The DuoSharp Plus stones are nicely sized at 8” long by 2 5/8” wide and have two grits on each stone to maximize value. The Plus in the name refers to an area of continuous grit in the otherwise interrupted grit surface of the stone. This area is for sharpening edges with fine points that might be difficult on the interrupted surface. A coarse/fine DuoSharp Plus stone is a good single stone to start a sharpening toolkit.

If your whetstone needs to be soaked, submerge it in water until it's completely saturated and there are no bubbles coming out of it, 5 to10 minutes. To use it, hold the knife at a 20-degree angle against the whetstone, and gently drag each side of the knife against it a few times. Most whetstones have both a "coarse-grind side" and a "fine-grind side"—start with the coarse side if your knife is especially dull, then repeat the process on the fine-grind side.
Begin by sharpening the knife from the front side. Sharpening is completed when the knife has an even burr. Only use a flat-surfaced stone to finish the back surface of the blade. Sharpen the blade from the edge to the spine. Do not sharpen at too great an angle between the blade and the stone. The stone used to finish the cutting edge of the blade should contact the edge evenly.

If no metal is being removed from the edge of the blade, it’s considered honing. Whereas if metal is being removed from the blade edge this is considered sharpening. Certainly, even honing will result in some microscopic amounts of metal being removed from the blade edge but not enough to be visible to the human eye, so the above definition is basically a solid one.
Cerax and Suehiro stones from Suehiro are a little harder, and as such do not wear down as quickly as the classic Japanese water stones. The 8000 grit stone will perhaps give you the best cutting edge with a mirror polish on chisels and similar blades. Suehiro also makes a small combination stone for those who do not sharpen tools all that often and are reluctant to spend extra for a Cerax stone.
A common myth is that sharpening steels actually sharpen knives, and can replace stones or other sharpening devices. Steels actually hone a knife and help keep its edge if used regularly. A steel should be used before and after each knife use for proper maintenance. Easily enough, it's used the same way you use a sharpening stone. I have this one and the axe/machete version as well. These are great sharpeners that make very short work of getting blades sharp. They take off quite a lot of material and are quite different than most other stone sharpeners I have used in the past, so I try to be conservative with my pressure as you see the chips fall when you pull the knife through. But, they absolutely work, and work very well. If you have a high use knife, this is a great way to keep it sharp and in service all the time. I use my large bushcraft knife a lot more now that I have this since I can sharpen it much faster and easier. I would not use this sharpener on precision instruments just because I prefer more control and try to preserve material on those types on knives. But, bottom line, I get more work done and much faster now that I have this.
For this type of hand held manual sharpener the 463 does an extraordinary job thanks mostly to the diamond abrasive wheels. You get an edge that’s both razor sharp and burr-free, as if you spent an hour working the edge on an oil stone. If people make a mistake with the 463 it’s that they assume more pressure is needed than actually is. Keep in mind though that it really shines on serrated and straight edged, double bevel Asian-style knives.
Truly meant for honing, this rod features deep grooves which extend the length of the rod. As you sweep your blade along these grooves they will gently work to pull its edge back into proper alignment, making it stronger, straighter and allowing it to stay sharp for longer. Consumers appear to be very happy with this rod’s performance and construction. Their reviews give off an overwhelming impression that this rod is reliable and gets the job done right (so long as you know how to use a honing rod).
Electric sharpeners use rotating ceramic or abrasive-impregnated metal wheels to grind a new edge into a blade. Low-end models, which start at about $25, feature a single set of coarse wheels that produce a rough, if potentially serviceable, edge—it depends on how even the edge is, and that’s a matter of overall design and engineering. Higher-end models can cost $200 or more (and professional models for slaughterhouses can approach $1,000), but they feature stronger motors and multiple grinding wheels—coarse, fine, and often polishing/honing—that when well-engineered can put an extremely keen, durable edge on knives of every style and quality.
I recommend keeping two stones in your kit. One with a medium grit (around 800 or so) to perform major sharpening jobs, and one with a fine grit (at least 2,000) to tune the edge to a razor-sharp finish. For real pros, a stone with an ultra-fine grit (8,000 and above) will leave a mirror-like finish on your blade, but most cooks won't notice the difference in terms of cutting ability.
The dual-sided whetstone is made from durable silicon carbide and has 400 grit on one side to sharpen the dullest blades and 1000 grit on the other side to create a nice smooth finish once the blade has been sharpened. The stone also forms a nice slurry that helps polish the blade for a superb shine. The stone is meant to be used with water, not oil and for best results, simply soak stone for 5-10 minutes before use, and lubricate with additional water as needed when sharpening.
To take off the fine scratches and burrs left by coarser stones, and to polish the surface, you can use stones starting at around 2000 grit. There is theoretically no upper limit, but stones above about 10000 grit achieve practically no measurable improvement in the edge. It is also interesting to note that above 8000 grit, there is no Japanese measurement standard. For stones labelled as having a finer grit, you simply have to take the manufacturer's word for it.

