Once you've sharpened one side, you need to flip over, but don't swap the hand gripping the blade – think of it a bit like going backhand with a tennis racket (see above). Lead with the heel this time, rather then with the blade, but repeat the process in three parts. After five strokes on each third of the blade, it's time to check your knife. It's not an exact science, and it all depends on how blunt your blade was to start with (mine was very blunt indeed). But if you sharpen fairly regularly, it should just take a few strokes.

Ease of use – Most people in search of a mechanical sharpener want one because they don’t want to be bothered with trying to achieve a perfect edge themselves using a stick or sharpening stone. They want predictable, first class results every time. In that case it’s important that the electric powered device is easy to use, achieves results quickly and with little effort and is designed with user safety in mind. Keep in mind too that it’s easy to apply too much pressure when using a mechanical sharpener and when that happens you’re likely to see unsatisfactory results. In addition there are subtle differences between mechanical devices designed for Asian-style knives and those designed for Western-style knives. This has to do with the sharpening angle discussed above. Don’t get an Asian sharpener if you don’t need precise control over your cuts.
In recent years, some whetstone manufacturers have started producing ceramic whetstones made from hard, ceramic, powders that are mixed with Aluminum Oxide and then sintered to form a solid. But, rather than using oil or water to lubricate the whetstone, ceramic whetstones are meant to be used without lubrication and thus, they provide a significant advantage for chefs who need to keep their knives sharp but, who do not have either the room or time for using a bench water stone. Thus, they are commonly available as either bench stones, pocket stones, round rods, or triangular rods.

Joe suggests either of two choices for a sharpener: a V-sharpener or, if you’re a more serious cutler, a stick sharpener. Each has two sharpening surfaces, one for roughing out an edge and the other for the final edge. Both styles are easy to use for those learning how to sharpen a knife. But the stick sharpener will probably last your entire life. And with that style you’ll look pretty impressive when your guests watch you sharpen your knife before carving up the roast.
Steeling helps maintain sharpness. This process realigns the edge, correcting for dulling causes such as a rolled edge. A sharpening steel is a type of hardened cylindrical rod used similarly to honing stones. For example, a butcher steel is a round file with the teeth running the long way, while a packer steel (used in the meat packer's industry) is a smooth, polished steel rod designed for straightening the turned edge of a knife,[7] and is also useful for burnishing a newly finished edge. Because steels have a small diameter they exert high local pressure, and therefore affect the knife metal when used with very little force. They are intended for mild steel knives that are steeled several times a day, but are not well suited for today's tougher and harder blade steels. Diamond steels are now available that have an industrial diamond coating and can remove blade metal as well as straighten, therefore used correctly they can re-profile a knife instead of just honing.
Now you may wonder, if a finer stone produces a better cutting edge why do I need a coarse stone at all? The answer is that finer stones work much more slowly than coarse ones. The amount of metal a fine stone removes with each pass is much less than what a coarse stone removes. If you have an edge with a good shape to it from a coarse stone, this is not a problem because the fine stone doesn’t have to remove much metal to improve the edge. If the edge is dull, it will take many times longer to reshape it with a fine stone than it would with a coarse one.

A common myth is that sharpening steels actually sharpen knives, and can replace stones or other sharpening devices. Steels actually hone a knife and help keep its edge if used regularly. A steel should be used before and after each knife use for proper maintenance. Easily enough, it's used the same way you use a sharpening stone. To find the proper angle, hold the knife horizontally with the edge touching the steel. Move the spine upward to create a 45-degree angle, and then half that again for your optimal sharpening angle.

