To answer an obvious question: The difference between 15 degrees and 12 degrees is so slight that a 15-degree sharpener is fine for both kinds of bevels. So if a dedicated 15-degree sharpener is all you need (that is, if you own only Asian or post-2011 European knives), we have good news: Chef’sChoice makes the otherwise identical Pronto 463, which contains a single Asian-style sharpening slot. Now that you're holding the handle and the blade is in position, gently apply some pressure to the belly of the blade with your left hand fingers – "roughly the amount of pressure to semi depress a sponge," says Warner. Starting at the tip, glide the blade up and down the stone – around five strokes up and down is a good number. Then move to the middle – five more strokes. Finally five strokes up and down on the heel.
Lubricate the stone. Some stones specifically use oil or water, and if that's the case, ensure you're using the recommended lubricant. Most importantly, whichever lubricant you choose, do not change it after the first use. When using oils, only use those approved for sharpening stones. Food oils such as vegetable and olive oil should never be applied! Some options like diamond stones, and others, don't need any lubricant at all, so be sure to check the stone's instructions.

If you’re sharpening high quality knives, you probably don’t want to use a cheapo sharpening stone. But if you’re just getting started with sharpening your pocket knife, there’s no need to get too fancy right off the bat. You can find a sharpening stone at most hardware stores for about $10. This one is very similar to the one I use. Nothing fancy. Most basic sharpening stones come with two sides: a rough grit and a fine grit. The finer the grit, the finer or sharper you can get your blade. You usually start off sharpening on the rough grit and then finish sharpening it on the finer grit.

How much is removed will be a function of just how dull the knife has become or whether you’re sharpening to compensate for a chip in the edge or because the tip has broken off. If your knife is not damaged and you have it sharpened twice a year very little material will be removed each time, yet it may still be enough for you to notice just by looking carefully with the naked eye.

Sharpening stones come in coarse and fine grits and can be described as hard or soft based on whether the grit comes free of the stone with use. Many sources of naturally occurring stones exist around the world; some types known to the ancient world are no longer used, due to exhaustion of former resources or the ready availability of superior alternatives. Arkansas, USA is one source for honing stones, which are traditionally used with water or honing oil. India is another traditional source for stones. Ceramic hones are also common, especially for fine grit size. Japanese water stones (both artificial and natural) come in very fine grits. Before use, they are soaked in water, then flushed with water occasionally to expose new stone material to the knife blade. The mixture of water and abraded stone and knife material is known as slurry, which can assist with the polishing of the knife edge and help sharpen the blade. Generally, these are more costly than oilstones. Coated hones, which have an abrasive, sometimes diamonds, on a base of plastic or metal, are also available.

Although the Trizor XV is easy to use, you have to use it correctly. That means sharpening one side of the blade at a time until a burr forms, whereas a back-and-forth, one-side-and-then-the-other approach might seem more intuitive. (Don’t worry—the Trizor XV’s manual explains the process plainly.) Maintenance is easy: Once a year or so, you open the bin on the machine’s underside and wipe out the metal shavings that it has conveniently captured there with a magnet.


Once sufficiently wet, it's time to position the stone on something solid, so it doesn't move about during sharpening. Many come with holders, but you can just place it on a slightly damp tea towel on the table. The stone should be roughly perpendicular to your body, though Warner told me it is sometimes easier to angle it ever so slightly to the right (if you're right handed). 
If no metal is being removed from the edge of the blade, it’s considered honing. Whereas if metal is being removed from the blade edge this is considered sharpening. Certainly, even honing will result in some microscopic amounts of metal being removed from the blade edge but not enough to be visible to the human eye, so the above definition is basically a solid one.
As opposed to water whetstones that require you to pre-soak the stone, the Norton oil stone is pre-filled with oil to save time and eliminate the need to pre-soak it prior to use and the lubricant stays on the surface during sharpening.  The oil also prevents metal from bonding with the abrasive surface by flushing away dislodged abrasive and metal chips.

I've been using this stone for months and have started to find that, while the fine side does provide a nice sharp edge, the 400gr side is wearing my knives unevenly, which causes me to be unable to finely sharpen the entire length of the blade when moving to the fine side. The logo that is put in the middle of the 400gr side of the knife is causing more material to be removed than the rest of the blade when I'm sweeping across. I even verified this by going straight down the length of the fine side and watching the wear pattern come from the material coming off of the knife onto the stone.


Diamond whetstones, like the DMT Diamond Whetstone, are made out of industrial type diamonds which create a long-lasting hard, coarse and flat surface. A diamond whetstone is an excellent choice for when you are outdoors as you can use it dry or with a lubricant. It can take some time getting used to and the larger sized stone may not be ideal for working with small knives or cutting tools.

These are highly prized for their natural elegance and beauty, and for providing both a fast-cutting surface for establishing a bevel and a finer surface for refining it. This stone is considered one of the finest for sharpening straight razors.[citation needed]

We tested eight other honing rods alongside our pick. Three were ceramic: The Cooks Standard 12″, the Mac black ceramic 10.5″, and the Messermeister 12″. Five were traditional steel hones: Three by Messermeister (regular, fine, and Avanta), a dual-textured fine-and-smooth “combination cut” Victorinox, and a Winware, all 12 inches in length. In general, but not always, the harder the material to be cut, the higher (duller) the angle of the edge.
Ye olde tomato test - After you have sharpened using one of the above sharpeners grab a firm tomato and try to slice it. If the blade is properly sharpened it will slice through the skin with virtually no effort and without pushing the skin inward first. If the skin is able to fight back against the blade then your knives are not properly sharpened yet.
Some of the videos I watched suggested soaking the stone for 12-15 minutes prior to use. One suggested using vegetable oil on the surface versus water/soaking (I used water and presoaking it for 15-minutes). So instead of a simple 'out-of-the-box-and-use' approach, it required a bit of research before sharpening a knife. Otherwise I would have given this product a 5-star rating.

Low Grit Stones: A sharpening stone with grit number less than a 1000 is generally used for knives and tools that are damaged. If your blade has any nicks or chips in the blade, the stones will take care of them in a jiffy! They usually have a coarse side for nicks and chips, with the other side for general sharpening. Even if the knife’s edge has become totally blunt, the stone will re-sharpen it perfectly.

Silicone Carbide whetstones on the other hand, are the fastest cutting of the three types of oil stones and the stones made by Norton are called Crystolon Stones. Also they too are graded as either fine, medium, or coarse stones depending on their grit. But, although these stones will not produce an edge as fine as Arkansas Oil Stones or India Oil Stones, their fast cutting ability makes them ideal for sharpening tools as well as for cutting the initial edge bevel on extremely dull knives or repairing the edge on damaged blades. Last, because they sharpen so quickly, it a common practice to start with a coarse Crystolon Oil Stone and then progress to either a medium or fine India Oil Stone and then to finish with an Arkansas Oil Stone.