If you are a fan of matching your small appliances and gadgetry to your interior décor you will be quite pleased to hear that this sharpener is available in three different colors – black, lime green, and red. That being said, I don’t think it should be all that important, considering that this sharpener is so small it can easily be tossed in a drawer or backpack for safe keeping.
Functionality – If you have experience with the stick or sharpening stone you likely don’t want or need anything else. If, however, you are in search of an electric-powered sharpener you’ll want to consider how many “stages” you need in your sharpener. In a typical 3-stage sharpener the first stage is the coarsest and does most of the heavy lifting required to turn the edge from dull to sharp. The second stage will have finer grain sharpening wheels. These are used to hone the edge, that is, to smooth out the burrs left by the coarse first stage. A third stage will refine the edge even further and remove any debris left over from the sharpening process.
Whetstones may be natural or artificial stones. Artificial stones usually come in the form of a bonded abrasive composed of a ceramic such as silicon carbide (carborundum) or of aluminium oxide (corundum). Bonded abrasives provide a faster cutting action than natural stones. They are commonly available as a double-sided block with a coarse grit on one side and a fine grit on the other enabling one stone to satisfy the basic requirements of sharpening. Some shapes are designed for specific purposes such as sharpening scythes, drills or serrations.[9]

The first slot contains carbide blades which effortless shave your blade as you draw it through. The blades feature microscopic carbide particles which help them rough up the edges of the blade as it moves through to get an even deeper shave. The second sharpening slot contains two ceramic rods which work to hone your blade as you draw it through. They gently pull your blade into alignment and buff away the rough edge etched into it in the first stage. You can even choose to skip the first stage and use only the ceramic rods to hone your knife on a regular basis.


People often describe the Trizor XV as putting a 15-degree edge on a blade, but the reality is a bit more complex. It in fact produces what Chef’sChoice calls a Gothic Arch Edge, which consists of three distinct bevels, the final one at 15 degrees. Not surprisingly, the company claims that this “blade architecture” is more durable than a single bevel. More convincingly, the testers at Cook’s Illustrated and America’s Test Kitchen use the Trizor XV on all their knives and actually convert 20-degree knives to the Gothic Arch Edge. (Europe’s medieval cathedrals, too, attest to the strength and durability of the Gothic-arch form.)
By employing separate sharpening slots, the ProntoPro 4643 is capable of sharpening both older European-style knives (such as from Wüsthof and Henckels) and Japanese-style knives (such as from Mac—which makes our favorite chef’s knife—and Shun). The difference is in the angle of the bevel that forms the cutting edge: Traditional European knives have roughly 20-degree bevels, while Japanese knives have roughly 15-degree ones. If you own both types of knife, or if you do a lot of heavy work in the kitchen (like chopping up chicken carcasses), you’ll appreciate this feature, as a 20-degree bevel is best for tough jobs. Note, though, that Wüsthof and Henckels have stopped making 20-degree knives, having switched to 15-degree or 12-degree designs exclusively in 2011; the reason is that for all but the heaviest tasks, these more-acute bevels cut better and, with the ongoing improvements in steel alloys, hold their edges for just as long.

