The type and size of the blade being sharpened determines the size of the stone needed. In general , a 6" stone is considered a small sharpening stone, an 8" stone is a common larger size, and a stone larger than 8" (10"-12" are available) is considered generously sized. Stones smaller than 6" (3" and 4" stones are quite common), are considered pocket stones and can be used for toolboxes, tackle boxes and on-the-go sharpening, but are generally not recommended for regular sharpening jobs.
Serrated blades have a grind on one side of the blade. Only sharpen the grind side of the blade. Hold the sharpener at the angle that matches the original edge angle. Hold the knife with the edge away from you and the serrated side of the edge facing up. Set the tapered diamond sharpener in a serration so that you fill the indentation. Draw the sharpener towards the edge.

You might not need to spend hundreds of pounds to get the best knife sharpener, but you do need to know what you're doing. Warner gave me a crash course in the technique. As a newbie to this method, it took a while to get used to (especially since Warner handed me a knife that had never previously been sharpened) but after half an hour's practice and a little encouragement, I got the hang of it. I've been using these stones for the past day, and they work great. Once you get the technique down that works for you, you can sharpen any knife to the point it can cut through news paper. Tip: make sure you count the amount of times you pass through the stone on one side and do that same amount on the other side. What I usually do is if I know the knife is very dull or chipped, I do 100 passes on each side using the 400 grit. I test the blade on thick paper and if it cuts through I test it on news paper. If it doesn't cut through the news paper I do another 50 passes on each side. Repeat this until the blade can cut through newspaper. After, on the 1000,3000, and then the 8000 grit stone I do 50 passes on each side. This should make the blade very smoothe cutting and polish it. I plan on getting a strop or piece of leather to further polish the blade. The only thing I don't like about this is that this package is that it does not come with a dressing stone so you can re flatten/level the stone after using them.
Beginning on the right side of the knife, move from tip to heel and heel to tip, then flip the knife and repeat. For the left side, it’s opposite—start at the top of the stone to reach the heel area completely. So, you will move from heel to tip and then tip to heel. Remember to apply and release pressure as you did earlier, exactly the same as in Step 2, but with light, refining pressure.

This relatively coarse stone would be used to reshape a damaged blade edge which would be refined by finer grit stones.
Clamp-style sharpening tools use a clamp with several holes with predefined angles. The stone is mounted on a rod and is pulled through these holes, so that the angle remains consistent. Another system is the crock stick setup, where two sticks are put into a plastic or wooden base to form a V shape. When the knife is pulled up the V, the angle is held so long as the blade is held perpendicular to the base. Several cutlery manufacturers now offer electric knife sharpeners with multiple stages with at least one grinding stage. These electric sharpeners are typically used in the kitchen but have the ability to sharpen blades such as pocket or tactical knives. The main benefit of using an electric sharpener is speed with many models that can complete the sharpening process in one to two minutes. The disadvantage is that the sharpening angle is fixed so some specialized knives, like a Japanese style Santoku, may need additional attention to sharpen to the ideal angle.
This is a good size stone and has the two different grits needed for knife sharpening. No instructions were included, but there are many websites with written and video instructions, so this is not an issue for most people. A fair amount of dust is generated during the sharpening process, so protect the work surface and wash the knife after sharpening is completed.
Some stones need water, while other stones need oil for floating the swarf (small metal filings created when sharpening) away. Simply apply a few drops of either oil or water directly to the stone. (We recommend using an inexpensive spray bottle for applying the water.) The lubricant you need is determined by the type of stone you are using. Water stones and diamond stones require water. Oil stones such as India, Crystolon and Arkansas stones use oil for a lubricant.
However, it should also be noted that “water stones” are generally significantly softer than oil stones and thus, water stones generally cut faster than oil stones but, they also have to be flattened more often that oil stones do. Furthermore, it should be noted that some water stones must be soaked in water for several hours prior to use whereas, others are of the “splash and sharpen” variety and thus, they only need to be soaked for a few minutes before use and then wetted down occasionally during sharpening process. Diamond hones on the other hand are more durable than either water stones or oil stones and, because they generally have a more coarse grit, they cut faster than natural whetstones. Plus, due to their construction, they never need truing and, in fact, coarse diamond hones are often used to flatten both natural and synthetic whetstones.
Ease of use – Most people in search of a mechanical sharpener want one because they don’t want to be bothered with trying to achieve a perfect edge themselves using a stick or sharpening stone. They want predictable, first class results every time. In that case it’s important that the electric powered device is easy to use, achieves results quickly and with little effort and is designed with user safety in mind. Keep in mind too that it’s easy to apply too much pressure when using a mechanical sharpener and when that happens you’re likely to see unsatisfactory results. In addition there are subtle differences between mechanical devices designed for Asian-style knives and those designed for Western-style knives. This has to do with the sharpening angle discussed above. Don’t get an Asian sharpener if you don’t need precise control over your cuts.
This is great combination but you don’t need them all to get started. As your budget allows, start with one stone and although I like to start with a coarse stone, the 400 Chosera is a little coarse to start the learning process with and you would need another stone in a higher grit to finish. So if you want to start with one water stone, and that is perfectly okay, select the 1,000 grit stone, it will deliver an edge that will startle you, with practice of course. Also, just having a water stone in your possession is going to motivate you, trust me.
