The Juuma sharpening and honing stones offer a simplified working principle while at the same time ensuring the highest possible quality in the offered grits. Juuma Cobalt Blue stones are made of an aluminium oxide and a bonding agent. Adding cobalt serves to slow stone abrasion and increase the speed of sharpening. You will also need at least one finer stone. Once the shape of an edge is established, successively finer grits are used to refine the edge improving the quality of the cut it delivers. A dull edge will not cut well and should be shaped with a coarse stone. An edge sharpened on a coarse stone will cut better than a dull one, but still won’t be ideal and should be improved with a finer stone. As you progress through finer stones, the cutting edge will continue to improve. How many and how fine these stones need to be varies depending on how fine an edge you require.

The goal in sharpening a serration is to maintain the ramp of the serration right to the edge. You do not want to create an edge bevel. Therefore we once again recommend the trusty felt pen trick. Paint the serration to be sharpened and follow your process. Evaluate if you are removing all the black. It should not take more than 5-8 strokes to resharpen if your angle was correct. Rotate or spin the sharpener as you go for the most even, consistent sharpening.

Serrated blades have a grind on one side of the blade. Only sharpen the grind side of the blade. Hold the sharpener at the angle that matches the original edge angle. Hold the knife with the edge away from you and the serrated side of the edge facing up. Set the tapered diamond sharpener in a serration so that you fill the indentation. One problem the edge pro suffers from is different thickness stones. When going from one stone to another, the variance can change the angle and create either a lot more work or an inconsistent edge. Grit choices should fall in line with the steel used to make the knives you plan to sharpen. If your knives are all European, relatively soft steel knives, then you could finish off your knives at the 1,000 – 2,000 grit level. There is a lengthy explanation regarding this topic but suffice it to say that at 2,000 grit, these knives can be made extremely sharp.
I have been looking for water stones for a while and was pleased to find the two sided set from Budo Enterprises. I ordered the set and it arrived in two days as promised. I immediately put it to the test and the results were excellent. In the past I had separate 800 and 2000 grit stones, and having the 1000 and 4000 grit stones together is much more efficient. While it may still feel like there is a lot to choose from, you don’t need a lot of of stones, you just a several good varieties to choose from. To summarize I will indicate below what my favourite stones are in each grit. Yes you can mix up the brands when sharpening but my recommendation is to buy a combination of 2-3 stones of the same brand and go from there.
I really like this stone. The 1000/4000 grit combination is perfect for my needs. I'm a woodturner, and belong to a club that brings in professional turners from around the world. One had an eye opening test of sharpness. He stacked around 25 new razor blades in a box with one open side. The box assured that the blades were in perfect alignment. If you looked at the blades' sharp ends head on, all you saw was black. His point was that if you can see the edge, the blade is not sharp. Any reflection from the edge, again, facing it head on, is a dull spot. My long story leads to the fact that I was able to sharpen several knives to the point of not seeing the edge. This is not the stone to use if you are trying to remove nicks from a blade. A lower grit will do that job. This is for putting a fine, "invisible" edge on the blade, and with the right technique, that's what it will do. Another thing to consider is the fact that these stones are "sacrificial" A stone wears because it is deliberately giving up dull surface particles to expose the sharp ones below them. Anyone expecting a stone to last forever is mistaken. Bottom line? I think this is a great stone that takes my knives to the level of sharpness I need in both woodworking and cooking. I also like the rubber frame it sits in, giving you much better control over the stone. Your efforts can go into sharpening without having to steady the stone on your workbench or countertop.

Honing steels are another story altogether. Honing steels are those instruments that look light a saber (light or otherwise) which you use to gussy up the edge of the blade periodically before using it. These do wear out every few years or less, depending on how often you use them. If you are unsure whether your honing steel is worn out run your finger around it. If it feels smooth all the way around then it’s time for a replacement. Not to worry though, they’re really affordable. One thing you may want to keep in mind about honing steels is that they typically won’t do much to hone the edge of some super hard knives, such as Japanese Global brand knives.

After testing nine honing rods, both steel and ceramic, we think the Idahone 12″ fine ceramic rod is best for most kitchens. We were looking for a tool that kept knives of all styles sharp, from 4-inch paring knives to 12-inch chef’s knives. We wanted one that worked equally well on German and Japanese blades, which are made of softer and harder steels, respectively. We also wanted to pay less than $40. The Idahone met all our requirements. Its surface was noticeably smoother than that of the other three ceramic models we tried, yet rapidly restored the edges of all the knives we tested. It also removed less material from the blades, which will help to prolong their working lives. And compared with the five steel honing rods we tested, the Idahone was gentler on the blades.

The wideness of the stone which measures 3 inches across gives more surface area to accurately sharpen longer blades, and at 1 inch in height has enough material to provide years of use. Weighing over 2 pounds with a sturdy wooden base attached on the bottom, our stones are also more stationary and less prone to slipping making for a safer sharpening experience.
