Removing the burr is fairly simple. You'll need a leather strop or block (this sort of thing), which is designed to catch the metal fibres from the knife. You could do it with a fibrous tea towel or some newspaper if you like, but I'd suggest going with leather to begin with. The motion is fairly similar to sharpening. Draw the knife over the leather, going away from the edge at roughly the same angle as when you sharpened. 
The most important aspect of a sharpening stone is the grit. If you have knives that have taken a beating and are either nicked up or really dull, you’ll need a courser stone to get it back into shape. And in order to put an exceptionally sharp edge on an already sharp knife, you’ll need a finer grit stone. If your knives are already in pretty good shape and just need a touch up, buying just a finer grit stone might be enough, but don’t think you can get away without a courser stone for knives that need more TLC. It is possible to buy a combination, or two-sided sharpening stone.
Steeling helps maintain sharpness. This process realigns the edge, correcting for dulling causes such as a rolled edge. A sharpening steel is a type of hardened cylindrical rod used similarly to honing stones. For example, a butcher steel is a round file with the teeth running the long way, while a packer steel (used in the meat packer's industry) is a smooth, polished steel rod designed for straightening the turned edge of a knife,[7] and is also useful for burnishing a newly finished edge. Because steels have a small diameter they exert high local pressure, and therefore affect the knife metal when used with very little force. They are intended for mild steel knives that are steeled several times a day, but are not well suited for today's tougher and harder blade steels. Diamond steels are now available that have an industrial diamond coating and can remove blade metal as well as straighten, therefore used correctly they can re-profile a knife instead of just honing.
As you probably have guessed, knives are easier to sharpen on longer stones. The width of the stone is less important than the length when sharpening knives. The longer stone allows for longer sharpening strokes and contributes to faster sharpening. The longer strokes mean fewer strokes across your stone, making it easier to maintain a consistent sharpening angle. As a rule of thumb, a small knife can easily be sharpened on a large stone, but a large knife cannot easily be sharpened on a small stone.
Aluminum-Oxide oil stones are very popular man-made sharpening stones produced by an abrasives company called Norton and which are commonly called India Stones. Generally less expensive than Arkansas stones (aka Novaculite), these stones are graded coarse, medium, and fine and are designed for fast cutting. Yet, when the fine grit is used, they can also produce a relatively fine edge. Also, because India Oil Stones are both softer and coarser than Arkansas Stones, they are commonly used in conjunction with Novaculite to cut the initial edge bevels or, repair extremely dull or damaged edges before refining and polishing the bevel with an Arkansas Stone.
As you see in the pictures, it is always very important to keep same angle of about 10' to 15', which is about two coins height between the blade and the whetstone. Gently push the point you want to sharpen with your first, second and third fingers. While keeping the angle and pushing the point with your fingers, stroke the blade until it reaches the other edge of the whetstone. Then pull the blade back until it reaches the edge of the whetstone. This back and forth is counted as one stroke. Repeat it for about five strokes until you can see or feel some small burrs (edge curvatures). Then move the position of your fingers to where you have not sharpened yet, and repeat this five strokes of sharpening processed from the tip to the base of the blade.
Place an old coffee mug upside down so that the bottom of the mug is exposed to the air. In a pinch, a coffee mug can serve as a surprisingly effective sharpening tool if you don't have any fancy equipment. The ceramic material of a mug is a material coarse enough to get good results. Indeed, some honing rods even use ceramic material to keep a blade homed in between sharpenings.
The humble sharpener tends to elicit more divergent opinions than just about any other type of kitchen tech. Everyone, it turns out, has their own take on which type of sharpener works best and why and most serious chefs aren’t shy about voicing their opinion. As you can imagine then there are a number of things most chefs – both professional and amateur – look for in a sharpener in order to ensure they get the one that’s right for them. These considerations include:
The composition of the stone affects the sharpness of the blade (a finer grain, usually, though not always, produces sharper blades), as does the composition of the blade (some metals take and keep an edge better than others). For example, Western kitchen knives are usually made of softer steel and take an edge angle of 20–22°, while East Asian kitchen knives are traditionally of harder steel and take an edge angle of 15–18°. The Western-style kitchen knives are generally in the range of 52–58 on the Rockwell scale, which denotes the relative hardness of a material.
My Fujiwara is an exceptional cutter and a pure joy to use, as a result, the mediocre knives get a pretty good break and the dream knife gets to do the lions share of food preparation. So it gets duller faster. However, it goes without saying that superior steel will have improved edge retention but at the end of the day, knives get dull, they just do and I am very happy about that, I get to sharpen them over and over!
Cost – While you can get a perfectly serviceable sharpening stick or stone sharpener for short money and some very high-quality tabletop manual 2 and 3-stage sharpeners for less than $50, high-quality mechanical systems will often run you $200 or even more. While that’s not so much money it’s likely to impact the quality of your life it is a lot to pay to keep a decent edge on your knives. While how much you ultimately pay for a sharpener is entirely up to you, you may want to consider your commitment to cooking and how often you are actually liable to use the device. If this is your first sharpener you might also want to consider learning how to sharpen a blade using a classic stick or stone sharpener first, before deciding if moving up to a mechanical sharpener is the right thing for you.

