One of the only things we don’t like about the Idahone is the lack of a prominent finger guard where the rod meets the handle. As a result, we highly recommend using the safer “supported” technique for honing a knife, as demonstrated in our guide to chef’s knives. In this method, the rod is held against the counter or cutting board, and blade always moves away from your body and grip-hand, greatly reducing the chance of a nasty accident.
When you sharpen a Buck Knife properly it will perform the way it was meant to. Never sharpen your knife on a power-driven grinding wheel not specifically designed for that purpose. You could burn the temper from your blade making the edge brittle and prone to chips or cracks. This also voids the warranty. The first step to knife sharpening is to pick a sharpener.
You will also need at least one finer stone. Once the shape of an edge is established, successively finer grits are used to refine the edge improving the quality of the cut it delivers. A dull edge will not cut well and should be shaped with a coarse stone. An edge sharpened on a coarse stone will cut better than a dull one, but still won’t be ideal and should be improved with a finer stone. As you progress through finer stones, the cutting edge will continue to improve. How many and how fine these stones need to be varies depending on how fine an edge you require.
In addition, there are three broad grades of Japanese Water Stones consisting of the Ara-to (rough stone), the Naka-to (middle/medium stone) and, the Shiage-to (finishing stone). However, it should be noted that the various grades of natural Japanese Water Stones vary widely in both density and grit size from stone to stone and thus, they do not translate well to American or European abrasive standards. Furthermore, because they are significantly softer than Novaculite, Japanese Water Stones must be flattened more often and do not last as long as a either Novaculite or Coticule stones. But, because they form a slurry of fine particles when used, they also do a superior job of both cutting and polishing.
The toughest angle to master is the angle at which you'll sharpen the edge of the knife. For a Japanese knife, that should be around 12-15 degrees. Before you reach for the protractor, a good test is to get roughly half an index finger's gap between the spine of the knife and the stone (see above). Remember to remove your finger before you start sharpening. For a Western-style knife, you want an angle of about 20°, so raise it ever-so-slightly higher.

Stone: With a sharpening stone, you'll drag the blade of the knife across the rough surface of the stone. Sharpening stones consist of a number of types of material, such as diamond stones, oil stones (also called Arkansas stones), water stones (or aluminum oxide stones), and ceramic stones. Yes, the diamond stone actually contains tiny fragments of diamonds, but it's a little heavy to wear as an earring. The trick with a sharpening stone becomes applying the right amount of pressure and sharpening at the proper angle because using a sharpening stone requires a completely manual process with no guide slots. However, stones can sharpen many tools, including scissors and chisels.
One of the most important factors in determining which sharpener is best for you is the type of knives you’ll be sharpening. There is a difference between styles of knives that will help you understand what to look for in a knife sharpener. A nearly foolproof manual sharpener that looks like modern art, the angle that the knife is inserted into the sharpener determines how aggressive the sharpening is (yes, there is a correct angle for sharpening your knives). You can start by sharpening the knife then hone it to a fine finish in the same slot. If the knife doesn’t need sharpening, you can use this for honing only. This sharpener self-adjusts, and sharpens the knife edge to its original angle, so you don’t need to know the edge angle to sharpen the knife correctly, and there’s nothing to adjust. The tungsten carbide sharpeners will last a long time, but can be replaced when necessary.