The stones from Shapton are probably the hardest of all Japanese sharpening stones. They will remain flat for a long time. They are therefore the best choice if you are looking for a relatively coarse stone that cuts quickly without having to be dressed repeatedly. The finer-grained stones also work very well. But Shapton stones do not provide the mirror finish you can achieve with softer stones.

American and European knife blades use a 20-degree angle out of the factory, as Chef's Choice explains, while Asian knife blades use a 15-degree angle. You can actually use these stones as finishing stones in their own right however and perhaps for Western knives which typically have a cutting edge similar to a ‘U’ rather than a ‘V’ shaped edge, a #5000 grit stone may well be as far as you need to go.but if you want to go for the #6000 or #8000 super fine stones then go for it! The only bit of advice you should follow is this: If you are using your knife to cut meat, then you can happily stop at #4000 or #6000 grit. If you are only using it for vegetables or fruit go all the way to the #8000. using an appropriate blade for the task – a thinner blade for more delicate work, and a thicker blade whenever a thinner blade is not required (e.g. a thinner blade might be used to cut fillets, butterfly steak or roast for stuffing, or perform Mukimono, while a thicker one might be used to slice or chop repeatedly, separate primal cuts of poultry or small game, or scrape and trim fat from meat or hide, as these actions would be more likely to cause unnecessary wear on a thinner blade.)
Once you’ve decided to start sharpening your kitchen knives with a sharpening stone, you’ll need to take the necessary steps to actually get going. These steps include finding and buying the best sharpening stone for use at home, learning the basic technique involved in doing the sharpening, and then practicing enough times to get it right. (For the sake of the knives, we don’t recommend using your best kitchen knives for practice!)

Ye olde tomato test - After you have sharpened using one of the above sharpeners grab a firm tomato and try to slice it. If the blade is properly sharpened it will slice through the skin with virtually no effort and without pushing the skin inward first. If the skin is able to fight back against the blade then your knives are not properly sharpened yet.
Be sure to note what kind of edge the ProntoPro 4643 puts on a knife. Chef’sChoice describes it as having “a lot of bite.” That’s accurate. It’s also a nice way of saying that the edge doesn’t end up polished to a fine point but comes out rather “toothy,” or microscopically serrated. This result isn’t a bad thing at all; it’s the sort of edge that most traditional European knives, including those of the highest quality, came with. Toothy edges perform sensationally if you are doing push- or pull-cuts—the sort where you move the knife tip away or toward you as you slice, and the sort most people do. Just be aware that, if you are used to chop-cutting (pushing the blade straight down through a food item), you may have a hard time if you sharpen with the ProntoPro 4643.
Jigs, such as the industry-standard Edge Pro, are an extension of the stone method, as they use simple but cleverly designed armatures to maintain a consistent angle between the stone and the blade. They’re extremely effective—professional knife sharpeners are some of their biggest champions—but they’re also expensive, and really practical only with a dedicated workbench.
On the other hand, the surfaces of knives that have been looked after may blacken a little, but this is a different type of iron oxide than ordinary reddish rust. This black oxidation is mainly triiron tetraoxide (Fe3O4). It coats the surface of the metal and prevents ordinary rust from getting in. It will not discolor food and poses no threat to hygiene.
