Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.
Looking at the performance, it is hard to find a sharpening stone on the market that performs better than this one. This one is simply irreplaceable. Furthermore, using this stone is a straightforward process. You just sprinkle some water on the surface and then push and pull your blade across. After a few strokes, your knife is sharp and ready. In addition, it doesn’t require too much water consumption. You don’t have to stop every now and then to sprinkle water.

I’ve been sharpening knives since I was 9 or 10 years old, starting with a Browning pocket knife that I still carry. Later, working on a cattle ranch, I was at various times responsible for keeping the butcher’s knives and the boarding house’s kitchen knives in good working order using Arkansas oilstones. I’ve been cooking for myself for almost 20 years, and I’ve been keeping my trusty santoku shaving-sharp that whole time using Japanese waterstones (more on those in How we picked). So I appreciate a truly fine edge. In short: I’m not one of those knife geeks for whom nothing less than an atom-splitting edge is acceptable. I can personally verify that this will get your knives very sharp. I will spare you all the gory details, but the picture is of the instructions the ER sent me home with after stopping the bleeding and patching me up. I have to say, that’s not what I had in mind regarding “Thanksgiving tips”. So: not only will knives slide easily through spinach, but they will go through finger and fingernail like a hot knife through butter after being sharpened by this whetstone. Very clean, straight cut. Impressive, really. Just take it slow and don’t be a moron like me.
Let's begin by sharpening the knife from the front side. Western knives are not evenly double-beveled. The ratio for sharpening them is 80% on the front side and 20% on the back side of the blade. (The angle of the blade to the sharpening stone surface is about 10 degrees.) All knives are sharpened from the cutting edge to the spine of the blade. You hold the handle with your right hand, push down on the side of the blade with the fingers of your left hand, and sharpen by moving the blade toward the center of the stone.

You've likely seen someone using a honing rod to "sharpen" a knife. But the steel rod doesn't actually sharpen your knife—it just straightens out the cutting edge on the blade to allow for smoother, safer cuts. Sharpening your knife, on the other hand, actually, well, sharpens it. So yes, you need to do both. Hone your knife weekly—every time you use your knife, if you'd like—and sharpen your knife every few months, or at least every year (depending on how often you use it, and how soon you notice dulling that honing doesn't really improve).
Although it is slightly expensive than other tool sharpeners, this one saves you quite some precious time. It is one of the fastest ways to get all your blades sharpened. In addition, you just need to spend a few hours with it, and you will learn its entire operational procedure. Avoid excessive sharpening, since it might leave scratches on the blade’s surface.
Consumers have stated that a lot of metal is removed from the blade if you use all three stages. Usually, however, it is completely unnecessary to use all three stages. Most of the time you can easily get away with only using the fine grit and the honing discs to sharpen your knives. You can even use the honing discs on their own to keep your blades straight. The first stage (the rough grit) will only be necessary for sharpening extremely dull or damaged blades. Upon completing this stage, you will often find that you can skip right over to honing. 

You will also need at least one finer stone. Once the shape of an edge is established, successively finer grits are used to refine the edge improving the quality of the cut it delivers. A dull edge will not cut well and should be shaped with a coarse stone. An edge sharpened on a coarse stone will cut better than a dull one, but still won’t be ideal and should be improved with a finer stone. As you progress through finer stones, the cutting edge will continue to improve. How many and how fine these stones need to be varies depending on how fine an edge you require.
As you probably have guessed, knives are easier to sharpen on longer stones. The width of the stone is less important than the length when sharpening knives. The longer stone allows for longer sharpening strokes and contributes to faster sharpening. The longer strokes mean fewer strokes across your stone, making it easier to maintain a consistent sharpening angle. As a rule of thumb, a small knife can easily be sharpened on a large stone, but a large knife cannot easily be sharpened on a small stone.
Your stroke can be straight or circular, from "hilt to tip" OR "tip to hilt," whichever is more comfortable. If you're using a small portable sharpener, stroke the blade in nearly a straight direction. Remember to always cut into the stone and never pull or drag your edge backwards. The blade edge should face in the same direction as your stroke. So, you're essentially moving the metal away from the edge. We recommend the circular stroke as it helps you maintain your angle instead of having to find it every time you lift the knife from the stone.
Begin with your lower-grit stone. Place the heel of your knife on the far edge of the stone, holding the blade gently but firmly with both hands at a 15- to 20-degree angle. Using even pressure, slowly drag the knife over the stone toward you down the length of the stone while simultaneously moving the knife such that the contact point moves toward the tip of the blade.

Ye olde tomato test - After you have sharpened using one of the above sharpeners grab a firm tomato and try to slice it. If the blade is properly sharpened it will slice through the skin with virtually no effort and without pushing the skin inward first. If the skin is able to fight back against the blade then your knives are not properly sharpened yet.

1. Diamond Stones. I’ve used two, many years ago, to sharpen steel knives & found that the diamond coating wore away. They did work well at first, but then I was sharpening on the backing material. This puzzled me, because diamond is harder than steel, but have only recently read that the diamond particles are torn off the backing material because they stick to the softer steel.
