A: For many years there was a heated debate around this topic with manufacturer’s stating flatly the notion their products actually damaged knives was absurd, and many professional chefs claiming not only was it not absurd, it was common for mechanical sharpeners to damage expensive cutlery. So who was right? To a certain extent they both were. The manufacturers were correct in asserting that if you followed the instructions to the letter there was little if any chance your knives would be damaged. However, in reality few people actually followed the instructions to the letter and when they veered from the recommended course the potential was there for damage.
Today, however, there is a whole new generation of mechanical sharpeners that are far more forgiving for those who may not use perfect technique. At the same time many more people have become accustomed to sharpening their knives this way and the average novice of 10 years ago is now the seasoned pro. It is still possible to damage knives with an electric sharpener, but you would have to either be trying to damage the knife or have some type of accident in order to do so.
For the cooking enthusiast without sharpening experience, an electric sharpener could be a great help. The electric sharpening machine has one or more slots with different types of sharpening wheels. The slots are already in a fixed grinding angle, providing a fixed, reliable edge. This benefit can also be a disadvantage, since European knives are sharpened under a different angle than Japanese knives. By pulling the knife through the slots one by one, it will be thoroughly sharpened. The electric sharpeners are pretty easy to use and deliver a good result. However, a sharpening turn removes significantly more material from the blade then with the use of a sharpening stone. This means that your knife will end up with a shorter life span if you use the electric sharpener regularly. For pocket knives, we do not advise to use an electric sharpening machine. This is because the machine removes quite a lot of material and pocket knives generally already have a thin blade.

Some of the videos I watched suggested soaking the stone for 12-15 minutes prior to use. One suggested using vegetable oil on the surface versus water/soaking (I used water and presoaking it for 15-minutes). So instead of a simple 'out-of-the-box-and-use' approach, it required a bit of research before sharpening a knife. Otherwise I would have given this product a 5-star rating.

TO USE: Soak stone in water for no more than 5-10 minutes. Place stone on a damp cloth with the courser 400 grit side (dark green) facing up. Hold the knife so that it’s flat and perpendicular to the block, with the blade facing left. Holding the knife at a 20-degree angle, slowly sweep the edge of the blade from left to right down the length of the stone and continue until sharp. If stone starts to feel too dry, add more water. Be patient and take your time. Flip knife over and repeat on the other side (now moving from right to left). Be sure to sharpen both sides evenly. To polish the blade further, flip stone over to the fine 1000 grit side (light green) and repeat the process. When blade is honed to desired sharpness, wash and dry your knife. To clean your stone, simply rinse with water, wipe away any remaining metal residue with a rag, rinse again, then dry.
In most cases a sharpening stone will be a combination of sharpening grains and a binding agent. However, in case of a Ardennes Coticule it is a completely natural product. The grains have cutting edges which enables them to sharpen your knife. As soon as a sharpening stone is used little pieces of the grains break off, revealing a new cut ing edge. The higher the number, the finer the grain. Stones with coarse grains (up to grain 400) can be used to shape the blade of a blunt knife. You can subsequently take care of the fine finish with a stone with a smaller grain.

Most sharpening stones are made of aluminum oxide, Novaculite, and silicon carbide. They are commonly known as India, Arkansas and Crystolon stones. Crystolon and India are man made while Arkansas stones are natural. Arkansas stones have a fine to coarse texture while India stones are preferred for fine sharpening. Crystolon are mainly used for initial coarse sharpening. Some sharpening stones are mixed with diamond abrasives to produce the optimal cutting edge.

Before you start sharpening, soak the stone in water for around five to 10 minutes, until it absorbs the water and a liquid film appears on the surface. After soaking, splash some water on top, and re-splash during the process if it ever gets too dry. You'll get a dark, splotch of steel and stone building up on the stone while you're sharpening the blade. This is totally normal so just splash the stone with some water to clean it off and allow it to perform more efficiently. 


