Works well. Just got it today, sharpened two pocket knives, one a 8Cr13MoV Chinese steel, the other s30v American steel The stone made short work of both steels (which were pretty sharp already). But notably was able to make the s30v hair shaving sharp easily, something I've had trouble with. Inexpensive and useful, I love this stone. The manual Brød & Taylor Professional Knife Sharpener was the most distinctive tool in our test. Unlike the rest of the models we tried, it employs the V-notch system in which you “carve” a new edge on sharpened tungsten-carbide stones. As noted above, typically you can find such systems in cheap one-step sharpeners that have a deserved reputation for removing too much metal from blades and producing wavy edges that cut poorly and dull quickly. A common myth is that sharpening steels actually sharpen knives, and can replace stones or other sharpening devices. Steels actually hone a knife and help keep its edge if used regularly. A steel should be used before and after each knife use for proper maintenance. Easily enough, it's used the same way you use a sharpening stone. To find the proper angle, hold the knife horizontally with the edge touching the steel. Move the spine upward to create a 45-degree angle, and then half that again for your optimal sharpening angle.


This is an important but often confusing aspect of the sharpening process. When you sharpen knives, especially on coarser stones, you'll notice a burr form on the opposite side of the edge. It can be difficult to see, but easy to feel. Carefully feel for the burr by running your finger from the spine of the knife to the edge. The burr will jump from side to side as you sharpen each edge, and once you've felt the burr move to both sides, you can move to the next finer stone. However, it should be noted that the various grades of natural Japanese Water Stones vary widely in both density and grit size from stone to stone and thus, they do not translate well to American or European abrasive standards. Furthermore, because they are significantly softer than Novaculite, Japanese Water Stones must be flattened more often and do not last as long as a either Novaculite or Coticule stones. But, because they form a slurry of fine particles when used, they also do a superior job of both cutting and polishing.
The Presto EverSharp 08800 electric knife sharpener gets great reviews. In our test, though, its flimsy motor instantly bogged down when our knife contacted its sharpening wheels—and even light pressure threatened to stop the the sharpening wheels entirely. The high, wide guide frames meant it couldn’t sharpen the last ¾ inch of a blade, an unacceptable shortcoming. We’ll take our experience over the reviews.
