Sharpening stones have been around since the dawn of civilization for a very good reason: they work. Yes, they’re more labor intensive than most electric sharpeners but they also allow you an unprecedented level of control. Honing steels are another story altogether. Honing steels are those instruments that look light a saber (light or otherwise) which you use to gussy up the edge of the blade periodically before using it. These do wear out every few years or less, depending on how often you use them. If you are unsure whether your honing steel is worn out run your finger around it. If it feels smooth all the way around then it’s time for a replacement. Not to worry though, they’re really affordable. One thing you may want to keep in mind about honing steels is that they typically won’t do much to hone the edge of some super hard knives, such as Japanese Global brand knives.
To take off the fine scratches and the burr left by coarser stones, and polish the surface, one can use stones starting around 2000 grain. Above that there is theoretically no upper limit, but at the same time stones above about #10000 provide no measurable practical improvement in the edge. It is also interesting to note that above #8000 grit, there is no Japanese measurement standard. With all the stones labelled as having a finer grit, one simply has to take the manufacturer’s word for it.
A: People often make the mistake of assuming that just because a mechanical knife sharpener will sharpen the edge of a knife that means it will sharpen any type of cutting edge, including scissors. This is a mistake and can wind up being a costly mistake when you have to replace both your scissors and the knife sharpener. There are sharpening devices specifically designed to handle scissors. If you do not remove enough metal to create a new edge, you will leave some of the dull edge in place. A dull blade (or a blade with dull spots or nicks) will reflect light from the very edge of the blade. A razor sharp knife edge will not show "bright spots" when you hold it blade up under a bright light. You will need to remove enough material from the sides of the bevel so that the edge stops reflecting light.

But, although these stones will not produce an edge as fine as Arkansas Oil Stones or India Oil Stones, their fast cutting ability makes them ideal for sharpening tools as well as for cutting the initial edge bevel on extremely dull knives or repairing the edge on damaged blades. Last, because they sharpen so quickly, it a common practice to start with a coarse Crystolon Oil Stone and then progress to either a medium or fine India Oil Stone and then to finish with an Arkansas Oil Stone.

If your knife isn’t restored by steeling, you may need to hit the fine ceramic stone a few times. You should rarely need the coarse notch after your knife is properly sharpened. Naniwa also makes the Naniwa Traditional line of stones, these are less expensive than the Professional lineup and I believe were created to compete in terms of cost with some other brands such as King that are less expensive, more attractive to some who are just starting and may not want to invest a lot of money. I have tried the Naniwa Traditional 220, 1,000 and 2,000 grit stones and I thoroughly enjoyed them, so if you are considering a less expensive brand to get started, these are also good. I do not like them as much as the Professional line but I do like them, they work, they make the knives sharp.
