I bought this knife sharpener for my son as a Christmas present years ago and recently (but cautiously) used it on my cutlery (Henkel and Wusthof). Frankly, I had been a little lazy and let my knifes lose a bit of their edge. I did not feel like getting out my stones and oil to do a proper job, so I borrowed my son's sharpener. It really works great, which I hate to admit, as it feels like a cheat and it is a fraction of what I spent on stones. I realize that I need to buy one for myself, so I looked around to see if there is anything better and I could not see anything that looked better. This one is adjustable, which is what I need. I looked at the 1 star ratings and there was a common theme that the knife edge chatters as the blade is pulled across. It can, if you don't use it properly! If your blade is very dull, you will need to pull with a very light, steady, and quick motion. You never need to push down hard as you pull. Even pressure. Don't be a brute! Finesse is what is needed. I am going to buy another one for me.

I ordered this item to bring back to life a knife that I actually purchased in Japan. I use the knife everyday and it had just lost its sharpness and I wanted to get it back. With the first try, success was achieved. I am by no means a professional but after watching a few videos I got the basic mechanics and went to town. It has 2 sides. a rough and a smooth side. Also it has a holder that you place the stone in while you are doing the sharpening. It is best to also lay a towel under the holder so that it can catch the water that you pour on the stone and keep it from sliding.
Okay, that’s not the only reason. This particular rod has received substantially more positive consumer reviews than all of the others. I suppose that the majority of people agree with me, then. It is difficult to turn down a rod which outperforms the others, though. This Wusthof rod has been specially designed to not only straighten your blade but also to give it a quick sand to keep it sharp for even longer than the typical honing rod.
If you’re sharpening high quality knives, you probably don’t want to use a cheapo sharpening stone. But if you’re just getting started with sharpening your pocket knife, there’s no need to get too fancy right off the bat. You can find a sharpening stone at most hardware stores for about $10. This one is very similar to the one I use. Nothing fancy. Most basic sharpening stones come with two sides: a rough grit and a fine grit. The finer the grit, the finer or sharper you can get your blade. You usually start off sharpening on the rough grit and then finish sharpening it on the finer grit.
I can personally verify that this will get your knives very sharp. I will spare you all the gory details, but the picture is of the instructions the ER sent me home with after stopping the bleeding and patching me up. I have to say, that’s not what I had in mind regarding “Thanksgiving tips”. So: not only will knives slide easily through spinach, but they will go through finger and fingernail like a hot knife through butter after being sharpened by this whetstone. Very clean, straight cut. Impressive, really. Just take it slow and don’t be a moron like me.

I've always wanted to sharpen knives on water stones, and this set gave me the motivation to finally give it a shot. The price is amazing for the quality and content of the set. It comes with all the grits you need to sharpen anything... I usually start on the 400 grit if the knife is very dull, or directly on the 1000 grit if it's not too dull. The 3000 and 8000 grit stones are softer and ideal after the coarser stones. The online learning section is truly amazing, much better than I expected. A convenient place with instructional videos and many articles about knife sharpening. Only downside is that the knives are now so sharp I need to be very careful using them... but that's a good thing! I feel like I fell in love with knife sharpening again.
The humble sharpener tends to elicit more divergent opinions than just about any other type of kitchen tech. Everyone, it turns out, has their own take on which type of sharpener works best and why and most serious chefs aren’t shy about voicing their opinion. As you can imagine then there are a number of things most chefs – both professional and amateur – look for in a sharpener in order to ensure they get the one that’s right for them. Whetstone has two different sides of grain for sharpening and polishing knife edges. These softer Japanese stones have several advantages over harder stones. Because they are softer, they do not become glazed or loaded with detritus. Plus, they are lubricated effectively with water rather than oil, but can be used with either. Submerge the stone in water for about 5 - 10 minutes. Continue to apply water while sharpening with the Whetstone Cutlery Two sided Whetstone Sharpening Stone. The stone releases small particles during the sharpening process; this powder in combination with water allows the sharpening. After a while you will notice a small burr at the edge. Now repeat the same process on the other side of the blade. Finally, turn the stone over and repeat the procedure, this time using the finer grit of the stone. In order to remove the remaining burr, pull the blade at an angle over the stone. Rinse the stone and clean off the grinding residue. Clean your knife with hot water.
Before you start sharpening, soak the stone in water for around five to 10 minutes, until it absorbs the water and a liquid film appears on the surface. After soaking, splash some water on top, and re-splash during the process if it ever gets too dry. You'll get a dark, splotch of steel and stone building up on the stone while you're sharpening the blade. This is totally normal so just splash the stone with some water to clean it off and allow it to perform more efficiently.
This coarse grit whetstone is great for prepping old and dull knives that need to be sharpened with a fine grit stone. One of my good knives edge looked like someone had tried to chop barbed wire. After ten minutes on each side of the stone, the edge was smooth and free of imperfections. After it hit the knife with the fine grit stone, I was cutting onions and apples like hot butter! I would soak this stone for 12-24 hours before using. It sucks water like a sponge. The surface needs to be damp when you sharpen.
Besides ceramic steels, there are also grinding steel that have a layer of diamond. The hard diamond grains ensure that you can quickly regrind your knives. Compared to a ceramic steel, the result slightly less refined. A disadvantage of a diamond steel is that over time the diamond grains may break out or crumble off, which causes the steel to lose it's sharpening quality.
The Presto EverSharp 08800 electric knife sharpener gets great reviews. In our test, though, its flimsy motor instantly bogged down when our knife contacted its sharpening wheels—and even light pressure threatened to stop the the sharpening wheels entirely. The high, wide guide frames meant it couldn’t sharpen the last ¾ inch of a blade, an unacceptable shortcoming. We’ll take our experience over the reviews.
On the other hand, the surfaces of knives that have been looked after may blacken a little, but this is a different type of iron oxide than ordinary reddish rust. This black oxidation is mainly triiron tetraoxide (Fe3O4). It coats the surface of the metal and prevents ordinary rust from getting in. It will not discolor food and poses no threat to hygiene.