The goal when sharpening is to create a burr, which is a tiny whisper of metal left on one side of the blade. You'll know you have a burr when you can feel one smooth and one scratchy side to the edge. Warner's is formed in no time at all; I struggled. Nevertheless, eventually I got there. Once you've got the burr, it's time to move on to step three.
This impressive Chef’s Choice sharpener is not the only Chef’s Choice sharpener on this list. That must tell you something about its quality. I must say that I was very impressed with this sharpener. It features three stages: rough, fine, and hone. The first two stages use sharpening discs with diamond flecks as abrasives. They gently file down your blade, bringing it to a smoother, sharper point. Stage three features patented honing and polishing discs designed to straighten your blade for the sharpest, cleanest cuts possible. Ease of use – Most people in search of a mechanical sharpener want one because they don’t want to be bothered with trying to achieve a perfect edge themselves using a stick or sharpening stone. They want predictable, first class results every time. In that case it’s important that the electric powered device is easy to use, achieves results quickly and with little effort and is designed with user safety in mind. Keep in mind too that it’s easy to apply too much pressure when using a mechanical sharpener and when that happens you’re likely to see unsatisfactory results. In addition there are subtle differences between mechanical devices designed for Asian-style knives and those designed for Western-style knives. The ProntoPro 4643 easily took a top-quality Mac paring knife made of very hard forged Japanese steel from badly dulled to paper-slicing sharp. Initially the knife struggled to slice through the paper and ultimately tore out; after sharpening, it swept through like a razor. And the ProntoPro 4643 was able to sharpen the blade to within ⅜ inch from the handle—that’s excellent compared with many competitors. For each knife, the whole process took about 60 seconds, and the padded handle and level base offered a secure, stable, confidence-inspiring grip.
The final Chef’s Choice sharpener on our list is the 316 Diamond Sharpener. Like the 15XV the 316 is at its best when used to sharpen Asian-style knives and it does so with unflinching effectiveness and speed. This is a compact, 2-stage electric sharpener that produces the 15 degree edge so favored in Asian cutlery. Ideal for the preparation of sashimi or sushi.
Manufacturer contacted and sent a new one for replacement. Great customer service but replacement item was nicked on the corner. It was still usable so i didn't bother to ask for another replacement. Method 1: Use an Electric Sharpener. Quality electric sharpeners are an option, but I strongly discourage their use. First off, they remove a tremendous amount of material from your edge. As someone who’s longest blade is only 8 inches, I would select the 10-inch option. Most people will find themselves leaning toward that option, since bigger isn’t necessarily better. The rod needs only to be sufficiently long to allow you to sweep your knife down it without running out of rod before you reach the end of your knife. Anything too large will be difficult to control. Therefore, unless you are trying to sharpen a sword, I would advise against the longer option.
After 15 hours of research and testing, and several adult lifetimes of kitchen experience, we recommend the manual Chef’sChoice ProntoPro 4643 as the best mechanical knife sharpener. It’s impressively simple—almost intuitive—to use: You run the blade back and forth between its diamond-impregnated sharpening wheels to cut and then hone a new edge. The ProntoPro 4643 works on both traditional European and Japanese knives, which use different edge angles, making it universally utilitarian. (Note that we also link to otherwise equivalent but cheaper single-angle sharpeners below.)

