The Chef’s Choice 250 Diamond Hybrid Sharpener offers both electric and manual. It features 3-stage hybrid sharpening technology. I purchased this set together with the 400/1000 grit stone assuming that some of my knives were quite dull and would need work on a coarse grit stone. Premium Whetstone Sharpening Stone 2 Side Grit 400/1000 | Knife Sharpener Waterstone with NonSlip Rubber Base & Flattening Stone. This is my first wetstone. First off I tried to sharpen my Chicago Cutlery boning knife. This knife is nearly thirty years old, has been abused in may ways and was quite dull. It was very difficult for me to get a burr on this blade, which I attribute to poor technique. Next I moved on to my Henckels Professional S paring and chef's knives. The paring knife was moderately sharp and was modestly improved after working over all three grits of stone. It would cut paper but again it was difficult to develop a burr with this blade. Undaunted I switched to the chef's knife. This knife is twenty years old and has never been professionally re-sharpened. I have sharpened it twice with a Lanksey sharpening system which marred the finish but did put a good edge on the blade. Lansky Standard Coarse Sharpening System with Fine Hones. The chef's knife was moderately dull and had several pits visible on the cutting surface. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Not sushi knife sharp but more than enough for the chopping and slicing I expect of it. I'm looking forward to going back and working both the boning knife and the paring knife over again. Don't expect a good result from this product the first time you use it. Watch videos on using a wetstone, expect to spend at least twenty minutes per knife at first, and practice forming a burr. If you can form a burr, you will be able to successfully sharpen your knife.

But it's a different type of sharp, according to Joe Authbert, product development manager at ProCook. "What it does is add tiny little micro-serrations onto the edge of the blade." But fear not - your smart knife won't end up looking like a bread knife, as you'll be hard-pressed to spot the serrations. "If you looked at it under a microscope, on the cutting edge, there are these little lines that generate the sharpness, rather than a waterstone which is a smooth sharp edge," says Authbert.

As you sweep your blade along these grooves they will gently work to pull its edge back into proper alignment, making it stronger, straighter and allowing it to stay sharp for longer. Sharpening stones have been around since the dawn of civilization for a very good reason: they work. Yes, they’re more labor intensive than most electric sharpeners but they also allow you an unprecedented level of control. Once you get used to something like the Fallkniven DC3 Diamond/Ceramic Whetstone Sharpener you may never take out your electric sharpener again.
Once you’ve decided to start sharpening your kitchen knives with a sharpening stone, you’ll need to take the necessary steps to actually get going. These steps include finding and buying the best sharpening stone for use at home, learning the basic technique involved in doing the sharpening, and then practicing enough times to get it right. (For the sake of the knives, we don’t recommend using your best kitchen knives for practice!)

A hybrid manual-electric sharpener, the Chef’sChoice Hybrid 210 uses a motor and abrasive wheels to grind the new edge and employs a manual stage to hone it. This sharpener is eminently affordable. However, our top pick, the ProntoPro 4643 multi-blade-angle manual model (as well as its $30 to $40 single-blade-angle kin) produces a better edge and doesn’t make us worry about breakdowns the way the Hybrid 210’s lightweight motor does.

For beginners, we’d recommend starting with a medium grit stone (1000) to remove chips and set a new sharp edge. If you’re up for a little more, a finer stone (6000 or 8000) will help polish your knife to a scary sharp mirror finish. We’d also recommend getting a flattening stone (a ‘stone fixer’) to ensure your sharpening stones perform consistently, though a lower grit stone can also serve a similar function. Lastly, while sharpening stone holders are helpful (and we use them), you can easily just use a damp towel to place your sharpening stones on during use for stability.


People often describe the Trizor XV as putting a 15-degree edge on a blade, but the reality is a bit more complex. It in fact produces what Chef’sChoice calls a Gothic Arch Edge, which consists of three distinct bevels, the final one at 15 degrees. Not surprisingly, the company claims that this “blade architecture” is more durable than a single bevel. More convincingly, the testers at Cook’s Illustrated and America’s Test Kitchen use the Trizor XV on all their knives and actually convert 20-degree knives to the Gothic Arch Edge. (Europe’s medieval cathedrals, too, attest to the strength and durability of the Gothic-arch form.)

If no metal is being removed from the edge of the blade, it’s considered honing. Whereas if metal is being removed from the blade edge this is considered sharpening. Certainly, even honing will result in some microscopic amounts of metal being removed from the blade edge but not enough to be visible to the human eye, so the above definition is basically a solid one.
This knife sharpening system comes with a firm grip, to ensure a fine finish. This device does not slip around when sharpening your knife. You just need to hold it firm and it will adhere to the surface. This ensures that you get the desired results. The carbide surface is optimized to handle any type of knife. It doesn’t matter how blunt or damaged it is, it will give you a fine edge, for precision cutting.

Most electric sharpeners use a 2 or 3 step process to create, sharpen and hone the edge of your blade. The first step in the sharpening process involves using a coarse grit, which sharpens extremely dull or damaged blades. The last step in the process uses a fine grit, which hones the blade to the desired finish. When an electric sharpener is turned on, it spins the sharpening stones. These stones sharpen the knife placed in the slots, to the desired sharpness. Most of them come with guides, which allow you to obtain the perfect angle. This makes them popular since they simplify the whole process of sharpening knives.