I've been using this stone for months and have started to find that, while the fine side does provide a nice sharp edge, the 400gr side is wearing my knives unevenly, which causes me to be unable to finely sharpen the entire length of the blade when moving to the fine side. The logo that is put in the middle of the 400gr side of the knife is causing more material to be removed than the rest of the blade when I'm sweeping across. I even verified this by going straight down the length of the fine side and watching the wear pattern come from the material coming off of the knife onto the stone.


The stones from Shapton are probably the hardest of all Japanese sharpening stones. They will remain flat for a long time. They are therefore the best choice if you are looking for a relatively coarse stone that cuts quickly without having to be dressed repeatedly. The finer-grained stones also work very well. But Shapton stones do not provide the mirror finish you can achieve with softer stones.

Once sufficiently wet, it's time to position the stone on something solid, so it doesn't move about during sharpening. Many come with holders, but you can just place it on a slightly damp tea towel on the table. The stone should be roughly perpendicular to your body, though Warner told me it is sometimes easier to angle it ever so slightly to the right (if you're right handed). 
Sharpening stones have been around since the dawn of civilization for a very good reason: they work. Yes, they’re more labor intensive than most electric sharpeners but they also allow you an unprecedented level of control. Once you get used to something like the Fallkniven DC3 Diamond/Ceramic Whetstone Sharpener you may never take out your electric sharpener again.
The kind of tech we love: compact, reliable, durable, attractive and cheap. Purists may feel that other sharpeners will produce a more perfect result but for 99% of the human race this sharpener will be everything the doctor ordered. Your blades stay sharp for a good long time thanks to the 2-stage sharpening process and if you’re a left handed chef you’ll love the fact that it works just as effectively for you as for anyone else.
Your immediate goal is to raise a burr on the side of knife opposite to the side you are sharpening and depending on the steel, the grit of stone and how you are doing, it will be either a very quick process or it will seem like it takes an eternity. Patience here will reward you, believe me. The sharpening process is incomplete with no burr creation on your first stone. (Yes, it is possible to stop at that magic moment without the burr forming but we are not there yet, we don’t even need to go there, ever, I am just mentioning it so those gifted sharpeners will be happy) . Think of the burr as the debris that is making the knife dull being forced down the blade towards the edge and over to the other side of the by your sharpening prowess. You form the burr, that knife will get sharp, no burr, you just need to look at your work. A Loupe is handy here, an inexpensive magnifying device with a light that allows you to see the edge very well, if you are not forming a burr, you are not reaching the edge. (Having a loupe also makes you look cool and scientific, like a Sharpologist).
2. Although I’ve been sharpening knives for a while, I never could get a knife sharp using the freehand method, I’ve had to rely on various jigs to set & maintain a constant angle to the bevel. To begin with, the Lanksy knife sharpener kit was my main tool, but then I found a South African jig made by Warthog Knife Sharpeners. I still have their first model, which, if memory serves me, came out in the late 1990’s. This has since been upgraded & is supplied with a diamond stone, which is worthless unless it’s going to be used for ceramic knives. However-the Warthog & the Warthog Multi-Blade’s modus operandi has the knife moving ABOVE the stone, unlike the Lanksy / Edge Pro / Edge Pro Chinese copies & variants. ( No oil / water dripping off the stone from above the knife). Also, the Warthogs use any bench-size whetstone available to its owner, a very big plus if you want to use your grand-dad’s old Arkansas stone.No tie in having to buy the manufacturer’s specialised stones which work only with one type of sharpening jig.
Both Belgian Blue and Vielsalm Coticule are ancient stone layers found in the Belgian Ardenne Mountains with characteristics similar to both Novaculite and Siliciclastic sedimentary stone in that it is a metamorphic stone consisting of both gray and yellow volcanic ash mixed with tiny Spessartite Garnet crystals suspended in a clay matrix. However, due to its geology, both types of stone occur only in vertical seams sandwiched between two thick layers of bluish-purple slate and thus, they must be meticulously extracted mostly by hand. However, this type of extraction process is both very time-consuming and very labor-intensive and, quarrymen can only extract the stone for a few months each year due to inclement weather conditions. Consequently, both Belgium Blue and Coticule whetstones tend to be somewhat expensive.
Some of the videos I watched suggested soaking the stone for 12-15 minutes prior to use. One suggested using vegetable oil on the surface versus water/soaking (I used water and presoaking it for 15-minutes). So instead of a simple 'out-of-the-box-and-use' approach, it required a bit of research before sharpening a knife. Otherwise I would have given this product a 5-star rating.