It's easy to adjust the sharpening angle by simply pushing down and turning the knob, adjusting both the coarse and fine sharpening slots. If the angle of an Asian knife is unknown, use the recommended 16° marked clearly on the knob or select an angle within the red area. If the angle of Euro/American knife is unknown, use the recommended 20° marked on the knob or select an angle within the gray area. The fine sharpening slot features ceramic stones for finishing the knife edge and every day light honing and maintenance of an already sharp knife. After testing nine honing rods, both steel and ceramic, we think the Idahone 12″ fine ceramic rod is best for most kitchens. We were looking for a tool that kept knives of all styles sharp, from 4-inch paring knives to 12-inch chef’s knives. We wanted one that worked equally well on German and Japanese blades, which are made of softer and harder steels, respectively. We also wanted to pay less than $40. The Idahone met all our requirements. Its surface was noticeably smoother than that of the other three ceramic models we tried, yet rapidly restored the edges of all the knives we tested. It also removed less material from the blades, which will help to prolong their working lives. And compared with the five steel honing rods we tested, the Idahone was gentler on the blades.

Therefore, the first step to choosing a whetstone is to determine your intended purpose and then choose your whetstone accordingly. For instance, when sharpening tools that do not require a fine edge, you should choose a relatively soft, coarse, stone such as a Norton Crystolon water stone. However, for sharpening tools that do require a fine edge, a somewhat harder Norton India oil stone would be a good choice. But, for sharpening hunting knives where an exceptionally fine edge is required, a Novaculite or Coticule oil stone would be the best but, most expensive, choice. So, the process of choosing the correct whetstone for any given purpose is to first determine how fast you would like for the stone to cut and how fine an edge you need, and then choose either a soft, coarse, stone or, a hard, fine, stone of the appropriate type and grit.
To take off the fine scratches and the burr left by coarser stones, and polish the surface, one can use stones starting around 2000 grain. Above that there is theoretically no upper limit, but at the same time stones above about #10000 provide no measurable practical improvement in the edge. It is also interesting to note that above #8000 grit, there is no Japanese measurement standard. With all the stones labelled as having a finer grit, one simply has to take the manufacturer’s word for it.
Table mounted device – Typically the manual powered table mounted sharpener looks virtually identical to the electric powered sharpener with a slot for each stage. Where they differ is that each slot in the manual powered sharpener has only one groove and you pull the blade through this groove toward you to sharpen the blade. Once the blade is sufficiently sharp you place it in the honing groove to refine the edge and pull it toward you again several times. If there is a third, cleaning, stage you repeat the process for that stage as well.
With this toolkit, setting an exact sharpening angle at which to guide the blade works great, according to Let's Talk Survival's review. The kit ships with five water stones, ranging from 120 to 1,000 grit, allowing for coarse to fine sharpening. It also contains 2,000 and 3,000 grit polish tapes for honing. The stones fit tightly into the kit's design, ensuring no slippage as you use the kit's angle guide to draw the knife blade across the stones.
If you don't want to learn the skill of sharpening on a stone, a pull through sharpener may be a good option. The pull through sharpener consists of one or more smalle grinding wheels with a fine or coarse grit. In order to sharpen the knife you pull the knife several times through the grinding wheels without really pushing. The results of this shaprening method are of lower quality than sharpening rods and stones. The result is a relatively jagged edge, and the sharpness is of short duration. To get really sharp knives, it is therefore advisable to use one or more sharpening stones. The fast and somewhat rough treatment of a pull through sharpener is, in particular for harder steels, not recommended. A good knife actually deserves a more sophisticated sharpening method, such as sharpening on a stone.
This rod features no abrasions. Instead, it features long grooves. This tells me that it has been made for honing, not sharpening. That is okay, though, because that is what most people look to a rod for – its honing ability. Unlike the Wusthof, which was awarded “Best Rod”, this Winware is not magnetic. That is also okay, though, since this rod is made strictly for honing and will not need to grip onto any metal shards, as no metal shards will be removed from the blade during the honing process.

Everyone who owns a knife needs a sharpener. Even the highest-quality knife will lose its edge over time and with use. The metal wears away on the cutting board, it chips on animal bones and bends on tough root vegetables, and it dissolves in the acids and salts of the kitchen. A dull knife is a dangerous knife. To keep it safe, and to keep a knife working, you need to sharpen it regularly.
Diamond hones are made from very small, industrial grade, diamonds adhered to the face of a metal or plastic plate. Also, because Diamonds are so much harder than any of the other sharpening materials, they tend to cut very fast and last much longer than the other whetstone materials. But, they are also often more expensive to purchase. In addition, Diamond Stones generally consist of three different styles consisting of a solid metal plate coated with an adhesive and diamond dust with holes in the plate to allow the swarf to escape, a solid plate without holes for sharpening tools with corners that might catch in the holes, and a plastic plate with islands of exposed plastic interspersed with the adhesive and diamond dust to act as a lubricant.
Chefs and meat cutters frequently pause and “steel” their cutting edges. Steeling doesn’t sharpen an edge; it straightens it. That’s necessary because the thin edge actually bends or warps while you’re cutting. If you could see the edge under a microscope, it would look wavy, and it would feel dull while cutting. Steeling the knife straightens out all those waves to restore a straight, even cutting edge. So when your knife begins to seem dull, don’t sharpen it—steel it first. Every time you grab a knife for the first time to begin cutting, steel it before you even get started. But it’s important to do it right or you’ll just make the edge worse. And don’t act like one of the Iron Chefs on TV and do it all up in the air—you’ll eventually wind up in the ER. Rest the end of the steel on a cutting board and do your steeling the safer and more accurate way. It’s very important that you steel at an angle between 20 and 30 degrees.
