone over and repeat the procedure, this time using the finer grit of the stone. In order to remove the remaining burr, pull the blade at an angle over the stone. Rinse the stone and clean off the grinding residue. Clean your knife with hot water.