If your whetstone needs to be soaked, submerge it in water until it's completely saturated and there are no bubbles coming out of it, 5 to10 minutes. To use it, hold the knife at a 20-degree angle against the whetstone, and gently drag each side of the knife against it a few times. Most whetstones have both a "coarse-grind side" and a "fine-grind side"—start with the coarse side if your knife is especially dull, then repeat the process on the fine-grind side.
In addition, the most prized of the natural Japanese Water Stones are quarried in the Narutaki District north of Kyoto, Japan and are commonly available as either bench stones or pocket stones in grits ranging from 120 to 12,000. On the other hand, synthetic water stones are made from Aluminum Oxide and commonly available as either bench stones or pocket stones as well in grits ranging from 220 to 8,000 and, although this is the same abrasive material used to make India Oil Stones, the difference between the two is that the binder that holds the abrasive together enables Water Stones to be much softer than India Oil Stones which, in turn, promotes faster cutting because the worn abrasive material breaks away more quickly and is replaced with fresh, sharp, abrasive material more quickly. In addition, because water stones do not become glazed or loaded with swarf like oil stones can, new abrasive particles are constantly exposed as the stone wears so it continues to cut consistently. Plus, they can be lubricated effectively with water (rather than oil which can ruin some water stones) which combines with the fine particles of abrasive from the surface of the stone to form a slurry which polishes the bevel as the stone cuts. However, it should also be noted that Water Stones do become uneven significantly faster than other types of whetstones although, their softness does make them easier to true again.
To use a whetstone you run the knife's blade back and forth across the stone's surface and due to the constant friction with the stone, which acts like a piece of sandpaper, the knife's edge becomes razor sharp and has a brilliant mirror shine. If you are a beginner at using a whetstone it can a take a while to master the sharpening process, so here is a video to help you with your sharpening stone skills.

Stone: With a sharpening stone, you'll drag the blade of the knife across the rough surface of the stone. Sharpening stones consist of a number of types of material, such as diamond stones, oil stones (also called Arkansas stones), water stones (or aluminum oxide stones), and ceramic stones. Yes, the diamond stone actually contains tiny fragments of diamonds, but it's a little heavy to wear as an earring. The trick with a sharpening stone becomes applying the right amount of pressure and sharpening at the proper angle because using a sharpening stone requires a completely manual process with no guide slots. However, stones can sharpen many tools, including scissors and chisels.

A sharpening stone is made of particles of abrasive material that are sintered or bonded together. The blade is moved across the stone and the steel is worn away, which creates the edge. However, at the same time, the stone is also worn away to reveal new, coarse particles. As a general rule, the softer the stone, the more rapidly it will wear and will be more aggressive in use. Harder stones don’t wear as quickly.
As you probably have guessed, knives are easier to sharpen on longer stones. The width of the stone is less important than the length when sharpening knives. The longer stone allows for longer sharpening strokes and contributes to faster sharpening. The longer strokes mean fewer strokes across your stone, making it easier to maintain a consistent sharpening angle. As a rule of thumb, a small knife can easily be sharpened on a large stone, but a large knife cannot easily be sharpened on a small stone.
However, it should also be noted that “water stones” are generally significantly softer than oil stones and thus, water stones generally cut faster than oil stones but, they also have to be flattened more often that oil stones do. Furthermore, it should be noted that some water stones must be soaked in water for several hours prior to use whereas, others are of the “splash and sharpen” variety and thus, they only need to be soaked for a few minutes before use and then wetted down occasionally during sharpening process. Diamond hones on the other hand are more durable than either water stones or oil stones and, because they generally have a more coarse grit, they cut faster than natural whetstones. Plus, due to their construction, they never need truing and, in fact, coarse diamond hones are often used to flatten both natural and synthetic whetstones.
1. Start off with the rough grit. If you have a particularly dull blade, start off with the rough grit side of your sharpening stone. How do you tell which side is the rough grit? Sometimes you can tell by sight. If you can’t do that, do a thumbnail test. Scratch the surface with your thumbnail and whichever side feels rougher, that’s the side you want to start off with. Also, rough grits tend to be more porous than finer grits. So if you put water on one side and the stone really drinks it up, chances are it’s the rough grit.

So, why are there four slots? Unlike many other electric and manual sharpeners which sharpen both sides of the blade at one time, this sharpener sharpens one side at a time. Therefore, two slots are for the rough grit and two slots are for the fine grit. This is especially helpful for those people who prefer to only sharpen one side of certain blades.
However, because the Belgian Blue stone generally occurs in relatively wide columns with much thinner layers of Vielsalm Coticule on either side adjacent to the slate, the Belgian Blue stone is more plentiful that Coticule and thus, it’s somewhat less expensive. But, it’s also somewhat softer than Coticule and is not divided into different grades as Coticule is. Furthermore, because it is a softer stone than Coticule, it is sold without a substrate layer.
A shinkansen is a Japanese-style pull-through sharpener named after the famous bullet train. It features two sets of ceramic wheels set at the right angle for sharpening a Japanese blade, which takes out the guesswork of the waterstone. Simply hold the handle with your left hand, then saw back and forth gently through the coarser wheel to sharpen, before switching to the finer wheel to polish.