One of the most well-regarded natural whetstones is the yellow-gray "Belgian Coticule", which has been legendary for the edge it can give to blades since Roman times, and has been quarried for centuries from the Ardennes. The slightly coarser and more plentiful "Belgian Blue" whetstone is found naturally with the yellow coticule in adjacent strata; hence two-sided whetstones are available, with a naturally occurring seam between the yellow and blue layers. These are highly prized for their natural elegance and beauty, and for providing both a fast-cutting surface for establishing a bevel and a finer surface for refining it. This stone is considered one of the finest for sharpening straight razors.
You must put the knife blade's position at the perfect angle which is called "against the stone." What's important is the blade should be facing opposite from you. Where you've determined where the bevel angle is located, then this is what you will position against the stone. It's a good idea to know the differences between various angles for certain blade uses. There's a certain height of the blade that it should be from the stone. You'll be able to find various charts on height of the blade online. Normally, for a pocket knife or kitchen knife, it'll be 17° - 22° angle against the stone. The "Rule of thumb" is the smaller the angle, the sharper the knife. Most makers will have it in the instruction or on their official website.
Today, however, there is a whole new generation of mechanical sharpeners that are far more forgiving for those who may not use perfect technique. At the same time many more people have become accustomed to sharpening their knives this way and the average novice of 10 years ago is now the seasoned pro. It is still possible to damage knives with an electric sharpener, but you would have to either be trying to damage the knife or have some type of accident in order to do so.
Shapton Glass 320, 500, 1,000, 2,000 and 16,000. I have the 4,000, and 8,000, they are absolutely fine, great in fact but I just don’t use them as much as the others. These stones excel on knives made of hard steel, the hardest steel is no match for these. This does not mean you can’t sharpen hard knives on the Naniwa brand of course, you can. I have been using this particular brand of stone for many years and I absolutely love them.
Sharpening on the other hand is reupholstering the furniture or telling the hair stylist to give you a new look. Material is going to be removed from the edge of the blade. There’s no way around it. How much is removed will be a function of just how dull the knife has become or whether you’re sharpening to compensate for a chip in the edge or because the tip has broken off. If your knife is not damaged and you have it sharpened twice a year very little material will be removed each time, yet it may still be enough for you to notice just by looking carefully with the naked eye.
I recommend keeping two stones in your kit. One with a medium grit (around 800 or so) to perform major sharpening jobs, and one with a fine grit (at least 2,000) to tune the edge to a razor-sharp finish. For real pros, a stone with an ultra-fine grit (8,000 and above) will leave a mirror-like finish on your blade, but most cooks won't notice the difference in terms of cutting ability.
I've been using this stone for months and have started to find that, while the fine side does provide a nice sharp edge, the 400gr side is wearing my knives unevenly, which causes me to be unable to finely sharpen the entire length of the blade when moving to the fine side. The logo that is put in the middle of the 400gr side of the knife is causing more material to be removed than the rest of the blade when I'm sweeping across. I even verified this by going straight down the length of the fine side and watching the wear pattern come from the material coming off of the knife onto the stone.
Oil Stones differ from water stones in that they require the use of honing oil to float the swarf (metal particles). Also, these stones are commonly made from one of three different materials consisting of Novaculite, Aluminum Oxide (Corundum), or Silicon Carbide (Carborundum) and they all use oil to lubricate the stone and suspend the swarf in order to prevent the stone from becoming clogged. Also, while Novaculite and Coticule are the most traditional types of oil stones, there are also synthetic oil stones made by the Norton abrasives company called “India Oil Stones”.
Your kitchen knife becomes dull when the metal at the primary edge, the cutting edge becomes fatigued and rolls over to one side or both sides of the blade. This is normal, it should happen regardless of the quality of the steel and what you are using the knife for. The difference will be “when” it gets fatigued, the better the steel the longer the edge will hold out, generally speaking. However, I have noticed something with high quality knives such as a Fujiwara and this may be applicable to you: I have several different brands of knives ranging from mediocre to my one dream knife. Theoretically, the mediocre knives with their mediocre steel should become dull faster under normal use. (I am referring to use at home, not in professional kitchen and not in the hands of someone who cuts lotus blossoms all day long)
The Whetstone 2-Sided Sharpening Stone is made from professional grade corundum and will sharpen everything from a razor blade to a cleaver and even a machete, should you happen to have a machete lying about that needs sharpening. This is the simplest type of sharpener it’s true but the company have obviously put a great deal of thought into the product.
Modern synthetic stones are generally of equal quality to natural stones, and are often considered superior in sharpening performance due to consistency of particle size and control over the properties of the stones. For example, the proportional content of abrasive particles as opposed to base or "binder" materials can be controlled to make the stone cut faster or slower, as desired. Natural stones are often prized for their natural beauty as stones and their rarity, adding value as collectors' items. Furthermore, each natural stone is different, and there are rare natural stones that contain abrasive particles in grit sizes finer than are currently available in artificial stones.
1. Diamond Stones. I’ve used two, many years ago, to sharpen steel knives & found that the diamond coating wore away. They did work well at first, but then I was sharpening on the backing material. This puzzled me, because diamond is harder than steel, but have only recently read that the diamond particles are torn off the backing material because they stick to the softer steel. Diamond stones are recommended for sharpening ceramic knives only. This info about diamond stones & steel knives I got from an Edge-Pro article.
Now you may wonder, if a finer stone produces a better cutting edge why do I need a coarse stone at all? The answer is that finer stones work much more slowly than coarse ones. The amount of metal a fine stone removes with each pass is much less than what a coarse stone removes. If you have an edge with a good shape to it from a coarse stone, this is not a problem because the fine stone doesn’t have to remove much metal to improve the edge. If the edge is dull, it will take many times longer to reshape it with a fine stone than it would with a coarse one.