If you wish, further polish or even strop the edge to the desired sharpness. This makes the edge better suited for "push cutting" (cutting directly into materials, pushing straight down without sliding the blade across the object) but generally impairs slicing ability: without the "microscopic serrations" left by grinding with a stone, the blade tends to not bite into things like tomato skins.
Sharpening stone/whetstones. Just as there are dozens of different ways to sharpen a knife, there are dozens of different sharpening stones. There are Japanese water stones, stones with diamond encrusted surfaces, and stones with different grades of grit. Again, choosing a stone is a matter of function and preference. Play around with different kinds of stones to find the one that gives you the results you’re looking for.

For a pocket knife, shoot for a 10 to 15 degree angle. This will give you an edge that’s sharp enough for most daily needs, but not sharp enough to perform heart surgery.  Keeping a constant angle by hand takes a lot of practice. If you’re having difficulty, you might consider investing in a sharpening guide. It takes all the guess work out of maintaining the needed angle. They cost about $10.


Before we start, I want to make clear that there are dozens of different ways to sharpen a knife. Everyone has a way they think is best, and men have all sorts  of techniques and tools that they feel are essential in getting a sharp blade. In the end, much of it comes down to personal preference. Modern synthetic stones are generally of equal quality to natural stones, and are often considered superior in sharpening performance due to consistency of particle size and control over the properties of the stones. For example, the proportional content of abrasive particles as opposed to base or "binder" materials can be controlled to make the stone cut faster or slower, as desired.[7] Natural stones are often prized for their natural beauty as stones and their rarity, adding value as collectors' items. Furthermore, each natural stone is different, and there are rare natural stones that contain abrasive particles in grit sizes finer than are currently available in artificial stones.[citation needed]
A: People often make the mistake of assuming that just because a mechanical knife sharpener will sharpen the edge of a knife that means it will sharpen any type of cutting edge, including scissors. This is a mistake and can wind up being a costly mistake when you have to replace both your scissors and the knife sharpener. There are sharpening devices specifically designed to handle scissors. Or you can bring your scissors to a sharpening pro who will usually have the right equipment on hand to also sharpen scissors. Another thing to keep in mind about trying to use a sharpener to sharpen scissors is that by using the device in this fashion you are likely voiding the warranty. As such if you damage the device trying to sharpen scissors you’ll need to pay to have it repaired or replaced as the warranty won’t cover it. Also, certain types of high end scissors also come with a warranty. And, just as with the sharpener itself, if you try to sharpen them using a mechanical sharpener you can say goodbye to the warranty protection. The bottom line is to always use the appropriate tool for the job at hand. That way you’re assured of the best possible result and any warranty remains in effect.

Every few months, you'll notice that your chef's knife has a harder time yielding perfectly thin slices and precise dices. You might even find your knifework is slipping—literally. And aside from being annoying to cut with, a dull knife can be seriously dangerous. To keep your fingers (and your dinner) in good shape, you'll want to learn how sharpen a kitchen knife by using a whetstone or a sharpener, and maintain that edge by honing it with a steel rod.
Feedback is something that is very important to most sharpeners, i.e. how the stone feels when you are using it. Does it feel smooth, creamy and silky or does it feel hard and scratchy. While feedback, pleasant or unpleasant may be a purchase deterring factor it really doesn’t have any effect on level of sharpness that the stone can deliver. Unless of course the feedback is so distracting that it hinders the sharpeners focus and enjoyment and as a result, the sharpener doesn’t like what he/she is doing so that ultimately it does have the potential to negatively impact the results.
This knife sharpener has three sharpening slots with three different cutting materials: tungsten carbide, ceramic, and diamond. Japanese water stones – both natural and synthetic – are known for their superior sharpening performance, not only for Japanese tools, but also on their Western equivalents. Water stones are lubricated only with water! Never use oil!

However, one Amazon reviewer was disappointed in the performance of the ProntoPro 4643 on expensive knives.
A steel is the shorthand term for a steel rod used to straighten knife edges. Any decent knife set includes one, but few people know exactly what it does, much less how to properly use it. If you don’t have a steel, go buy one for about $20. Joe will show you how to use it to maintain a sharp edge. Don’t waste your money getting a diamond-coated surface. You don’t need it to know how to sharpen a knife.

A: Another issue that comes up with electric knife sharpeners is how to clean them. Or if, in fact, they actually need cleaning at all. The answer to the second question is that yes, they do need to be cleaned occasionally. And by occasionally we mean once a year or so if you use them with any frequency. Obviously if you’ve only used the sharpener a few times then there’s no compelling reason to clean it, other than just wanting to keep things tidy (and there’s nothing wrong with that). So, having established that sharpeners do need to be cleaned occasionally you need to know how to do so in a safe and effective manner. It’s not complicated.