Japanese whetstones (also called water stones) – both natural and synthetic – are known for their quick-working qualities, not only for Japanese blades, but also for their Western equivalents. The small particles that do the cutting are loosely bound together in the stone, and so during sharpening with the whetstone, the surface particles are quickly washed out, allowing new, sharp, particles to start working on the blade. These whetstones must be lubricated only with water! Never use oil or other lubricants!


Now turn the knife so that the blade is no longer pointing towards your body. Continue to maintain the angle of 10 – 20 degrees and the gap of approx. 5 mm from the back of the blade to the sharpening stone. Slide the cutting edge up and down over the sharpening stone. Grind both sides of the blade alternately, around five to ten times on each side.

A: We’re all told that a sharp knife is safer than a dull knife yet most everyone knows that merely touching a sharp knife can often result in a painful cut while we can wrap our hand around a dull blade with little worry. So why would anyone in their right mind claim that a sharp one is safer than a dull one? To a certain extent it’s a matter of semantics for sure, because there is no denying you have to be extremely careful around really sharp knives. But at the same time there is a very good reason to consider a dull knife to be more of a safety hazard than a sharp knife.

Now move the blade – with a little pressure – in regular strokes up and down across the sharpening stone. Always maintain the angle between the blade and the stone. You will notice a burr becomes visible after five or so strokes. Mentally divide the blade into three parts if the knife has a large blade. Always start with the tip and work back towards the bolster.


On the other hand, the surfaces of knives that have been looked after may blacken a little, but this is a different type of iron oxide than ordinary reddish rust. This black oxidation is mainly triiron tetraoxide (Fe3O4). It coats the surface of the metal and prevents ordinary rust from getting in. It will not discolor food and poses no threat to hygiene.

I have had 20 different knife sharpeners in the past, including two that are the motorized type, as well as the manual stones, and the types that clamps are used to sharpen knifes. I have some nice and expensive knives I use in the kitchen as well for recreational use. This one is by far the best one to use for the kitchen. I have not tried it any Swiss Army knife type blades, but it does very well with my Victorinox kitchen knives. I highly recommend this sharpener. It is rather large but I actually like the fact that it is large as you can then hold it better. Also, try not to push the knife down on the sharpener, but instead use a steady motion, with minimal pressure and you will see small particles sharpened off. The knob above has presets for kitchen as well as hunting knives. This sharpener is well worth its price as the sharpening blades are easily removable. The pictures don't show it well but once you pull out the knob, the gray plastic cover easily comes off and the blades are held by the yellow pieces by screws. I have not yet found replacements but I don't think I will need them soon. The blades are still sharp after sharpening 20 knives. I sharpened my main santoku knife, chefs knifes and serrated steak knives and I was very impressed. Highly recommended.


If you follow Joe’s instructions and still can’t get a good edge, chances are your knives have been abused to the point that they need a pro’s touch to restore the edge. You can do it yourself, but it takes expensive electric tools or a lot of tricky manual grinding on a stone. But for well under $10 per knife, a sharpening shop can bring your edges to better-than-new condition. Then you’ll be able to keep them that way using Joe’s techniques. Search online for “knife sharpening” followed by your city and you’ll surely find a local sharpener. And don’t give up on high-quality knives that have a chip or notch in the blade. A pro can grind out any imperfections and reshape the edge. Yes, you’ll have a slightly narrower blade, but you won’t even notice.

Today, however, there is a whole new generation of mechanical sharpeners that are far more forgiving for those who may not use perfect technique. At the same time many more people have become accustomed to sharpening their knives this way and the average novice of 10 years ago is now the seasoned pro. It is still possible to damage knives with an electric sharpener, but you would have to either be trying to damage the knife or have some type of accident in order to do so.

