The more you use the sharpening stone; the edges of each particle within the stone tend to become slightly rounded over time. When you notice that it is taking much longer to hone blades and edges, it means you need to replace the stone with a new one. Sharpening stones come with decks that make it convenient to keep the tool in balance on the stone.
The type and size of the blade being sharpened determines the size of the stone needed. In general , a 6" stone is considered a small sharpening stone, an 8" stone is a common larger size, and a stone larger than 8" (10"-12" are available) is considered generously sized. Now hold the handle of the knife firmly in one hand and, with the blade facing you, place it on the sharpening stone at an angle of 10 – 20 degrees. A blade's sharpness may be tested by checking if it "bites"—begins to cut by being drawn across an object without pressure. Specialized sticks exist to check bite, though one can also use a soft ballpoint pen, such as the common white Bic Stic. A thumbnail may be used at the risk of a cut, or the edge of a sheet of paper. For kitchen knives, various vegetables may be used to check bite, notably carrots, tomatoes, or cucumbers. In testing in this way, any nicks are felt as obstacles.
The 8,000 grit Kitayama is definitely a popular 8K stone, it is my favourite, and the feedback has much to do with that. It is silky smooth and feels creamy when you use it. When reaching refinement levels of 6k and above, polished bevels/edge are inevitable, and often sought after. The level of polish from this particular stone is very beautiful, assuming that you have done some refinement prior to this but it is a wonderful 8,000 grit stone.
If you decide to use this device to sharpen a knife, you can simply attach the blade guide against the belt, creating a barrier against which you can lean your knife as you sharpen it. Leaning your knife against the guard holds it at a specific angle so that your blade can be sharpened to a specific angle. The angle is adjustable from 30 degrees down to 15 degrees. Low Grit Stones: A sharpening stone with grit number less than a 1000 is generally used for knives and tools that are damaged.