Generally speaking, this type of knife sharpener is designed for someone with a little bit of experience in the craft of knife sharpening. To sharpen your blade, simply swipe it along the rough, textured surface in a sweeping motion, being sure to hold it at the proper angle. Holding it at the proper angle can be quite difficult. Despite looking very basic and simple, this is actually one of the more difficult types of manual knife sharpeners to use. That being said, with a little practice almost anyone can learn how to use it effectively.
We tend to recommend natural Japanese water stones only to experienced users who are thoroughly familiar with the synthetic Japanese sharpening stones. Natural stones are not to everybody’s taste and there are inevitably many uncertainties with regard to their grit grade, which cannot be determined exactly, their hardness and their suitability for certain types of steel.

One of the only things we don’t like about the Idahone is the lack of a prominent finger guard where the rod meets the handle. As a result, we highly recommend using the safer “supported” technique for honing a knife, as demonstrated in our guide to chef’s knives. In this method, the rod is held against the counter or cutting board, and blade always moves away from your body and grip-hand, greatly reducing the chance of a nasty accident.

The more you use the sharpening stone; the edges of each particle within the stone tend to become slightly rounded over time. When you notice that it is taking much longer to hone blades and edges, it means you need to replace the stone with a new one. Sharpening stones come with decks that make it convenient to keep the tool in balance on the stone.
We used the honing rods on multiple knives, including our top pick for chef’s knives, the 8-inch Mac MTH-80—a hard Japanese blade—and a vintage 12-inch Wüsthof, a German knife with a softer blade. That covers the two main types of knives that people commonly own. To dull the knives between tests, we repeatedly sawed through 1-inch-thick hemp rope, a classic challenge used by knifemakers to demonstrate their blades’ durability. We focused on 12-inch rods, because a longer rod is easier to use—it offers more room to sweep the length of a standard 8- or 10-inch chef’s knife.
A shinkansen is a Japanese-style pull-through sharpener named after the famous bullet train. It features two sets of ceramic wheels set at the right angle for sharpening a Japanese blade, which takes out the guesswork of the waterstone. Simply hold the handle with your left hand, then saw back and forth gently through the coarser wheel to sharpen, before switching to the finer wheel to polish.
Cerax and Suehiro stones from Suehiro are a little harder, and as such do not wear down as quickly as the classic Japanese water stones. The 8000 grit stone will perhaps give you the best cutting edge with a mirror polish on chisels and similar blades. Suehiro also makes a small combination stone for those who do not sharpen tools all that often and are reluctant to spend extra for a Cerax stone.
The AccuSharp Sharpener is proof positive that you shouldn’t judge a book by its cover. While it looks like something used to attach buttons to shirts it’s actually one of the most cost effective, and we mean effective, means around for restoring a professional edge to your dull knives. It’s compact, screwed together rather than glued and its diamond coated tungsten carbide wheels create an edge that will last.

One thing about this stone is that it is very "thirsty." I had a cup of water close by just to add a little water periodically when it felt like it was scraping a little too aggressively. Also, be sure to do as the instructions say and use different parts of the sharpening surface. I wasn't paying attention the first few minutes, and apparently I would end each sharpening pass in the exact same spot, creating a very very small notch on the edge of the stone. So I turned the stone around and made sure to vary the ending spot, and it seemed to buff out that little notch very quickly. My knife is now incredibly sharp--it seems to glide through material rather than "cut" it. I know some people would continue to go even higher with the grit, but for my purposes this whetstone is just perfect. I'll be tackling the kitchen knives next!

Our guide attempts to give you the easiest methods for keeping your arsenal of knives sharp and ready. One final item to mention: Serrated knife blades won't work with all types of knife sharpeners. If you're using a pull-through or electric knife sharpener, it needs to have a serrated setting or the blade will lose the serration during sharpening.

The ProntoPro 4643 easily took a top-quality Mac paring knife made of very hard forged Japanese steel from badly dulled to paper-slicing sharp. Initially the knife struggled to slice through the paper and ultimately tore out; after sharpening, it swept through like a razor. And the ProntoPro 4643 was able to sharpen the blade to within ⅜ inch from the handle—that’s excellent compared with many competitors. For each knife, the whole process took about 60 seconds, and the padded handle and level base offered a secure, stable, confidence-inspiring grip.

Chefs and meat cutters frequently pause and “steel” their cutting edges. Steeling doesn’t sharpen an edge; it straightens it. That’s necessary because the thin edge actually bends or warps while you’re cutting. If you could see the edge under a microscope, it would look wavy, and it would feel dull while cutting. Steeling the knife straightens out all those waves to restore a straight, even cutting edge. So when your knife begins to seem dull, don’t sharpen it—steel it first. Every time you grab a knife for the first time to begin cutting, steel it before you even get started. But it’s important to do it right or you’ll just make the edge worse. And don’t act like one of the Iron Chefs on TV and do it all up in the air—you’ll eventually wind up in the ER. Rest the end of the steel on a cutting board and do your steeling the safer and more accurate way. It’s very important that you steel at an angle between 20 and 30 degrees. This tiny, retractable rod has actually been designed for light sharpening and honing all in one step. Based on its size, I believe that this rod is best used by those who are uncomfortable flinging long knives and rods around as they attempt to put a finer edge on their blades.