I bought this knife sharpener for my son as a Christmas present years ago and recently (but cautiously) used it on my cutlery (Henkel and Wusthof). Frankly, I had been a little lazy and let my knifes lose a bit of their edge. I did not feel like getting out my stones and oil to do a proper job, so I borrowed my son's sharpener. It really works great, which I hate to admit, as it feels like a cheat and it is a fraction of what I spent on stones. I realize that I need to buy one for myself, so I looked around to see if there is anything better and I could not see anything that looked better. This one is adjustable, which is what I need. I looked at the 1 star ratings and there was a common theme that the knife edge chatters as the blade is pulled across. It can, if you don't use it properly! If your blade is very dull, you will need to pull with a very light, steady, and quick motion. You never need to push down hard as you pull. Even pressure. Don't be a brute! Finesse is what is needed. I am going to buy another one for me.

Our test targets consisted of 5 pounds of tomatoes and sheets of regular 8½-by-11-inch paper from a writing pad. (The “paper cut” test is a universal standard among sharpening enthusiasts.) After we tested each knife against both objects in its dull state, we sharpened it according to the manufacturer’s instructions on one of the seven sharpeners. We then repeated the tests and noted the relative improvements in cutting performance. We also paid attention to an issue that’s common to virtually all manual and electric sharpeners: their inability to sharpen all the way to the heel of the blade, the part closest to the handle. While stones and jigs can sharpen the entire length of a blade, most manual and electric sharpeners have a slotlike structure around the sharpening element that prevents the last quarter-inch (best case) to inch (worst) of the edge from reaching the sharpening element.

Therefore, the first step to choosing a whetstone is to determine your intended purpose and then choose your whetstone accordingly. For instance, when sharpening tools that do not require a fine edge, you should choose a relatively soft, coarse, stone such as a Norton Crystolon water stone. However, for sharpening tools that do require a fine edge, a somewhat harder Norton India oil stone would be a good choice. But, for sharpening hunting knives where an exceptionally fine edge is required, a Novaculite or Coticule oil stone would be the best but, most expensive, choice. So, the process of choosing the correct whetstone for any given purpose is to first determine how fast you would like for the stone to cut and how fine an edge you need, and then choose either a soft, coarse, stone or, a hard, fine, stone of the appropriate type and grit.
I've been using this stone for months and have started to find that, while the fine side does provide a nice sharp edge, the 400gr side is wearing my knives unevenly, which causes me to be unable to finely sharpen the entire length of the blade when moving to the fine side. The logo that is put in the middle of the 400gr side of the knife is causing more material to be removed than the rest of the blade when I'm sweeping across. I even verified this by going straight down the length of the fine side and watching the wear pattern come from the material coming off of the knife onto the stone.

I recommend keeping two stones in your kit. One with a medium grit (around 800 or so) to perform major sharpening jobs, and one with a fine grit (at least 2,000) to tune the edge to a razor-sharp finish. For real pros, a stone with an ultra-fine grit (8,000 and above) will leave a mirror-like finish on your blade, but most cooks won't notice the difference in terms of cutting ability.
Different knives are sharpened differently according to grind (edge geometry) and application. For example, surgical scalpels are extremely sharp but fragile, and are generally disposed of, rather than sharpened, after use. Straight razors used for shaving must cut with minimal pressure, and thus must be very sharp with a small angle and often a hollow grind. Typically these are stropped daily or more often. Kitchen knives are less sharp, and generally cut by slicing rather than just pressing, and are steeled daily. At the other extreme, an axe for chopping wood will be less sharp still, and is primarily used to split wood by chopping, not by slicing, and may be reground but will not be sharpened daily. In general, but not always, the harder the material to be cut, the higher (duller) the angle of the edge.

Visually, a very sharp knife has an edge that is too small to see with the eye; it may even be hard or impossible to focus in a microscope. The shape near the edge can be highlighted by rotating the knife and watching changes in reflection. Nicks and rolled edges can also be seen, as the rolled edge provides a reflective surface, while a properly straightened edge will be invisible when viewed head-on.
On the other hand, the surfaces of knives that have been looked after may blacken a little, but this is a different type of iron oxide than ordinary reddish rust. This black oxidation is mainly triiron tetraoxide (Fe3O4). It coats the surface of the metal and prevents ordinary rust from getting in. It will not discolor food and poses no threat to hygiene.
