This Linkyo’s suction cup feet will hold it still atop any counter. Its auto-stop function will turn the machine off if you press downward with the blade or if the blade itself is too heavy. This wonderful safety feature will keep the machine from jamming and ruining your knives. Also impressive is its special catch basin which makes cleanup much easier as it catches any metal shards or shavings that come off your blade.
Removing the burr is fairly simple. You'll need a leather strop or block (this sort of thing), which is designed to catch the metal fibres from the knife. You could do it with a fibrous tea towel or some newspaper if you like, but I'd suggest going with leather to begin with. The motion is fairly similar to sharpening. Draw the knife over the leather, going away from the edge at roughly the same angle as when you sharpened.
Most professional knife makers mainly use flexible belts, when putting a razor sharp edge on the blades. You can now use the same technology at home to sharpen your knives, every time they become dull. You might have other sharpening tools and methods at home. However, it is quite hard to find one that does the job better and faster than the Work Sharp WSKTS-KT Knife sharpener.
Be aware that few sharpeners of any type can properly sharpen serrated knives; that’s a job best left to a professional, so we didn’t knock points off our test models if they lacked the capability. Luckily, serrated knives tend to stay sharp for years and years, since it’s the teeth (rather than the edge) that do most of the work. For this review we focused on the sort of knives that sharpeners are designed for: those with standard, straight-edged blades, such as paring and chef’s knives.
With our sharpeners in hand, we went about putting them to work—meaning we needed a lot of dull knives. The angle on a Buck Knife is set based upon how we feel the knife will be used. Heavy use needs a strong and blunt "V" while skinning or filleting would need a deeper but more vulnerable "V". We tend to grind to 13-16 degrees per side (see illustrations). If you match the existing edge angle and hold the knife against the stone to cut evenly across the edge grind, you will produce an edge with a similar angle.

As discussed in The Sweethome's review of the Professional Knife Sharpener from Brod & Taylor, some pull-through knife sharpeners that make use of a V-notch sharpening system tend to remove too much metal from the knife. However, The Brod & Taylor machine's design overcomes this problem by precisely guiding the knife blade to create a perfect angle. This sharpener features a tungsten carbide sharpening system.
A honing rod (also known as a honing steel, knife steel, or sharpening steel) is also highly recommended. These are not sharpeners, although they are often thought of that way. Rather, a honing rod helps keep a blade’s edge keen between sharpenings by straightening out the tiny dings and dents caused by everyday slicing and chopping. Honing is a simple and fast process—it takes just a few seconds—and it can extend the life of a sharp edge for weeks or even months. Eventually, however, the edge gets rounded over and dull; then it’s time for a complete resharpening.
Note that, unlike steel honing rods, ceramic hones need occasional cleaning, as particles of knife metal build up on their surface (they form a gray layer). Idahone sells a “Superaser,” but on knife forums, many owners of ceramic hones recommend generic melamine foam sponges as a more economical alternative (the Mr. Clean Magic Eraser is the famous name-brand version). Messermeister, the maker of one of the other ceramic hones in our test, recommends a mild abrasive cleanser, like Bon Ami or Bar Keepers Friend, advice that is also echoed by many knife enthusiasts.
Besides ceramic steels, there are also grinding steel that have a layer of diamond. The hard diamond grains ensure that you can quickly regrind your knives. Compared to a ceramic steel, the result slightly less refined. A disadvantage of a diamond steel is that over time the diamond grains may break out or crumble off, which causes the steel to lose it's sharpening quality.