For instance, American Novaculite (aka Washita and Arkansas Stones) is a form of metamorphic Chert that produces some of the best known and best loved natural whetstones in existence. Then, there is a form of Belgian Coticule which has been known for providing extra-keen edges since Roman times and, there is a Japanese Siliciclastic sedimentary stone (aka Japanese Water Stones) which consist of a fine silicate particles suspended in a clay matrix. Plus, there are also various types of man-made whetstones available such as Silicon Carbide (aka Crystalon) stones and Aluminum Oxide (aka India Stones) as well as a synthetic Corundum (aka Ruby) rod and Aluminum Oxide impregnated ceramic rods as well as several different types of diamond hones.
The DuoSharp Plus stones are nicely sized at 8” long by 2 5/8” wide and have two grits on each stone to maximize value. The Plus in the name refers to an area of continuous grit in the otherwise interrupted grit surface of the stone. This area is for sharpening edges with fine points that might be difficult on the interrupted surface. A coarse/fine DuoSharp Plus stone is a good single stone to start a sharpening toolkit.
This 9-inch honing steel is the perfect length for most people. Just slightly larger than the typical chef’s knife and slicing knife (usually the longest knives in a set), this rod will not be too much for most people to handle. A: People often make the mistake of assuming that just because a mechanical knife sharpener will sharpen the edge of a knife that means it will sharpen any type of cutting edge, including scissors. This is a mistake and can wind up being a costly mistake when you have to replace both your scissors and the knife sharpener. There are sharpening devices specifically designed to handle scissors. The bottom line is to always use the appropriate tool for the job at hand. That way you’re assured of the best possible result and any warranty remains in effect.

4. Start sharpening the first side of the blade. With your blade set at the prefect angle, you’re ready to start sharpening. Imagine you’re carving off a slim piece of the stone’s surface. Personally, I bring the blade into the stone. Other people stroke the blade away from the stone. Both ways work, so just use whatever technique you prefer. If the knife blade is curved or if it’s longer than the stone, you’ll need to sweep the blade sideways as you work, so the entire edge is sharpened evenly. Apply moderate pressure as you sharpen. Aluminum-Oxide oil stones are very popular man-made sharpening stones produced by an abrasives company called Norton and which are commonly called India Stones. Generally less expensive than Arkansas stones (aka Novaculite), these stones are graded coarse, medium, and fine and are designed for fast cutting. Yet, when the fine grit is used, they can also produce a relatively fine edge. Also, because India Oil Stones are both softer and coarser than Arkansas Stones, they are commonly used in conjunction with Novaculite to cut the initial edge bevels or, repair extremely dull or damaged edges before refining and polishing the bevel with an Arkansas Stone.
Start off on the rough grit side of the stone. Check the grit on your stone, or the packaging that came with the stone, to identify which is which. In general, whetstones and diamond stones each have different grits on either side. The rough grit side is used to grind the steel down, while the fine grit side is used to sharpen or hone the knife. The grinding process comes first, so you start on the rough grit side.
One of the combinations of stones that I was introduced to several years ago is a unique one, it is a 500, 2,000 and 16,000 grit combination. I was apprehensive when I first tried this, that was thousands of knives ago, it works, it is fantastic combination. It is unique because the traditional way of thinking is that we should be doubling the grit sizes as we sharpen, for example, a 500 grit stone should be followed by a 1,000 grit, then 2,000 grit. This line of thought is meant to be flexible, it is a general rule only, I have broken it countless times.
But it's a different type of sharp, according to Joe Authbert, product development manager at ProCook. "What it does is add tiny little micro-serrations onto the edge of the blade." But fear not - your smart knife won't end up looking like a bread knife, as you'll be hard-pressed to spot the serrations. "If you looked at it under a microscope, on the cutting edge, there are these little lines that generate the sharpness, rather than a waterstone which is a smooth sharp edge," says Authbert. 
I give Sharp Pebble a top rating for two reasons. First, the company emailed a user guide for me to review and learn how to best use its product while it was being shipped to me. Wonderfully proactive. Second, the sharpening stone did a terrific job restoring the edge on my kitchen knives that had been woefully neglected.
