For the cooking enthusiast without sharpening experience, an electric sharpener could be a great help. The electric sharpening machine has one or more slots with different types of sharpening wheels. The slots are already in a fixed grinding angle, providing a fixed, reliable edge. This benefit can also be a disadvantage, since European knives are sharpened under a different angle than Japanese knives. By pulling the knife through the slots one by one, it will be thoroughly sharpened. The electric sharpeners are pretty easy to use and deliver a good result. However, a sharpening turn removes significantly more material from the blade then with the use of a sharpening stone. This means that your knife will end up with a shorter life span if you use the electric sharpener regularly. For pocket knives, we do not advise to use an electric sharpening machine. This is because the machine removes quite a lot of material and pocket knives generally already have a thin blade.


If you’re sharpening high quality knives, you probably don’t want to use a cheapo sharpening stone. But if you’re just getting started with sharpening your pocket knife, there’s no need to get too fancy right off the bat. You can find a sharpening stone at most hardware stores for about $10. This one is very similar to the one I use. Nothing fancy. Most basic sharpening stones come with two sides: a rough grit and a fine grit. The finer the grit, the finer or sharper you can get your blade. You usually start off sharpening on the rough grit and then finish sharpening it on the finer grit.
Manual sharpeners fall into two basic categories: those that use a V-shaped cutting notch, often made of ultrahard tungsten carbide, to carve a new edge onto a blade, and those that use fixed or rotating abrasive elements (either an abrasive ceramic or diamond-impregnated steel) to grind a new edge. In general you get what you pay for with both kinds. Cheap models under $20 get a lot of complaints about sharpening performance, ergonomics, and durability. Move into the $40 to $50 range, and you begin to see more solid results. The cheap V-notch sharpeners, in particular, get terrible marks from most knowledgeable reviewers; such models remove huge amounts of metal, rapidly wearing knives into toothpicks, and they leave uneven edges that cut poorly and dull quickly. (I used one of these for about a week in the ranch kitchen and can attest to their awfulness.) However, as you’ll see below, when done right a V-notch sharpener is an attractive option.

2. Although I’ve been sharpening knives for a while, I never could get a knife sharp using the freehand method, I’ve had to rely on various jigs to set & maintain a constant angle to the bevel. To begin with, the Lanksy knife sharpener kit was my main tool, but then I found a South African jig made by Warthog Knife Sharpeners. I still have their first model, which, if memory serves me, came out in the late 1990’s. This has since been upgraded & is supplied with a diamond stone, which is worthless unless it’s going to be used for ceramic knives. Let's begin by sharpening the knife from the front side. Western knives are not evenly double-beveled. The ratio for sharpening them is 80% on the front side and 20% on the back side of the blade. (The angle of the blade to the sharpening stone surface is about 10 degrees.) All knives are sharpened from the cutting edge to the spine of the blade. You hold the handle with your right hand, push down on the side of the blade with the fingers of your left hand, and sharpen by moving the blade toward the center of the stone.

On the other hand, the surfaces of knives that have been looked after may blacken a little, but this is a different type of iron oxide than ordinary reddish rust. This black oxidation is mainly triiron tetraoxide (Fe3O4). It coats the surface of the metal and prevents ordinary rust from getting in. It will not discolor food and poses no threat to hygiene.
Furthermore, Novaculite consists of several different layers of stone of different densities, grit sizes, and colors. Thus, the red Novaculite layer (aka Washita Stone) is the both the softest and most coarse while, the next most coarse/hard grade is the grey/white Soft Arkansas stone; both of which cut relatively fast for a hard whetstone material and thus, they are an excellent choice for refining a bevel. Then, the next grade of coarseness/hardness is the hard Arkansas stone which is used to polish the bevel rather than define it and, last there are the grades of Hard Black and Hard Translucent Arkansas stones which are used for extremely fine honing and polishing of a cutting edge. Plus, it’s also the primary material in “Charnley Forest” (English) and “Turkey” oilstones.

These are very popular stones. 8" Dia-Sharps have a single grit per stone making them more expensive, but at 8" by 3" they are wider than the 8" DuoSharps, offering a good working surface. The 8" Dia-Sharp line also has the widest range of grits available from DMT, with extra extra coarse, medium extra fine and extra extra fine options not available in other sizes, so it is good line to consider. One coarse and one fine stone is a good starting point.

If your whetstone needs to be soaked, submerge it in water until it's completely saturated and there are no bubbles coming out of it, 5 to10 minutes. To use it, hold the knife at a 20-degree angle against the whetstone, and gently drag each side of the knife against it a few times. Most whetstones have both a "coarse-grind side" and a "fine-grind side"—start with the coarse side if your knife is especially dull, then repeat the process on the fine-grind side.

This is my first wetstone. First off I tried to sharpen my Chicago Cutlery boning knife. This knife is nearly thirty years old, has been abused in may ways and was quite dull. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Most sharpening stones are made of aluminum oxide, Novaculite, and silicon carbide. They are commonly known as India, Arkansas and Crystolon stones. Crystolon and India are man made while Arkansas stones are natural. Arkansas stones have a fine to coarse texture while India stones are preferred for fine sharpening. No need to bear down hard on the blade. After you make one stroke, start back at the beginning and repeat. Do this about 6-12 times.
Stropping a knife is a finishing step. This is often done with a leather strap, either clean or impregnated with abrasive compounds (e.g. chromium(III) oxide or diamond), but can be done on paper, cardstock, cloth, or even bare skin in a pinch. I am a huge coticule fan, and although i have used all the others, i always come back to this natural stone above all others. Still trying to figure if i chose it or it chose me! NEver the less there are so many options out there it is not hard with a little time and effort to find the right combination for your needs.
For instance, American Novaculite (aka Washita and Arkansas Stones) is a form of metamorphic Chert that produces some of the best known and best loved natural whetstones in existence. Then, there is a form of Belgian Coticule which has been known for providing extra-keen edges since Roman times and, there is a Japanese Siliciclastic sedimentary stone (aka Japanese Water Stones) which consist of a fine silicate particles suspended in a clay matrix. Plus, there are also various types of man-made whetstones available such as Silicon Carbide (aka Crystalon) stones and Aluminum Oxide (aka India Stones) as well as a synthetic Corundum (aka Ruby) rod and Aluminum Oxide impregnated ceramic rods as well as several different types of diamond hones.

The DuoSharp Plus stones are nicely sized at 8” long by 2 5/8” wide and have two grits on each stone to maximize value. The Plus in the name refers to an area of continuous grit in the otherwise interrupted grit surface of the stone. This area is for sharpening edges with fine points that might be difficult on the interrupted surface. A coarse/fine DuoSharp Plus stone is a good single stone to start a sharpening toolkit.
Put the pointed, narrow end of the sharpener up against the open end of the gut hook. The narrow, pointed end of the sharpener should face in toward the thickness of the blade, away from the edge of the gut hook. Match the angle of the sharpener to the original edge angle. Some experts recommend sharpening as if trying to slice a thin layer or decal off the stone. Don't consider doing this without significant experience: it is typically bad advice; most people don't hold the correct angle this way.
