Most electric sharpeners use a 2 or 3 step process to create, sharpen and hone the edge of your blade. The first step in the sharpening process involves using a coarse grit, which sharpens extremely dull or damaged blades. The last step in the process uses a fine grit, which hones the blade to the desired finish. When an electric sharpener is turned on, it spins the sharpening stones. These stones sharpen the knife placed in the slots, to the desired sharpness. Most of them come with guides, which allow you to obtain the perfect angle. This makes them popular since they simplify the whole process of sharpening knives.
By employing separate sharpening slots, the ProntoPro 4643 is capable of sharpening both older European-style knives (such as from Wüsthof and Henckels) and Japanese-style knives (such as from Mac—which makes our favorite chef’s knife—and Shun). The difference is in the angle of the bevel that forms the cutting edge: Traditional European knives have roughly 20-degree bevels, while Japanese knives have roughly 15-degree ones. If you own both types of knife, or if you do a lot of heavy work in the kitchen (like chopping up chicken carcasses), you’ll appreciate this feature, as a 20-degree bevel is best for tough jobs. Note, though, that Wüsthof and Henckels have stopped making 20-degree knives, having switched to 15-degree or 12-degree designs exclusively in 2011; the reason is that for all but the heaviest tasks, these more-acute bevels cut better and, with the ongoing improvements in steel alloys, hold their edges for just as long.
Today, however, there is a whole new generation of mechanical sharpeners that are far more forgiving for those who may not use perfect technique. At the same time many more people have become accustomed to sharpening their knives this way and the average novice of 10 years ago is now the seasoned pro. It is still possible to damage knives with an electric sharpener, but you would have to either be trying to damage the knife or have some type of accident in order to do so.
With the vast number of electric kitchen knife sharpeners available on today’s market I knew that I wouldn’t be able to select only one. Obviously you will need a little more to work with than that, as you try to select the best sharpener for you. Not to mention the fact that there are different types of electric sharpeners. Some have one stage, some have two, and some even have three. Some will sharpen, while others will both sharpen and hone.
I purchased this set together with the 400/1000 grit stone assuming that some of my knives were quite dull and would need work on a coarse grit stone. First off I tried to sharpen my Chicago Cutlery boning knife. This knife is nearly thirty years old, has been abused in may ways and was quite dull. It was very difficult for me to get a burr on this blade, which I attribute to poor technique. Next I moved on to my Henckels Professional S paring and chef's knives. The paring knife was moderately sharp and was modestly improved after working over all three grits of stone. It would cut paper but again it was difficult to develop a burr with this blade. Undaunted I switched to the chef's knife. This knife is twenty years old and has never been professionally re-sharpened. I have sharpened it twice with a Lanksey sharpening system which marred the finish but did put a good edge on the blade. Lansky Standard Coarse Sharpening System with Fine Hones. The chef's knife was moderately dull and had several pits visible on the cutting surface. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Not sushi knife sharp but more than enough for the chopping and slicing I expect of it. I'm looking forward to going back and working both the boning knife and the paring knife over again. Don't expect a good result from this product the first time you use it. Watch videos on using a wetstone, expect to spend at least twenty minutes per knife at first, and practice forming a burr. If you can form a burr, you will be able to successfully sharpen your knife.
But it's a different type of sharp, according to Joe Authbert, product development manager at ProCook. "What it does is add tiny little micro-serrations onto the edge of the blade." But fear not - your smart knife won't end up looking like a bread knife, as you'll be hard-pressed to spot the serrations. "If you looked at it under a microscope, on the cutting edge, there are these little lines that generate the sharpness, rather than a waterstone which is a smooth sharp edge," says Authbert.
The truth is that there is no one recommendation that we can make that will meet everyone’s needs. Every sharpener’s needs are different and every sharpening toolkit will be different. In order to help beginning sharpeners get started with good sharpening stones to build around, we need to understand their individual needs. So with that in mind, let’s look at the basic needs of a beginning sharpener.
The word “Novaculite” is derived from the Latin word “novacula”, which means “razor stone” and is essentially a metamorphic, recrystallized, variety of Chert composed mostly of microcrystalline quartz that is found in the found in the Ouachita Mountains of Arkansas and Oklahoma and in the Marathon Uplift of Deposited in the Devonian Period and the early Mississippian Subperiod some 410 to 325 million years ago and subjected to uplift and folding during the Ouachita orogeny of the Atokan Epoch (early Pennsylvanian Subperiod), Novaculite is a very tough stone that is resistant to erosion and thus, the various layers of Novaculite stand out as ridges in the Ouachita Mountains. Thus, due to both its availability and its composition, it has been mined since ancient times for use as arrowheads and spear heads as well as in more modern times for use as sharpening stones.

