Furthermore, Novaculite consists of several different layers of stone of different densities, grit sizes, and colors. Thus, the red Novaculite layer (aka Washita Stone) is the both the softest and most coarse while, the next most coarse/hard grade is the grey/white Soft Arkansas stone; both of which cut relatively fast for a hard whetstone material and thus, they are an excellent choice for refining a bevel. Then, the next grade of coarseness/hardness is the hard Arkansas stone which is used to polish the bevel rather than define it and, last there are the grades of Hard Black and Hard Translucent Arkansas stones which are used for extremely fine honing and polishing of a cutting edge. Plus, it’s also the primary material in “Charnley Forest” (English) and “Turkey” oilstones.

A major benefit of sharpening your knives on a sharpening stone is that you can thin out your knife. When thinning out a knife, you grind away extra material on the sides of the blade, making the blade thinner. Thinning of a knife is useful for knives that are often sharpened, as the cutting edge gets fatter when the blade is sharpened more often. Thinning is of great importance for the preservation of good cutting properties.
I needed a whetstone to buffer in between transitioning from rough to fine grits. The Yoshihiro #3000 grit stone is a good stone to use if you cut a lot of proteins. Usually I would go from a #1,000 grit stone to a #6,000 grit stone and stop there, however it left the edge of my hankotsu with a refined edge that was nice, but not ideal for butchering oily meats. I sharpen my knives very often and butcher a buttload of fish, meat, and poultry daily. The Yoshihiro #3000 grit stone is the final finishing stone I use, giving my butcher knives a semi-refined edge/rougher edge that I require.
We tend to recommend natural Japanese water stones only to experienced users who are thoroughly familiar with the synthetic Japanese sharpening stones. Works well. Just got it today, sharpened two pocket knives, one a 8Cr13MoV Chinese steel, the other s30v American steel The stone made short work of both steels (which were pretty sharp already). But notably was able to make the s30v hair shaving sharp easily, something I've had trouble with. Inexpensive and useful, I love this stone. Furthermore, it should be noted that some water stones must be soaked in water for several hours prior to use whereas, others are of the “splash and sharpen” variety and thus, they only need to be soaked for a few minutes before use and then wetted down occasionally during sharpening process. Diamond hones on the other hand are more durable than either water stones or oil stones and, because they generally have a more coarse grit, they cut faster than natural whetstones.
