Grinding is generally done with some type of sharpening stone. Sharpening stones come in coarse and fine grits and can be described as hard or soft based on whether the grit comes free of the stone with use. Many sources of naturally occurring stones exist around the world; some types known to the ancient world are no longer used, due to exhaustion of former resources or the ready availability of superior alternatives. Arkansas, USA is one source for honing stones, which are traditionally used with water or honing oil. India is another traditional source for stones. Ceramic hones are also common, especially for fine grit size. Japanese water stones (both artificial and natural) come in very fine grits. Before use, they are soaked in water, then flushed with water occasionally to expose new stone material to the knife blade. The mixture of water and abraded stone and knife material is known as slurry, which can assist with the polishing of the knife edge and help sharpen the blade. Generally, these are more costly than oilstones. Coated hones, which have an abrasive, sometimes diamonds, on a base of plastic or metal, are also available.

Start off on the rough grit side of the stone. Check the grit on your stone, or the packaging that came with the stone, to identify which is which. In general, whetstones and diamond stones each have different grits on either side. The rough grit side is used to grind the steel down, while the fine grit side is used to sharpen or hone the knife. The grinding process comes first, so you start on the rough grit side.

this is the first stone I bought. The price is right. Though it wears really quick. I would say buy a king brand stone. They are a little more but will last so much longer. The other problem is the stone wears at a strange angle which makes you constantly fix it. Also with the rust remover glued to the side if you don't remove it before fixing the stone will be slanted. The water stones work great for me. I spend about 10 minutes every other month with a 1000 grit and a 6000 grit to maintain it. I am very careful with my edge and I don't hack at beef bones with it and I always hand wash. It is truly something to experience when using a sharp knife. I have been a home cook for over 30 years. I used to think that the electric sharpener I have worked great, but now I know better.
Grip the handle of the knife firmly with one hand, and with your opposite hand spread your fingers across the the blade in a way that enables you to apply even pressure. Maintaining a consistent angle, and applying even pressure, drag your knife across the stone with slow, deliberate passes. Over time, you will see a build up of dark sludge called a slurry. This is good! It will help remove metal from your knife and make the edge sharp. Once you finish running the blade along one side you should be able to feel a small hook or ‘burr’ along the other. After you successfully form a burr, turn the knife over and start again on the other side.
Method 2: Send it out to a professional. This is a good option, provided you have a good knife sharpener living nearby, and are willing to pay to have the services performed. If you plan to sharpen your blades a dozen or so times a year, as I do, this can get quite expensive. All but the best professionals also use a grinding stone that, again, will take away much more material than is necessary from your blade, reducing its lifespan. Oil Stones differ from water stones in that they require the use of honing oil to float the swarf (metal particles). Also, these stones are commonly made from one of three different materials consisting of Novaculite, Aluminum Oxide (Corundum), or Silicon Carbide (Carborundum) and they all use oil to lubricate the stone and suspend the swarf in order to prevent the stone from becoming clogged. Also, while Novaculite and Coticule are the most traditional types of oil stones, there are also synthetic oil stones made by the Norton abrasives company called “India Oil Stones”.

As noted above, both Chef’sChoice and Cook’s Illustrated advocate using the Trizor XV to convert 20-degree knives to the arch-shaped 15-degree edge, so if you have European-style knives, you can still use this machine confidently. You can also use the final honing stage to “strop” serrated knives—helping to keep the teeth polished and aligned—but the Trizor XV cannot resharpen them.
The speed and polishing ability of waterstones attract many sharpeners. Waterstones sharpen quickly and are available in fine polishing grits not found in other stone types. I recommend users to learn how to properly sharpen the knife. It took me about 30 minutes to sharpen a single knife to what it is today. The knife gets really sharp. Also, with use, the surface gets uneven. I recommend you draw a grid in pencil and then file using the grinder stone until the grids disappear. This ensures the surface remains flat during all use.
TO USE: Soak stone in water for no more than 5-10 minutes. Place stone on a damp cloth with the courser 400 grit side (dark green) facing up. Hold the knife so that it’s flat and perpendicular to the block, with the blade facing left. Holding the knife at a 20-degree angle, slowly sweep the edge of the blade from left to right down the length of the stone and continue until sharp. If stone starts to feel too dry, add more water. Be patient and take your time. Flip knife over and repeat on the other side (now moving from right to left). Be sure to sharpen both sides evenly. To polish the blade further, flip stone over to the fine 1000 grit side (light green) and repeat the process. When blade is honed to desired sharpness, wash and dry your knife. To clean your stone, simply rinse with water, wipe away any remaining metal residue with a rag, rinse again, then dry.