The type and size of the blade being sharpened determines the size of the stone needed. In general , a 6" stone is considered a small sharpening stone, an 8" stone is a common larger size, and a stone larger than 8" (10"-12" are available) is considered generously sized. Stones smaller than 6" (3" and 4" stones are quite common), are considered pocket stones and can be used for toolboxes, tackle boxes and on-the-go sharpening, but are generally not recommended for regular sharpening jobs.
I ordered this item to bring back to life a knife that I actually purchased in Japan. I use the knife everyday and it had just lost its sharpness and I wanted to get it back. With the first try, success was achieved. I am by no means a professional but after watching a few videos I got the basic mechanics and went to town. It has 2 sides. a rough and a smooth side. Also it has a holder that you place the stone in while you are doing the sharpening. It is best to also lay a towel under the holder so that it can catch the water that you pour on the stone and keep it from sliding.
The thumbnail test (not recommended for novices) - With this test you take your newly sharpened blade and run it oh-so-delicately over your thumbnail. If you feel it digging in even a tiny bit, it’s likely sharp enough. If on the other hand it just slips and slides across the surface of your nail it’s not sharp yet. Again, this test is only recommended for people with lots of experience handling knives and even then they’d probably be better off just grabbing a tomato or a piece of paper.
Every few months, you'll notice that your chef's knife has a harder time yielding perfectly thin slices and precise dices. You might even find your knifework is slipping—literally. Now turn the knife so that the blade is no longer pointing towards your body. Continue to maintain the angle of 10 – 20 degrees and the gap of approx. 5 mm from the back of the blade to the sharpening stone. Slide the cutting edge up and down over the sharpening stone. Grind both sides of the blade alternately, around five to ten times on each side.

Soaked stone for about 20 minutes, then when attempting to sharpen the blade, A red slurry ends up all over the blade. Even a couple sprays from a water bottle and a wipe with a microfiber appears to take material off the surface. Since it is not coming off evenly across the stone surface, it is now uneven and the stone appears to be unusable at this point.

The Juuma sharpening and honing stones offer a simplified working principle while at the same time ensuring the highest possible quality in the offered grits. Juuma Cobalt Blue stones are made of an aluminium oxide and a bonding agent. Adding cobalt serves to slow stone abrasion and increase the speed of sharpening. The speed bonus is especially marked when stoning blue steel (blue paper steel that is often used for Japanese planes and chisels). The cobalt gives the stones their blue colour. Both Belgian Blue and Vielsalm Coticule are ancient stone layers found in the Belgian Ardenne Mountains with characteristics similar to both Novaculite and Siliciclastic sedimentary stone in that it is a metamorphic stone consisting of both gray and yellow volcanic ash mixed with tiny Spessartite Garnet crystals suspended in a clay matrix. However, due to its geology, both types of stone occur only in vertical seams sandwiched between two thick layers of bluish-purple slate and thus, they must be meticulously extracted mostly by hand. However, this type of extraction process is both very time-consuming and very labor-intensive and, quarrymen can only extract the stone for a few months each year due to inclement weather conditions. Consequently, both Belgium Blue and Coticule whetstones tend to be somewhat expensive.