Your task as a sharpener is to remove that fatigued metal and expose the steel underneath, the fresh strong steel and bring side A and B of the knife together at the Apex precisely, sounds easy doesn’t it? Like peeling a layer off and having a fresh start, over and over. Of course there is much more to it than this but in very basic terms, you want the abrasive properties of the water stone to abrade the fatigued metal away, like an eraser.
Technically, the name whetstone can be applied to any form of sharpening stone, regardless of what cutting fluid is typically used with it. However because whet sounds like wet, many hear the word and assume that it refers to a stone that is used wet with water. Actually, water stones, oil stones diamond stones and ceramic stones are all forms of whetstones. So, while all water stones are whetstones, not all whetstones are water stones.

Diamond sharpening stones are becoming really popular because of their ability to cut fast. We tend not to recommend diamond sharpening stones/plates because a lot of damage can be done very quickly. Also diamonds are pretty sharp and at arato level they leave deep scratches in the blade that need to be polished out quite aggressively. Diamond stones can be used with and without lubricant.
For instance, American Novaculite (aka Washita and Arkansas Stones) is a form of metamorphic Chert that produces some of the best known and best loved natural whetstones in existence. Then, there is a form of Belgian Coticule which has been known for providing extra-keen edges since Roman times and, there is a Japanese Siliciclastic sedimentary stone (aka Japanese Water Stones) which consist of a fine silicate particles suspended in a clay matrix. Plus, there are also various types of man-made whetstones available such as Silicon Carbide (aka Crystalon) stones and Aluminum Oxide (aka India Stones) as well as a synthetic Corundum (aka Ruby) rod and Aluminum Oxide impregnated ceramic rods as well as several different types of diamond hones.
The truth is that there is no one recommendation that we can make that will meet everyone’s needs. Every sharpener’s needs are different and every sharpening toolkit will be different. In order to help beginning sharpeners get started with good sharpening stones to build around, we need to understand their individual needs. So with that in mind, let’s look at the basic needs of a beginning sharpener.

Sharpening on the other hand is reupholstering the furniture or telling the hair stylist to give you a new look. Material is going to be removed from the edge of the blade. There’s no way around it. How much is removed will be a function of just how dull the knife has become or whether you’re sharpening to compensate for a chip in the edge or because the tip has broken off. If your knife is not damaged and you have it sharpened twice a year very little material will be removed each time, yet it may still be enough for you to notice just by looking carefully with the naked eye.

However, due to limited natural deposits and extensive quarrying over the centuries, true, high quality, Japanese water stones are now few and far between and are very expensive. Thus, various companies are now producing synthetic Japanese Water Stones which generally have a more consistent composition and grit size than natural stones as well as often begin somewhat harder and thus, lasting a bit longer; not to mention being cheaper to purchase. 

When the block is intended for installation on a bench it is called a bench stone. Small, portable stones (commonly made of bonded abrasive) are called pocket stones. Being smaller, they are more portable than bench stones but present difficulty in maintaining a consistent angle and pressure when drawing the stone along larger blades. However, they still can form a good edge. Frequently, fine grained pocket stones are used for honing, especially "in the field". Despite being a homophone with wet in most dialects of modern English, whetstones do not need to be lubricated with oil or water, although it is very common to do so. Lubrication aids the cutting action and carries swarf away.
