The stone – With a sharpening stone, the process is essentially the same as with the stick sharpener. The only difference is that you don’t hold the stone, you place it into its own holder (If it comes with one. If it doesn’t you’ll need to improvise) on a flat surface. Push the knife down the stone several times while holding it at a shallow angle and then flip it and pull it toward you several times to get the other side of the blade.
As noted above, both Chef’sChoice and Cook’s Illustrated advocate using the Trizor XV to convert 20-degree knives to the arch-shaped 15-degree edge, so if you have European-style knives, you can still use this machine confidently. You can also use the final honing stage to “strop” serrated knives—helping to keep the teeth polished and aligned—but the Trizor XV cannot resharpen them.

But, rather than using oil or water to lubricate the whetstone, ceramic whetstones are meant to be used without lubrication and thus, they provide a significant advantage for chefs who need to keep their knives sharp but, who do not have either the room or time for using a bench water stone. Thus, they are commonly available as either bench stones, pocket stones, round rods, or triangular rods.
You might not need to spend hundreds of pounds to get the best knife sharpener, but you do need to know what you're doing. Warner gave me a crash course in the technique. As a newbie to this method, it took a while to get used to (especially since Warner handed me a knife that had never previously been sharpened) but after half an hour's practice and a little encouragement, I got the hang of it. Here's what I learned...

Just to prove that we're not merely sharpening geeks, here's an interesting side note. The word whet pops up in some unexpected places. A small species of owl is called the saw-whet owl because the sound it makes reminded people of the sound made when sharpening a saw with a file. And the phrase "to whet your appetite" comes from the idea of your hunger growing sharper at the thought of food.
The Sharpening and Specialty lines of waterstones from Naniwa are available in several packages of three to five stones. The Specialty line is the same as the Sharpening line, but half the thickness and therefore less expensive. Both the Sharpening and the Specialty stones are 8 1/4" long by 2 3/4" wide, amply sized for most knives and tools. These are a higher grade stone that do not require soaking before use. While you would need a flattening stone in addition, these kits are a good way to enter into premium grade waterstones.
Place an old coffee mug upside down so that the bottom of the mug is exposed to the air. In a pinch, a coffee mug can serve as a surprisingly effective sharpening tool if you don't have any fancy equipment. The ceramic material of a mug is a material coarse enough to get good results. Indeed, some honing rods even use ceramic material to keep a blade homed in between sharpenings.

The fine grit is best-suited to those somewhat dull knives which simply need a quick clean-up. Again, I suggest jumping over to stage three and honing your blade afterward for a better, straighter edge. This area is for sharpening edges with fine points that might be difficult on the interrupted surface. A coarse/fine DuoSharp Plus stone is a good single stone to start a sharpening toolkit.
Method 2: Send it out to a professional. This is a good option, provided you have a good knife sharpener living nearby, and are willing to pay to have the services performed. If you plan to sharpen your blades a dozen or so times a year, as I do, this can get quite expensive. All but the best professionals also use a grinding stone that, again, will take away much more material than is necessary from your blade, reducing its lifespan. Learning sharpening technique requires focus even without worrying about the stone itself. Stones that require frequent flattening, soaking and cleaning, or that take a long time to create an edge can be a source of frustration to some beginning sharpeners. Keep in mind your willingness perform regular maintenance when choosing a starting set of stones.

Consumers have stated that a lot of metal is removed from the blade if you use all three stages. Usually, however, it is completely unnecessary to use all three stages. Most of the time you can easily get away with only using the fine grit and the honing discs to sharpen your knives. You can even use the honing discs on their own to keep your blades straight. The first stage (the rough grit) will only be necessary for sharpening extremely dull or damaged blades. Upon completing this stage, you will often find that you can skip right over to honing.
However, because the Belgian Blue stone generally occurs in relatively wide columns with much thinner layers of Vielsalm Coticule on either side adjacent to the slate, the Belgian Blue stone is more plentiful that Coticule and thus, it’s somewhat less expensive. But, it’s also somewhat softer than Coticule and is not divided into different grades as Coticule is. Furthermore, because it is a softer stone than Coticule, it is sold without a substrate layer.