Frequently, our recommendation for beginning sharpeners is to start with diamond stones as their strengths make them ideal to build a sharpening toolkit around. Diamond stones are low maintenance and durable, lasting many years with only occasional cleaning. They are among the fastest stones to use making them time efficient. Diamond grit will handle even very hard steels, and diamond stones can be used for flattening waterstones. All these things make diamond stones a practical foundation for your sharpening toolkit.
Like most sharpeners, this one is not equipped to handle scissors or serrated blades. Also unfortunate is the fact that, despite searching and searching for information, I was unable to discover this machine’s sharpening angle. Usually, it is safe to assume that sharpeners with unmentioned angles will be best suited to American and European-style knives, but I cannot say for certain.
You can control the angle of the knife blade at either 15 degrees or 20 degrees, making it work well for both American/European and Asian knives. To sharpen a blade in the Brød & Taylor, you situate the blade tip-down between the sharpener’s spring-loaded arms, press down slightly, and draw the length of the blade through the carbides. Within three or four passes, they remove metal shavings (pictured below) and produce a new, keen edge. You have to hold the blade steady throughout, but the tension that the spring-loaded arms put on the blade makes this task much easier. To hone, you tilt the tip upward and make six to eight passes. Then, to produce a final polished edge, you spread the arms to their widest point with your other hand and draw the blade through horizontally, allowing its weight to provide the only downward pressure. The whole process is simple to master and quick to accomplish—less than a minute.
When you apply a sharp knife to the surface of a tomato, cucumber, carrot or other food item it should - if you are holding it firmly and applying minimal pressure - sink into the particular item without effort. As such all you really need to work on is your technique and making sure you keep your fingers out of the way. With a dull knife however things aren’t quite so simple. When you apply a dull blade to, say, a tomato it’s not going to slice into the skin. Instead the skin will be able to push back meaning you’ll need to apply ever more pressure to get the knife to penetrate. Increasing the pressure on the knife increases the likelihood of the knife slipping off the offending food item to one side or another. And if it slips to the side where your hand is attempting to hold the vegetable steady you could be in store for a very nasty cut. Because even a dull knife will cause injury if there’s enough force behind it.

The surface of these types of metal alloys will not discolor due to rust or other oxidation. These special alloys are different to carbon steel because they are metals that have an active-passive nature. Nevertheless, they can often rust—although you may not notice it. Food residue or water can allow rust to form in places where oxygen cannot easily reach. Rust can quickly penetrate near the blade tip, so wash your knife in a detergent solution after use, then dry it with a towel and store it in a dry place.

If I am to be completely honest, I must tell you that I actually came extremely close to selecting another manual sharpener for this position. I thought it looked wonderful. It had all the specifications I would hope for in a manual knife sharpener and then some. It boasted the ability to sharpen at two different angles (15 degrees and 20 degrees) and included a honing feature. It looked solidly built. It used diamonds to grind the blades down. It sounded perfect and I almost selected it, until I read the consumer reviews. The consumer reviews for that apparently perfect manual knife sharpener were abysmal.


Now it's time to polish. This is when you'll swap over from the coarse grit to the finer grit (make sure this side is wet, too). I found the knife still had a bit of grime on it, so I gave it a wipe clean beforehand. The motion is exactly the same as with sharpening, but you can apply slightly less pressure, and limit to roughly 30 strokes on each side. 
I would say they are worth the money. Go for it. I took a blunted Pampered Chef kitchen knife from completely dull to razor sharp in about an hour (of bumbling and repairing mistakes LOL) heavy grinding. If you have a severely damaged blade, grab one of those cheesey two sided stones from Harbor Freight to do your heavy grinding. From there these stones will work very well.
Cerax and Suehiro stones from Suehiro are a little harder, and as such do not wear down as quickly as the classic Japanese water stones. The 8000 grit stone will perhaps give you the best cutting edge with a mirror polish on chisels and similar blades. Suehiro also makes a small combination stone for those who do not sharpen tools all that often and are reluctant to spend extra for a Cerax stone.
Clamp-style sharpening tools use a clamp with several holes with predefined angles. The stone is mounted on a rod and is pulled through these holes, so that the angle remains consistent. Another system is the crock stick setup, where two sticks are put into a plastic or wooden base to form a V shape. When the knife is pulled up the V, the angle is held so long as the blade is held perpendicular to the base. Several cutlery manufacturers now offer electric knife sharpeners with multiple stages with at least one grinding stage. These electric sharpeners are typically used in the kitchen but have the ability to sharpen blades such as pocket or tactical knives. The main benefit of using an electric sharpener is speed with many models that can complete the sharpening process in one to two minutes. The disadvantage is that the sharpening angle is fixed so some specialized knives, like a Japanese style Santoku, may need additional attention to sharpen to the ideal angle.
